Kimchi Jjigae is a classic Korean stew made with fermented, sour kimchi.
We made kimchi jjigae mostly with anchovy broth.
To make:
Dashima Myeochi Yuksu
다시마 멸치 육수
Dried Kelp and Dried anchovy stock
• 15 large dried Anchovy
• 1/3 cup Radish
• 4×5 inch Dried Kelp
• 4 cups water
• 2 pcs Spring Onion
1. Roast anchovies on the pan. Around 2 mints
2. Put the water in the pot and add radish, dried kelp, spring onion and stir-fried anchovies. Boil 20mints.
3. Strain stock through a sieve.
To make Kimchi Jjigae:
Ingredients
• 500g well fermented kimchi (Need to be well fermented Kimchi for kimchi soup)
• 1TS sesame oil (or corn oil)
• 3ts red chili pepper
• 1/2 cup juice from kimchi
• 3 cups of water (or anchovy broth)
• 1TS minced garlic
• 1ts salt
• 3pcs spring onion
• 1/2 onion
• 1pack of tofu
• 1TS soup soy sauce
Directions
• Cut the kimchi into bite size
• Stir-fry kimchi and chopped onion with sesame oil (corn oil) for 5mintues.
• Add the anchovy broth (or water)
• Add salt, minced garlic, chili pepper, kimchi juice and soup say sauce.
• Cover and cook for 20mints over medium high heat.
• Put the tofu over top
• Cover and cook another 10-15 minutes over medium heat.
• Chop 1 spring onion and put it on the top of the stew.

Easy Recipe: 계란찜(Gye-Ran-Jjim) Korean Steamed Eggs 😍😍😍
Gye-Ran-Jjim is a so quick and easy to make.
It's a popular side dish for breakfast, lunch and dinner both at home and restaurant.
Enjoy fluffy hot ttuk-bae-gi(earthenware bowl) Gye-Ran-Jjim.
• 3 eggs
• 1TS salted shrimp(새우젓)
• 1/2ts sugar
• 1/2ts corn oil
• 1ts minced garlic
• 130ml water(or anchovy broth)
• 1/2ts spring onion
• 1/2ts sesami seed
• 1/4ts chili powder
1. Break 3eggs and put sugar, salted shrimp, corn oil and water.
2. Beat well
3. Strain all mixture through sieve.
4. Put above mixture into the ttuk-bae-gi(earthenware) and start to boil
5. After starts boiling and stir it gently for 15 seconds.
6. Make a lower the heat another 2 minutes.
7. Close the lid (or earthenware bowl) and simmer another 1-2mintues
until the egg mixture sizzles and has a texture like soft tofu.
8. Open the lid and turn off the heat.
9. Sprinkle chopped spring onion, sesami seeds and chili powder over top.

This scrumptious Tofu with Egg and Clam Soup is simple to make and easy to digest, it’s a delicious reprieve in between those rich festive indulgences.
Our flavourful and hearty stew made using a clear clam-based broth that’s secretly flash-infused with kombu then combined with silky morsels of tofu to gives that delicate, elusive umami taste and texture we all love. We use the Vitasoy organic sprouted tofu (soup) for the extra smooth texture thanks to its Nigiri-seawater extracts, and its superior calcium content - a hefty 25% more than the average tofu.
A lightly whisked egg concoction cooks into fluffy clouds as it’s slow-poured in, made with a simple trio of large eggs, some soy sauce, and a touch of sesame oil which gives that beautiful aroma.The market-fresh clams go in next, along with fine chunks of green chilli and anchovy dashi, with just a small sear of sake to draw the best flavours out. In our finale, we add an encore of tofu, finely chopped spring onions and toasted sesame seeds for that extra dimension and distinct hint of nuttiness.

材料:
飯 1,鹽,麻油,芝麻,罐頭吞拿魚 1,午餐肉 4 tbsp,蛋黃醬 3 tbsp,胡椒粉,紫菜
醬料:砂糖 2 tbsp,辣椒粉 4 tbsp,生抽 2 tbsp,粟米糖漿 2 tbsp,
水 550ml,鯷魚 6,海帶 1,魚板,年糕 400g,椰菜 適量
做法:
1. 將飯,鹽,麻油,芝麻拌勻
2. 將罐頭吞拿魚,午餐肉,蛋黃醬,胡椒粉拌勻
3. 用飯包住吞拿魚餡料,沾上紫菜
4. 將砂糖,辣椒粉,生抽,粟米糖漿拌勻
5. 在鍋加入水,鯷魚,海帶,煮滾後加入魚板,撈起食材
6. 在湯底加入醬料,年糕,椰菜,魚板

※ INGREDIENTS:
500g Tteok Bokki, 700 Water, Cabbage, Fish Cake, Kelp, Anchovy, Ready-To-Eat Rice, Seaweed Paper, Tuna, Spam, Mayonnaise, 4 Red Pepper Powder, 1/2 Salt, 3
Sugar, 1 Corn Syrup, 1 Soy Sauce
※ PREPARATION
1. Season ready-to-eat rice with salt, sesame oil, and little bit of sesame seeds.
2. Combine 1 can tuna with 4 Tbsp cubed spam, and season with 3 Tbsp mayonnaise, and little bit of pepper.
3. Wrap spam tuna mayonnaise with seaweed paper powder rice and make a ball.
4. Roll the rice ball to seasoned seaweed paper powder.
5. Combine 2 sugar, 4 red pepper powder, 2 soy sauce and 2 Tbsp corn syrup.
6. Add 6 anchovies, 1 piece kelp to 550ml water and make broth, then remove. Add 1 piece fishcake and cook, then remove.
7. Add seasoning sauce to broth.
8. When it starts to boil, add soaked 400g rice cake and boil. Add 1 handful cabbage and boil. Then add parboiled fishcake.
9. When it starts to thicken, pour 1 scoop over rice balls.
