Servings; 4-5 persons
Ingredients:
1 kg Chicken cut into 4-5cm pieces
50-100gm Meat Curry Powder
20-30gm Chili Powder (optional. I didn't put this in though)
3cm Ginger
8 cloves of Garlic
420gm of Water
1 medium size Tomato
2 medium size potato cut into 2cm cubes
Curry leaves (I took 2 fresh swigs off the garden)
50gm Cooking Oil (I used olive oil)
1 Cinnamon Stick
5 Cloves
5 Cardamom Seeds
1 tsp Fennel Seeds
1 Large Red Onion Sliced
Tamarind (I used asam keping 2 pcs)
Preparation:
1. Weigh in the chicken. Marinade with curry powder and salt (1 hour min)
2. Blend Ginger, Garlic and 20gm of water 10s/ Sp10
3. Add into bowl all spices, curry leaves, onions and oil. 8mins/ 120c/ Sp Reverse Spoon
4. Add marinated chicken with curry powder segala masuk. Add 400gm water. 10mins/ 100c/ Reverse Spoon
5. Add tomatoes, asam keping and seasoning (I used 1 tsp of homemade chicken stock and 1 tsp of homemade mushroom stock) 4 mins / 100c/ Reverse Spoon
I used a blade cover, only to realise tak payah. But my ayam look so perfect. hahahaha!

Roti Canai Crispy Snack with tempura nugget cheese 🧀
I love experimenting with ingredients and always try to create a recipe the way I like it but most importantly, easy to make.

Recipe :
Marina Tempura Chicken Nugget (Cheddar Cheese)
Mother's Choice Cheddar Cheese Slices
Kart's Roti Canai
Cooking oil
Castor sugar
Meadow Fresh UHT Choc Milk Flavoured
Method for Roti Canai Crispy :
1. Defrost roti canai in microwave/oven.
2. Cut roti canai into smaller pieces and deep fry until golden brown.
3. Take up deep fried roti canai and mix evenly with castor/brown sugar.
Method for Marina Tempura Chicken Nugget Cheddar Cheese:
1. Fry until golden brown,
2. In the meantime, melt cheese into microwave (10-20 secs will do)
So done ! 😉 Serve Roti Canai Crispy and Marina Tempura Nugget dip cheese with meadow fresh choc milk.

FULL RECIPE:
Marina Spicy Creamy Curry Meatballs with Roti Canai

Ingredients
✔️ 1 packet of Marina Beef Meatballs
✔️ 4 Tbsp Mother‘s Choice Soft Table Spread.
✔️ 3 Bird’s Eye Chillies
✔️ 2 Tbsp Minced Garlic
✔️ 3-4 Stalks Curry Leaves
✔️ 3 Tbsp Curry Powder
✔️ ½ Tbsp Turmeric Powder
✔️ 200ml Meadow Fresh Full Cream Milk
✔️ Pinch of Chicken Stock Powder
✔️ Salt and pepper (to taste)
✔️ 1 Packet of Kart's Roti Canai

1.Pan-fry the meatball with soft table spread. Dish up meatball, and set aside.
2.Heat wok and add soft table spread. Fry chillies, garlic, curry leaves & Curry Powder till fragrant.
3.Pour in Milk. Stir well, bring it to a boil. Add in chicken stock powder, ½ cup water, salt and pepper to taste.
4.Add meatballs and let it cook thoroughly. Stir to coat meatballs pieces evenly in the sauce. If the dish is too spicy, tone it down with a pinch of sugar.
5.Garnish With Coriander leaves & Serve with Roti Canai.

Resepi Roti Sosej Gulung Ala-Ala Bakeri
Bahan-bahan
2 cwn tepung gandum
2 sb ragi kering
2 sb gula
2 sb mentega
1/2 sk garam
220 ml susu suam
bijan (secukupnya)
Cara memasak
1. Masukkan ragi kering dan gula ke dalam susu suam. Kacau lalu biarkan sehingga ragi mengembang selama 10 minit.
2. Kemudian, campurkan tepung gandum bersama garam dan mentega. Gaul sehingga sebati.
3. Tuangkan ragi ke dalam adunan tepung dan gaul seketika.
4. Bawa adunan tersebut ke atas papan canai dan uli sebati.
5. Masukkan semula adunan ke dalam mangkuk. Kemudian, tutup adunan tersebut.
6. Biarkan sehingga doh mengembang 2 kali ganda.
7. Tumbuk sedikit adunan untuk mengeluarkan udara dan bahagikan kepada beberapa bulatan.
8. Rol adunan tersebut sehingga panjang dan lilit dengan kemas pada sosej. Biarkan doh kembang seketika.
9. Oleskan bahagian atas dengan susu segar dan taburkan sedikit bijan sebagai hiasan.
10. Bakar pada suhu 170°C selama 15 minit.
11. Roti Sosej Gulung Ala-Ala Bakeri siap untuk dihidangkan.

Sausage bread rolls is the most popular bread. Just a piece of it simply not enough due to it's fluffy texture. It is also very easy to make ?
Bakery Style Sausage Bread Rolls Recipe
Ingredients
2 cups wheat flour
2 tbsp of dry yeast
2 tbsp of sugar
2 tbsp of butter
1/2 tsp of salt
220 ml warm milk
sesame seeds (as needed)
Cooking methods
1. Mix well dry yeast and sugar into warm milk. Stir and let yeast expand for 10 minutes.
2. Then, mix wheat flour with salt and butter. Mix well.
3. Pour the yeast into the flour mixture and mix for a while.
4. Transfer and knead the dough on working table.
5. Transfer back into bowl then cover the dough.
6. Let the dough double in size.
7. Punch the dough to release air and divide the dough into small pieces.
8. Roll the dough into a long cylinder and roll enclose the sausage neatly. Let them expand for while.
9. Brush on top with fresh milk and sprinkle with sesame seeds on top.
10. Bake at 170°C for 15 minutes.
11. Bakery Style Sausage Bread Rolls is ready to be served.

Roti Canai Sarang Burung & Kari Dal
Bahan-bahan (Kari Dal)
1 cwn kacang dhal (direndam)
10 tangkai kacang panjang (dipotong)
1 batang lobak merah (dipotong dadu)
1 biji kentang (dipotong dadu)
2 ulas bawang kecil (dihiris)
2 ulas bawang putih (dihiris)
2 tangkai daun kari
2 sb serbuk kari daging
1 sb serbuk cili
1 sb serbuk kunyit
1 sk biji sawi
1 batang kayu manis
2 bunga lawang
3 bunga cengkih
2 sb minyak masak
50 ml santan
500 ml air
garam (secukup rasa)
Bahan-bahan (Roti Canai Sarang Burung)
roti canai sejuk beku
1 sk mentega
2 biji telur
secubit lada hitam
Cara memasak (Kari Dal)
1. Tuangkan minyak dan tumis bawang kecil, bawang putih, daun kari, biji sawi, kayu manis, bunga lawang dan bunga cengkih sehingga naik bau.
2. Masukkan serbuk kari daging, serbuk cili dan serbuk kunyit. Kacau sekata.
3. Masukkan air dan kacang dhal yang telah direndam. Masak sehingga kacang dhal empuk.
4. Masukkan sayuran seperti lobak merah, ubi kentang dan kacang panjang.
5. Tuangkan santan dan perisakan dengan garam secukup rasa.
6. Masak kari sehingga mendidih, tutup api dan ketepikan.
Cara memasak (Roti Canai Sarang Burung)
1. Potong roti canai kepada 6 bahagian. Dari tengah, lipatkan doh roti ke bahagian luar. Ulang step tersebut pada semua bahagian sehingga membentuk 'sarang burung'. Ketepikan.
2. Dengan menggunakan api sederhana, cairkan mentega dan masukkan roti canai tersebut.
3. Masak kedua-dua bahagian sehingga keperangan dan terbalikkan.
4. Tuang telur di tengah-tengah bahagian dan masak sehingga separuh masak.
5. Taburkan sedikit lada hitam.
6. Roti canai sarang burung siap untuk dihidangkan bersama kuah kari dhal.

Bird Nest Paratha & Dal Curry
Ingredients (Dal Curry)
1 cup of dhal beans (soaked)
10 long beans (cut)
1 carrot (diced)
1 potato (diced)
2 shallots (sliced)
2 cloves of garlic (sliced)
2 stalk curry leaves
2 tbsp of curry beef powder
1 tbsp of chili powder
1 tbsp of turmeric powder
1 tsp of mustard seeds
1 cinnamon stick
2 star anises
3 cloves
2 tbsp of cooking oil
50 ml coconut milk
500 ml air
salt (to taste)
Ingredients (Paratha)
frozen paratha
1 tsp butter
2 nos eggs
pinch of black pepper
Cooking methods (Dal Curry)
1. Pour in cooking oil and saute shallot, garlic, curry leaves, mustard seeds, cinnamon stick, star anise and clove until fragrance.
2. Add in beef curry powder, chili powder and turmeric powder. Mix well.
3. Pour in water and soaked dhal beans. Cook until dhal beans soften.
4. Add in vegetable such as carrot, potato and long beans.
5. Pour in coconut milk and season with salt to taste.
6. Cook the curry until bubbling, remove from heat and set aside.
Cooking methods (Paratha)
1. Cut paratha into 6 fraction. Fold from the inside to outward. Repeat the steps until forming bird nest shape. Set aside.
2. Using medium heat, melt butter and lay the paratha.
3. Cook both side until golden brown.
4. Pour 2 eggs at the center and cook to half cook.
5. Sprinkle a bit of black pepper.
6. Bird nest paratha ready to be served with dhal curry.

Resepi Roti Puri
Bahan-bahan
2 cwn tepung gandum
3 sb minyak
2 sk gula
1/2 sk garam
1 sk yis
1/2 cwn air
Nota:
1. Pastikan doh betul-betul mengembang sebelum dibulatkan dan dileperkan.
2. Leperkan doh kepada beberapa kepingan sebelum menggoreng. Ini bagi memastikan semua roti kembong gebu.
3. Jangan leperkan semua doh sekaligus baru menggoreng sebab ianya akan mengakibatkan kepingan doh yang terakhir tidak mengembong apabila digoreng.
Resepi Kari Ayam
Bahan-bahan
1 biji kentang (dipotong dadu)
500 gm isi ayam (dipotong kecil)
1/2 cwn minyak masak
200 ml santan
1/2 cwn air (ikut kepekatan kuah)
1/2 sb garam
1/4 cwn air limau nipis
8 sb rempah kari daging
2 sb serbuk cili
Sedikit air
Bahan-bahan untuk dikisar
4 biji bawang merah
4 ulas bawang putih
1 inci halia
Sedikit air
Bahan-bahan untuk ditumis
2 tangkai daun kari
2 batang kayu manis
2 kuntum bunga lawang
3 buah pelaga
1 biji bawang merah (dihiris)
Nota: Bancuh dahulu rempah kari sebelum masak untuk mendapatkan kepekatan kuah kari sekata.
Cara memasak
1. ROTI PURI: Gaulkan tepung, minyak, gula, yis dan garam di dalam bekas.
2. Kemudian, masukkan air sedikit demi sedikit. Gaul rata dan uli sampai adunan tidak melekat pada tangan dan menjadi doh yang lembut.
3. Tutup mangkuk dengan plastik dan rehatkan doh selama 15 minit.
4. Setelah doh kembang, keluarkan doh supaya mudah diuli.
5. Bulatkan doh menjadi bola mini dan canai sehingga leper.
6. Panaskan minyak, goreng sampai agak kembung dan kekuningan.
7. KUAH KARI: Bancuh rempah kari dan serbuk cili dengan sedikit air untuk dijadikan pes.
8. Panaskan minyak, tumiskan bahan tumisan sehingga naik bau.
9. Masukkan bahan kisar dan kacau seketika sehingga kekuningan.
10. Masukkan pes kari. Teruskan menumis hingga pecah minyak (tambahkan air jika terlalu kering untuk mengelakkan hangit).
11. Masukkan ayam dan kacau sehingga 2-3 minit.
12. Masukkan kentang, santan dan air limau nipis. Masak sehingga ubi kentang dan ayam menjadi empuk.
13. Tunggu sehingga mendidih dan perasakan dengan garam.

Poori Bread Recipe
Ingredients
2 cups of wheat flour
3 tbsp of oil
2 tsp of sugar
1/2 tsp of salt
1 tsp of yeast
1/2 cup of water
Note:
1. Make sure the dough is properly risen before round and flatten.
2. Flatten a few before deep fry. This is to ensure poori is puffy.
3. Do not flatten all dough simultaneously as it will make the last rolled dough not puffy when deep frying.
Chicken Curry Recipe
Ingredients
1 potato (diced)
500 gm chicken fillet (cut into small pieces)
1/2 cup of cooking oil
200 ml coconut milk
1/2 cup of water (according to the gravy consistency)
1/2 tbsp of salt
1/4 cup of key lime juice
8 tbsp of meat curry powder
2 tbsp of chili powder
Bit of water
Ingredients for grinding
4 onions
4 cloves of garlic
1 inch ginger
Bit of water
Ingredients for saute
2 stalks of curry leaves
2 cinnamon sticks
2 star anise
3 cardamoms
1 onion (sliced)
Note: Make the curry powder paste first before cooking to get an even curry gravy consistency.
Cooking methods
1. POORI BREAD: Mix flour, oil, sugar, yeast, and salt together inside a container.
2. Then, add in water bit by bit. Mix them well and knead until the dough does not stick to the hand and becomes a soft dough.
3. Cover bowl with plastic and rest the dough for 15 minutes .
4. Once the dough is risen, remove the dough so that it will be easier to knead.
5. Round the dough into a mini ball and roll dough until thin.
6. Heat oil, deep fry until puffy and yellowish.
7. CHICKEN CURRY: Mix curry powder and chili powder with bit of water to make a paste.
8. Heat the oil, saute sauteing ingredients until fragrant.
9. Add in grinded ingredients and stir for a while until golden.
10. Add in curry paste. Continue sauteing until the oil separates (add water if it is too dry to avoid burnt).
11. Add in chicken pieces and stir for about 2-3 minutes.
12. Add in potatoes, coconut milk and key lime juice. Cook until potatoes and chicken are tender.
13. Bring to a boil and season with salt.
