疫情降溫後第一次離開台北,直奔台中是為台中米其林站台。
去年米其林首度發布台中指南,市長盧秀燕邀請摘星或遺珠的餐廳業者同聚上菜,為台中站上國際觀光舞台大聲喝采,並邀請我擔任主持人居間串場。
今年米其林必比登名單先行公布,我就看到台中市政府介紹台中必比登的電視廣告,次數之多,展現積極。
果然又接到台中市政府的邀約,但受限疫情,不能像去年大規模相互慶祝,所以借場台中最高二星餐廳 JL Studio展開四人座談。
盧市長直人快語,她感謝JL Studio蟬聯二星,讓全球都看見台中的餐飲實力,對美食行銷城市的效果很滿意,感謝餐飲從業人員的共同努力。
因應疫情JL Studio收客減半,也沒忘加上隔板,降級後開放隔月訂位立刻爆滿,盧市長趁機吐苦水說,不知道有多少人希望透過市長管道成功訂位,但她真的沒辦法,現場JL Studio總經理賴宣勳可以作證。
Jimmy主廚在座談會中秀出恢復營業的最新菜色,他又把家鄉新加坡的街頭小吃解構重組,包括咖哩餃和ROJAK囉雜。
沒有試吃,不知其味,但以JL Studio提供的文字資料與現場實作食物對照,加上Jimmy的詳細解說,半圓形的 #咖哩餃 變得有稜有角,外皮黏上米果和藜麥,內餡加了鵪鶉蛋,擠在表面的美乃滋多了雞油香。
#ROJAK囉雜 的改變更大了,Jimmy先給我看傳統的大雜燴水果沙拉,再拿出他最擅長的金杯粿Kush Pie Tee手指美食,原來ROJAK也變金杯粿了。
Jimmy得意的還有一改再改改上癮的 #海南雞飯,最新版像小泡芙,泡芙上頂著一片雞腿捲和蔥薑蒜,泡芙裡灌入米漿與雞雜,海南雞飯的沾醬則塗在泡芙表面,佩服在直徑四公分的小球體絞盡腦汁。
盛裝在高腳杯中的新加坡名菜 #黑胡椒螃蟹 令盧市長驚豔不已,一改紅身黑斑的印象,成為潔白無瑕的模樣,花蟹肉,白木耳,百合根加上透明的冰滴番茄凍,至於黑胡椒和其他胡椒先萃取再打泡,白得令人眩目。
#被遺忘的花苞2.0指的是台灣人不認識的香蕉花苞,Jimmy主廚將花苞切絲加入發酵香蕉煮成咖哩,再做成台灣人喜歡的炸蝦天婦羅,最後用黃扁豆做的薄餅捲起食用,不知障眼法能否達陣?
主菜是 #無骨牛小排佐羅旺子醬,但強化了羅旺子醬的酸甜,洋溢東南亞風情。
開放內用加上蟬聯米其林二星,台中最值得前往的JL Studio,先見文流口水,也祝你成功訂位。

Blood cockles - colloquially known as see hum or si hum - were really cheap back in the days. They used to be 50 cents (Singapore dollars) for a kilo but now it's about S$14 per kilo. See the difference? According to Channel News Asia, cockles are becoming more expensive because of pollution and over-harvesting. Hopefully with aquaculture, the supply of cockles can once again be bountiful. Due to the surge in pricing, usually it will cost you quite a bit if you were to order this at a food centre or restaurant. That's why we decided to share this recipe with you so that you can easily make this dish whenever you see cockles being sold at a market near you. If you are a fan of cockles from Putien Restaurant, you may want increase the amount of sugar used because their version is a lot sweeter than ours.

The easiest part of preparing a crab dish is cooking it. I know some of you may be daunted by the process of mercy killing and cleaning the crabs but it's really not as difficult as it seems. Stir Fried Crab Beehoon (Rice Vermicelli) 干炒螃蟹米粉
Ingredients:
Serves 4 pax

5 cloves of garlic (sliced into thick chunks)
5 shallots (sliced into thick chunks)
3 slices of young ginger
2 cups (500ml or 16.9 fl oz) water
2 tablespoons oyster sauce
0.5 teaspoon sugar
1.2 kg crabs (we used Sri Lankan crab in the video)
150g beehoon (rice vermicelli) - rehydrate by soaking in room temp water for 10 mins
100g Beijing round cabbage
2 tablespoons premium dark soy sauce
A few dashes white pepper
A small handful Chinese coriander
1 stalk spring onion
2 tablespoons Chinese cooking wine
