오늘은 가을과 추석을 맞이해서
가을에 어울리는 색으로
3색 마들렌을 만들어 봤어요!
기본 마들렌을 만든 후 초콜릿을 활용해서
3가지 맛으로 만들어 봤는데
의외로 마들렌 레시피가 쉽고 틀이 굳이 없어도
머핀처럼 만들어 봐도 맛있으니
티타임용, 선물용 등으로 한번 만들어 보세요~
因應秋天與中秋的到來
今天做了秋天色之3色瑪德蓮
先做基本的瑪德蓮後
利用巧克力做了3種口味
瑪德蓮食譜意外簡單,就算沒有烤模
做成瑪芬的形狀也很好吃
做成下午茶來吃或當禮物送人吧
【3색 마들렌】
준비물[중형 마들렌 16개 기준] ▸
계란(100g 또는 2개), 설탕(100g), 박력분(100g), 버터(100g, 녹여서 준비)
바닐라오일(2~3방울), 베이킹파우더(4g)
[코팅] 코팅용 화이트초콜릿(마들렌 개당 10g), 녹차가루(녹색 마들렌용, 약간), 코코아가루(초코색 마들렌용, 약간)
egg(100g or 2ea), sugar(100g), cake flour(100g), melted butter(100g), vanilla oil(2~3 drops), baking powder(4g)
[coating] white chocolate(10g for a madeleine), matcha powder(for green madeleine), cocoa powder(for choco colored madeleine)
조리순서 ▸
[기본 마들렌 만들기]
① 계란을 먼저 풀어주고 설탕을 넣고 골고루 섞어주기
② 박력분은 체 쳐서 넣어주고 녹인 버터, 바닐라오일,
베이킹파우더를 넣고 섞어주기
③ 다 된 반죽은 짤주머니에 넣어 냉장고에서 1시간~12시간 냉장
(오래 둘수록 반죽이 안정화되고 기포가 덜 생김)
④ 마들렌틀에 버터를 바르고 밀가루를 살짝 뿌려준 후
반죽을 틀의 80%정도 넣어줌
⑤ 오븐 180도에서 13분정도 구우면 기본 마들렌 완성!
[초콜릿 코팅과정]
⑥ 마들렌을 살짝 식혀두었다가 뒤집어서 식힌 후
⑦ 초콜릿을 녹여서 준비하고 틀에 10%정도만 채우고
앞뒤로 눌러주며 넣기
(코팅이 가능한 초콜릿 사용할 것, 편하게 녹이려면
전자레인지에 30초씩 초콜릿이 녹았는지 확인하면서 돌리기)
⑧ 냉동실에서 10분간(충분히 초콜릿이 굳을 만큼) 넣고
빼내면 코팅도 완성!
식재료 비용 ▸ 총 3,200원정도(개당 200원)
材料[中型瑪德蓮16個] ▸
雞蛋(100g或2個)、糖(100g)、低筋麵粉(100g)、奶油(100g,先融化)、香草油(2~3滴)、泡打粉(4g)
[塗層] 塗層用白巧克力(一個瑪德蓮10g)、抹茶粉(綠色瑪德蓮用,少許)、可可粉(咖啡色瑪德蓮用,少許)
料理順序 ▸
[基本瑪德蓮]
① 將雞蛋打散,放糖後均勻攪拌
② 篩入低筋麵粉,倒入融化的奶油、香草油、泡打粉攪拌均勻
③ 將麵糊倒入擠花袋,放進冰箱冷藏1小時至12小時(放越久氣泡越少)
④ 瑪德蓮烤模抹奶油後,輕輕撒一下麵粉,在烤模擠80%的麵糊
⑤ 在180度烤箱烤13分鐘左右,基本瑪德蓮完成!
[巧克力塗層過程]
⑥ 瑪德蓮稍微冷卻後再翻面冷卻
⑦ 將巧克力融化後,每格填入10%左右,再前後推擠按壓瑪德蓮
(必須使用可塗層的巧克力,可用微波爐簡單融化,每隔30秒停下來確認巧克力融化狀態再繼續)
⑧ 冷凍10分鐘(等巧克力充分凝固)再拿出來就完成了!
食材費用 ▸ 一共3,200韓元左右(約台幣80元)

沒辦法,我想買大得瑪德蓮烤盤但我跑了好幾家實體烘焙店全數缺貨,

I have been looking everywhere to find a big madeleine baking tray but no luck. I only found the mini one. Even if there is a big madeleine tray, it wont fit my little oven. Therefore, I decided to compromise on using this mini madeleine baking tray. Interestingly, there is no shell pattern on my madeleines lol
The lines on the shells are not deep enough to make the pattern pop....so sad!
However the taste is still good! My madeleines turned out to look like Taiwanese egg pancake LOL Anyone loves the traditional Taiwanese egg pancake? I know I love it! It reminds me of my childhood favorite comfort food! Last but not least, Ⓗⓐⓟⓟⓨ Ⓑⓐⓚⓘⓝⓖ

( Yield 40 pcs of mini madeleines) (The baking tray can yield 24 mini madeleine)
*Basic ingredients(Main batter):
-Unsalted butter 100g
-All purpose flour(AP) 100g
-Icing sugar 100g
-Egg 120g
-Baking powder 3g
-Icing sugar 25g
-Vanilla extract 4ml
-Salt a bit
