Here, I would like to share this super easy, yet absolutely delicious recipe with you. I hope you’ll have a go at making it.
The main ingredients for this soup are tofu, bamboo shoots, dried shiitake mushrooms, dried wood ear mushrooms, carrots, mung bean vermicelli (glass noodles), chilli bean paste, vinegar etc; cooked in a clear soup. The dish is characterised by it's sour, spicy, fresh, salty and fragrant flavours.
This soup is rich in nutrients such as protein, calcium, iron, dietary fiber, minerals, and vitamins. It is an indispensable and appetising healthy food which will helps to relieve heat in the hot summer.
Since dried shiitake mushrooms and dried wood ear mushrooms may not be something that people in the UK are familiar with, I have used fresh shiitake mushrooms in this recipe instead, and omitted the dried wood ear mushrooms. However, the traditional ingredients can be found in any Chinese supermarket, Amazon, and Sous Chef.
Shiitake mushrooms are one of the most popular mushrooms worldwide. They are prized for their rich, savory taste and diverse health benefits. Compounds in shiitake may help fight cancer, boost immunity, and support heart health.
You’ll only need 4-5 dried shiitake mushrooms (乾香菇) and 1 piece of dried wood ear mushrooms (木耳). The cooking method for these two ingredients are different to the fresh alternatives, if you have managed to find them and want to use them, let me know and I’ll be happy to explain.
I have found all the suppliers for the above ingredients and have attached the images in the comments below if you do want to give them a go.
You can get the fresh shiitake mushrooms, bamboo shoots and mung bean vermicelli from Tesco, just make sure you search online to ensure they stock them in the branch that you visit.

✳️ Ingredients:
(serves 4)
200g medium firm tofu
250g fresh shiitake mushrooms
1/2 medium carrot
60g tinned bamboo shoots
50g mung bean vermicelli
4 slices ginger
1 tbsp sunflower oil
coriander- washed and chopped to garnish
✳️ Seasonings:
* 1 tsp salt
* 1 tbsp light soy sauce
* 1/2 tsp ground white pepper
* 2 tsp sugar
* 2 tsp sesame oil
* 3 tbsp dark balsamic vinegar
* 2 tbsp white balsamic vinegar
* 1 tbsp chilli bean paste (豆瓣醬 Doubanjiang - you can add more if you can handle the heat)
* 2000ml water
* 1 tbsp vegan oyster sauce / vegan stir-fry sauce
* 3 tbsp corn flour
* 3 tbsp water
✳️ Method:
1. Soak the mung bean vermicelli in warm water until soft, then use scissors to cut into sections.
2. Gently wash and pat dry the tofu and fresh shiitake mushrooms and cut both into thick strips.
3. Peel the carrot, and cut into thin strips. Drain the bamboo shoots, rinse and cut into thin strips.
4. Cut the ginger slices into thin strips then finely dice into small cubes.
5. Mix the corn flour and water together to make a slurry and leave to one side.
6. Heat a large saucepan over medium heat, add oil, then add ginger and fry until slightly brown, stirring gently. Next, add the bamboo shoots and carrots, stir-fry together for a while, add salt, soy sauce, pepper, sugar and sesame oil, and fry until soft.
7. Pour in the black vinegar, white vinegar, vegan oyster sauce and chilli bean sauce. Then, add water and bring to a boil. Turn to low heat and continue to cook for 5 minutes.
8. Put the tofu and shiitake mushrooms in, gently move around with chopsticks or wooden spoon, and add the vermicelli, stirring everything around. Turn to medium-high heat and bring to a boil.
9. Whisk the corn flour water into the soup, a little bit at a time until you reach the desired consistency. If you like it thicker, add a bit more, or if you prefer thinner, add a bit less. After the soup is boiled, taste it and adjust the seasoning, then garnish with coriander.

食材小貼士:
羅漢果 — 性寒味甘,具清熱潤肺、化痰止咳、潤腸通便功效,適合風熱型感冒引起的咳嗽、喉嚨痛,亦適合熬夜、煙酒過多、飲食過度而導致的喉嚨痛、扁桃腺發炎、失聲及便秘等症狀。但要注意風寒感冒、咳嗽及脾胃虛寒不宜多服。
蓮藕粟米羅漢果湯
功效:理氣化痰,紓緩精神壓力大、多嘆氣、喉嚨有黏痰、大便不暢等症狀。
材料:蓮藕1根、粟米1根、甘羅漢果半個、眉豆30克、南杏15克、陳皮1角
做法:
1. 所有材料洗淨,蓮藕去皮切片、粟米去衣留鬚切段、甘羅漢果輕壓備用。
2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮1.5小時,最後下鹽調味即可。

Monk fruit soup can regulate the qi and eliminate phlegm

Tip on the ingredients:
Monk fruit – cold in nature with a sweet flavour, helps to clear heat and moistens the lung, relieve phlegm and cough, moisten the intestines and relieve constipation. Suitable for those with hot-wind related cough, sore throat, as well as those with frequent late nights, those who drink and smoke, those with over-eating related sore throat, tonsillitis, loss of voice and constipation. Note that those with cold-wind related flu, cough and those with asthenic weak spleen and stomach should not consume.
Lotus root and corn soup with monk fruit
Effects: Regulates qi and reduces phlegm. Relieves mental stress, frequent sighing, sticky phlegm in the throat and difficulty passing stool.
Ingredients: 1 lotus root, 1 ear of corn, 1/2 piece golden monk fruit, 30g purple haricot, 15g sweet almonds, 1 dried citrus peel
1. Rinse all ingredients thoroughly. Cut the peeled lotus root into pieces. Cut peeled corn into pieces.(leave silk) Slightly press the golden monk fruit.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hours. Add salt to taste.

湊仔爸:「5歲小朋友經常不開胃,長輩著我給他喝坊間的開胃茶,有用嗎?」
CheckCheckCin:如果小朋友長期食慾不振、食量減少,或者食量比同齡正常兒童少,而沒有腹部脹滿、大便酸臭等伴隨症狀,就屬於厭食的情況,可以煲煮穀芽麥芽開胃茶飲用調理,穀芽、麥芽有消食化滯、健脾開胃的功效。飲用茶療的同時,建議少吃多餐,從他感興趣的食物著手誘導開胃,飯菜亦宜多樣化引起他的食慾,注意飯前不宜吃零食以免影響正餐胃口,但切勿強逼進食惹起反效果。要注意最近天氣悶熱對胃口都有所影響,小朋友間中一兩餐吃少一點也不打緊,想飲用現成的開胃茶要注意成份,如果父母未能掌握小朋友的體質是否適合飲用,建議諮詢註冊中醫師。
穀芽麥芽開胃茶
功效:適合消化不良、無胃口、飯後胃脹不適等症狀。
材料:粟米連鬚1根、紅蘿蔔1根、穀芽15克、麥芽15克、冰糖少許
做法:材料洗淨,粟米去皮切段。鍋內加入1000毫升水,加入所有材料,武火煮至水滾,改文火煮30分鐘,加入適量冰糖調味即可。
備註:建議一星期連續飲3-4日。麥芽有回乳功效,哺乳中女士不宜飲用。

Appetite boosting tea
“My 5-year-old child have always had a poor appetite. The elders advised me to let him drink the appetite stimulating tea that can be commonly found in the market. Do they really help?”
CheckCheckCin: If a child is experiencing prolonged loss of appetite, reduced food intake, or having lesser appetite when compared to other normal children of the same age, without the symptoms of abdominal distension and foul-smelling stool etc., the child is said to be showing signs of anorexia. One can prepare millet sprout and malt tea as remedy to condition the body and improve appetite. Millet sprout and malt are effective in promoting digestion, strengthening the spleen and stimulating appetite.
In conjunction with the tea therapy, it is advisable to have smaller but more frequent meals, and proceed to stimulate the appetite using the child’s favorite food. An increase in the variety of food or dishes can help to stimulate the child’s appetite. Be careful not to snack before meals as that may affect the child’s appetite for the actual meal itself. But remember not to force the child into eating, otherwise all the efforts might backfire.
Besides, do take note that the recent muggy weather may affect appetite as well, so it is alright for the child to have one to two meals less than usual. Before taking any ready-made appetite stimulating tea, please check the ingredients. If parents are unsure whether the child is suitable to take the tea, please consult a registered Traditional Chinese Medicine Practitioner.
Malt and Rice Sprout Tea
Effects: Suitable for indigestion and poor appetite, stomach bloating and discomfort.
Ingredients: 1 ear of corn with corn silk, 1 carrot, 15g rice sprout, 15g malt, rock sugar to taste
Preparation: Rinse all ingredients thoroughly. Peel carrot and cut into pieces. Peel corn, keeping silk and cut into pieces. Combine all ingredients with 1000ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 30 minutes. Add rock sugar to taste.
Note: For best results, drink consecutively for 3-4 days. Malt reduces milk supply, and is not recommended for breastfeeding mothers.

Effects: Improves excessive sweating, reduces water retention and relieves constipation

Ankake Yakisoba (Fried Noodles with Thick Savory Sauce Recipe)
Difficulty: Easy
Time:20min
Number of servings: 2 servings
Ingredients:
2 servings Yakisoba noodles
150g (5.2oz.) thin sliced pork
150g (5.2oz.) baby bok choy
150g (5.2oz.) vegetables of your choice (onion, bean sprouts, carrot, mushrooms, etc...)
* 1 tsp. chicken broth powder
* 2 tsp. oyster sauce
* 1 tsp. soy sauce
salt and pepper
cooking oil
1 tbsp. Katakuriko (corn starch is ok)
1 tsp. sesame oil
Directions:
1. Cut the meat and vegetables into bite-size pieces.
2. Heat 1 tbsp. of cooking oil in a frying pan and cook the noodles 3 minutes each on both sides until crisp golden. Place them on serving plates.
3. Heat 1 tbsp. of cooking oil in a frying pan and cook the meat until crisp golden. Add the vegetables and cook until tender. Add 1 US cup (240ml) of water, then add chicken broth powder, oyster sauce, and soy sauce.
4. Bring to a boil, stop the heat, and add starch diluted with double the amount of water. Heat again until thick. Stop the heat and finish with sesame oil. Season with salt and pepper if needed.
5. Cover the noodles with Ankake sauce to serve.

#曼食慢语
站在年关当前,回想今年经历的一切,恍如隔世。去年我发布完年夜饭节目,就放下一切琐事,开开心心去旅行了。没想到疫情突如其来,每天发生的一切都好像不真实。年初因为不能复工,我一人在家潜心做菜拍摄,倒也安心平静。今年有很多小伙伴选择留守原地不回家,在家乡的也不像往年一大家子聚在一起了。我们都在为了能和家人朋友健康安全团聚的那一天默默等待着。
不论是小家庭和父母在一起,或者是年轻夫妻独自陪伴,一顿圆满丰盛的年夜饭依旧是中国人少不了的仪式感。所以今年我准备的菜没有往年那么多,食材也都是比较家常的,但美味还是绝不打折扣哦。不论你是打算整桌复制,或者是挑选其中几道菜,都能参考看看。
按照中国人的习俗,过了农历新年才是真正新的开始,希望大家都在新的一年里牛气冲天~也感谢大家又一年的陪伴!祝大家新年健康平安!

黄酒1大勺,1 tbsp yellow rice wine

鱿鱼:
大鱿鱼一条约500g,a whole squid about 500g
卤水3L,3L Chinese brine
酱料:
韩式辣酱2大勺,2 tbsp Korean chilli sauce
卤水4大勺,4 tbsp Chinese brine
paprika甜红椒粉1/2小勺,1/2 tsp paprika
蜂蜜1大勺,1 tbsp honey
孜然粉1小勺,1 tsp cumin powder
4、咸柠辣子鸭
鸭腿2个(约500g),2 duck legs (about 500g)
咸柠檬1/4个,1/4 salted lemon
咸柠檬汁1小勺,1 tsp salty lemon juice
干灯笼辣椒2大把,2 handful dried Lantern chili
姜3大片,three slices of ginger
蒜半头,half of garlic
八角1个,1 star anise
水400ml,400ml water
黄酒2大勺,2 tbsp Shaoxing rice wine
糖1小勺,sugar 1 tsp
蚝油2小勺,oyster sauce 2 tsp
白胡椒1小撮,white pepper 1 pinch
杭椒150g,150g Hang pepper
小米辣1-2个,1-2 bird'eye chili
5、咖喱牛杂煲
牛腱子400g,400g bovine tendon
牛蹄筋200g,200g cattle hoof tendon
熟金钱肚200g,200gcooked beef tripe
炸鱼蛋80g,80g fried fish balls
咖喱粉1-2大勺,1-2 tbsp curry powder
姜黄粉1小勺(选用),1 tsp turmeric powder
姜片6大片,6 slices ginger
大葱白2大段,white parts of leek
大葱绿1大块,green parts of leek
胡萝卜1个,1 carrot
白萝卜1个,a white radish
干腐竹3-4把,3-4 handful dried yuba
香菜1小把,handful coriander
椰浆100ml,100ml coconut milk
6、干煸豆角 Stir dry green beans
豆角400g,400g green beans
蒜蓉1小勺,1 tsp minced garlic
花椒面1小勺,1 tsp szchuan pepper powder
小米辣2个,2 bird'eye chili
盐1/2小勺,1/2 tsp salt
糖1/2小勺,1/2 tsp sugar
生抽2小勺,2 tsp light soy sauce
7、四喜羊肉烧麦 Lamb Siu Mai
内馅filling:
羊肩肉400g,400g Lamb shoulder
大葱200g,200g leek
姜1小块 , a small piece of ginger
胡萝卜大半根(约150g),half of carrot(about 150g)
木耳8g,8g dried cloud ear fungus
花椒1.5大勺,1.5 tbsp szechuan pepper
白胡椒1/4小勺,1/4 tsp white pepper
香油3大勺,3 tbsp sesame oil
生抽3大勺,3 tbsp light soy sauce
老抽1小勺,1 tsp dark soysauce
黄酒2大勺,2 tbsp Shaoxing rice wine
盐1小勺,1 tsp salt
糖1小勺,1 tsp sugar
五香粉1/2小勺,1/2 tsp five spices power
外皮skin:
饺子皮500g,500g dumpling wrapper

1. ฝานเมล็ดข้าวโพด ตั้งน้ำสำหรับต้มเส้นพาสต้า ใส่เกลือ ต้มให้ได้ระดับ al dente
2. ผสมมิโซ โชยุ น้ำตาลทราย และน้ำสะอาดเพื่อเป็นซอส
3. ตั้งกระทะ ใส่เนยและน้ำมันมะกอกลงไป พอเนยละลาย ใส่หัวหอม ข้าวโพด และแฮมลงไป ผัดจนหอมนุ่มดี ใส่ซอสที่เตรียมไว้ลงไป ผัดให้เข้ากัน ตามด้วยเส้นเพนเน ผัดให้เข้ากันดี
4. ตักใส่จานเสิร์ฟ โรยหน้าด้วยสาหร่ายโนริ
Miso Penne with Ham and Corn
The pasta that hit all notes right. The sweetness of the crunchy Hokkaido milk corn layered with the smokiness from the ham and savoury miso, creating this tasty sauce.
Penne Rigate N°19 160 g
Salt
Butter 2 tbsp
Olive Oil 1 tbsp
Onion (diced) 30 g
Hokkaido Milk Corn 1 ear
Ham (diced) 70 g
Miso 4 tsp
Shoyu 1 tbsp
Sugar 2 tsp
Water 2 tbsp
Nori Seaweed garnish
1. Cut corn off the cob and cook pasta in a pot of salted boiling water until al dente.
2. For Sauce: mix miso, shoyu, sugar and water until everything dissolved.
3. Meanwhile, heat butter and oil in the pan. Add onion, corn and ham, stirring, until onion is translucent. Pour the miso sauce and pasta in, toss to combine.
4. Transfer to a serving plate and garnish with nori seaweed.
