Mushroom SZN was just starting when we went to @maximobistrot. @eduardogarciaguzman was telling us about the different types of mushrooms that were just harvested including morels, porcini, matsutake mushrooms and more. My favorites of the mushroom dishes were the chicken broth with mushrooms and this onion and mushroom gratin with compte cheese. It reminded me of French onion soup, but a more flavorful and cheesy version. 🤤 ⁣
