• Wash 1/2 cup raw rice with water (or 1 bowl cooked rice, don't wash)
• Place rice into a very deep pot
• Add one pot of hot water (for cooked rice use less), cover with lid overnight (or cook rice- an hour)
• add a punch of salt, few drop of cooking oil
• add a little bit bead curd sheet (soak before use)
• heat until boil without lid, reduce fire to small and cook without lid for an hour (for cooked rice - about 30 mins)
• add gingko into the mixture (remove the core before use)
• cook until boil*
• add white pepper, few drop of seasame oil & Shaoxing Wine
• serve hot
Remarks:
*add water before the mixture is too sticky,
** Stir during cooking to avoid ppt stick onto the pot

In a large pot, add water and the washed rice. Cover the pot with a lid and bring it to a boil. When the water starts boiling, turn down the flame to a simmer and cover the pot. 15 minutes later, stir the rice making sure it’s not sticking to the bottom. Cover the pot again and stir the rice one more time 15 minutes after the first stir. Cover the pot one last time and simmer for 30 minutes. When the congee is done, it should look creamy and silky.

皮蛋碎牛肉粥(3人份量):
材料:
免治牛肉150克
白米1/2膠嘜
皮蛋2隻
米粉1個
炸花生少量
調味料(牛肉):
生粉1茶匙
糖1茶匙
生抽1茶匙
蠔油1茶匙
油1/2茶匙
烹調:
1. 放1 1/2升水落煲。
2. 放白米,要不停攪拌,避免黐底。
3. 水滾起後,收至中慢火。
4. 切勿冚實煲蓋,避免滾瀉。
5. 滾起後,如有腐竹,可加入粥。
6. 牛肉調味:
a. 生粉1茶匙
b. 糖1茶匙
c. 生抽1茶匙
d. 蠔油1茶匙
e. 油1/2茶匙
攪勻。
7. 加滾水,調校稀稠度。
8. 鑊中加油燒熱,炸花生,收至中慢火,見到有少許金黃色,撈起。
9. 燒熱油,炸米粉至炸透,擎乾油。
10. 搣少許米粉,混合少許牛肉,輕手撈勻米粉牛肉,混合一起就可以了。
11. 放(10)及皮蛋在碗中。
12. 放1/8茶匙鹽落粥。
13. 滾起粥至大水滾,熄火。
14. 潷起粥在碗中,攪勻,放花生,完成。
Porridge with minced beef and century eggs (serving for 3):
Ingredients:
Minced beef 150g
Plain rice 1/2 measure
cup
Century eggs 2 Nos.
Rice vermicelli 1 No.
Deep~fried little
peanuts
Seasoning (beef):
Tapioca starch 1 tsp
Sugar 1 tsp
Light soya sauce 1 tsp
Oyster sauce 1 tsp
Oil 1/2 tsp
Steps:
1. Put 1 1/2 L water into cooking pot.
2. Put plain rice, stir continuously avoid sticking to the bottom of pot.
3. Turn to medium~low flame when the water boils up again.
4. Leave a gap between pot and lid avoiding boiling over.
5. Put bean curd (if you have) in porridge now.
6. Season the beef:
a. tapioca starch 1 tsp
b. sugar 1 tsp
c. light soya sauce 1 tsp
d. oyster sauce 1 tsp
e. oil 1/2 tsp
Mix well.
7. Adjust concentration of porridge by adding boiled up water.
8. Heat up oil in wok to deep fry peanuts. Turn to medium~low flame when peanuts turn to golden yellow, put peanuts aside.
9. Heat up oil again, deep fry rice vermicelli to golden yellow, hang dry.
10. Mix little vermicelli well with little minced beef, make it just like a meatball.
11. Put (10) and century egg pieces into a bowl.
12. Put 1/8 tsp salt into porridge.
13. Turn off fire when porridge is totally boils up.
14. Pour porridge into a big bowl, mix well, put peanuts, serve.
