Happy 7 months old, dear baby Ansel! ❤
Today, you turn seven months old and you flashed your wide, toothless grin at me, like how you do umpteen times every day, when I took a photo of you.
It's been a month of gastronomic adventure and discovery with you in the past month. Let's see, your favourite food for now includes avocado, banana, pear and pumpkin but you've also tried potato, carrot, blueberries, apple, fish, chicken, sweet potato, brown rice, cereal and more! That's not bad for your introductory month of having solids, right? Although it makes me more exhausted having to cook your meals separately from ours daily, that bright smile of yours makes it all worthwhile.
You are also getting good at sitting down on your own though you tend to lose balance and fall over after some time. Haha. Like the previous months, you have been drooling and munching on your fingers incessantly but you have yet to cut your first tooth, so let's just wait patiently for now yeah.
Your sisters say you are very chubby and I think so too, you might just be the chubbiest one of the lot. It is a heartening thing to know because, like me, you are a preemie but I am relieved to see that you are gaining weight steadily. We love seeing your baby rolls and oh, you are easily tickled and will laugh and laugh when it happens.
We went for your vaccinations earlier this month and you were totally a trooper - your cries lasted merely 1 or 2 seconds despite having a jab on each thigh. That said, I think it's because I was there to comfort you and for now, judging by how you reach out for me or whine whenever I walk away, there is no doubt that you love me deep deep.
But you know what? That is not even a fraction of how much I love you. I can't even describe it but you are my world, or rather, our world because your siblings love you to the moon and back too.
Thank you for being a ray of sunshine in our lives and cheering us up every single day - something which we truly need during these gloomy times. Looking forward to more happy days stuck with you 24/7, my darling boy! ❤

In Taiwan, tens of thousands of animals have been used in often cruel laboratory experiments so that food companies can make claims about their products' benefits to health and safety. In many cases, the government does not require animal experiments and actually prefers human studies because they are more accurate, but many companies think that's too costly or time consuming. As a result, consumers unknowingly consume food, beverage and health supplements that have been experimented on animals in inhumane ways.
In April, however, the U.S.-based animal rights group - People for the Ethnical Treatment of Animals (#PETA) - convinced Taiwan's Food and Drug Administration (TFDA) to ban two types of experiments it had previously recommended for use to make anti-fatigue claims for marketing food and beverages.
In May, PETA also convinced one of Taiwan's biggest health food companies, Standard Foods Corp., which makes PepsiCo's Quaker oats and many products, to stop conducting #animaltests not required by law.
Despite these victories, PETA says there are still several types of cruel animal experiments allowed by the TFDA and many Taiwanese companies continue to use animal experimentation instead of safe and more effective human studies.
PETA has written to 19 other major health food companies in Taiwan that it said collectively force-fed, electroshocked, drowned, starved, bled, poisoned, dissected and/or killed more than 8,000 animals over the past two decades in laboratory experiments not required by law, and launched an online petition urging them to ban this archaic practice.

台灣美食為什麼那麼「Q」?
🍭 NEW TAIPEI CITY, Taiwan — As dusk falls at Lehua Night Market, the fluorescent lights flicker on and the hungry customers start trickling in, anxious for a taste of the local delicacies that give this island its reputation as one of Asia’s finest culinary capitals. Neatly arranged pyramids of plump fish balls. Bowls brimming with tapioca balls bathed in lightly sweetened syrup. Sizzling oyster omelets, hot off the griddle. Deep-fried sweet potato puffs, still dripping with oil.

🍡 Take a bite of any of these dishes and you’ll discover a unique texture. But how exactly do you describe that perfectly calibrated “mouth feel” so sought after by local cooks and eaters alike?
Slippery? Chewy? Globby? Not exactly the most flattering adjectives in the culinary world.
Luckily, the Taiwanese have a word for this texture. Well, actually, it’s not a word, it’s a letter — one that even non-Chinese speakers can pronounce.
It’s “Q.”
隨便嘗一口這些小吃,你都會發現它們別具風味。但你該如何形容那種經過精心調配,令當地廚師和食客們趨之若鶩的「口感」呢?
滑溜?有嚼勁?黏稠?這些可算不上是美食界最好聽的形容。
幸運的是,台灣人有一個詞來形容這種口感。其實,這稱不上是個詞語,而是一個字母——就連不講中文的人也能說出它。
那就是「Q」。

-calibrate: 校準、調整、調配
-be sought after: 趨之若鶩
-chewy: 有嚼勁的
🥤 “It’s difficult to explain what Q means exactly,” said Liu Yen-ling, a manager at Chun Shui Tang, a popular teahouse chain that claims to have invented tapioca milk tea in Taiwan. “Basically it means springy, soft, elastic.”
Q texture is to Taiwanese what umami is to Japanese and al dente is to Italians — that is, cherished and essential. Around Taiwan, the letter Q can often be glimpsed amid a jumble of Chinese characters on shop signs and food packages and in convenience stores and advertisements.
「很難解釋Q到底是什麼意思,」人氣連鎖茶飲品牌、號稱台灣珍珠奶茶發明者的春水堂的經理劉葉玲說。「基本上,它是彈牙、軟糯的意思。」
「Q」的口感之於台灣人,就等於「umami」(鮮)之於日本人,「al dente」(有嚼勁)之於義大利人——備受珍視,也必不可少。在台灣各地,可以在店鋪招牌和便利店、廣告的食物包裝中的一堆中文字裡瞥見「Q」這個字母。

【材料】(保存期間:冷蔵で約4日くらい)
●アボカド:2個
●お好みのポン酢:大さじ5~6(酸味抑えたい方は5で!)
●あごだし(4倍濃縮):小さじ2(めんつゆ、白だしでもOK)
●コチュジャン:小さじ2(豆板醤でもOK)
●砂糖:小さじ2
●ごま油:小さじ2
●おろしにんにく:1~2片(チューブタイプでもOK)
●おろし生姜:にんにくの半分くらい(チューブタイプでもOK)
●唐辛子:お好み量(無くても十分美味しいよ)
●炒りごま:お好み量
※にんにくや生姜は後から足しても大丈夫なのでまずは少ない量で物足りなかったら足してあげるようにして下さい。
※そのまま食べたい方は漬けずに和えたらすぐ食べれます。
※残ったタレは違う物を漬けたり、そのまま野菜のドレッシング、餃子や海鮮丼とかのタレにも使えますよ♪

超超大好評の悪魔のタレシリーズ第4弾!
今回は『悪魔の万能アボカド漬け』を作りました。
ポン酢、和風出汁、味噌などの旨味があわさって
何て言い表したら良いか分からないくらい
とんでもなくやみつきでめちゃくちゃ美味しい味になってます。
そんな悪魔のタレとコク旨なアボカドが超合うんです!
そのまま食べたり、何かの上に乗せるだけでも最高に旨いんですが
ペーストすれば万能ソースにもなるので
ゆで卵と合わせてディップソースにしたりポテトサラダなどなど
皆さんのお好みで色々楽しみ尽くしちゃって下さい!
いつも通り食べれば食べるほどハマる…悪魔的旨さです🤤
和えるだけで本当に簡単なので是非一度、作ってみて下さい。
【Ingredients】(Preservation period: about 4 days refrigerated)
● Avocado: 2
● Your favorite ponzu sauce: 5 to 6 tablespoons (or 5 if you prefer a
less acidic taste!)
● Fish stock (4 times concentrated): 2 teaspoons (Men-tsuyu or white
soup stock can be used)
● Gochujang (soybean paste): 2 teaspoons (Dou ban jiang is also fine)
● Sugar: 2 teaspoons
● Sesame oil: 2 teaspoons
● Grated garlic: 1 to 2 cloves (you can use the tube type)
● Grated ginger: About half of the garlic (you can use the tube type)
● Chili pepper: As much as you like (it tastes good without it)
● Roasted sesame seeds: As much as you like.
※ The garlic and ginger can be added later, so start with a small
amount and add more if it's not enough.
※ If you want to eat it as it is, you can eat it right away without soaking.
※ You can also use the leftover sauce to marinate other things, dress
vegetables, dumplings, seafood bowls, etc.

This time, I made "Devil's Versatile Avocado Marinade" with a
combination of ponzu, Japanese soup stock, miso, and other flavors.
I don't even know how to describe it, but it's so addictive and delicious.
The devil's sauce and the rich avocado go together so well!
You can eat it as it is, or just put it on top of something, and it's
really good.
If you paste it, it becomes an all-purpose sauce, so you can use it as
a dipping sauce with boiled eggs, potato salad, etc.
As always, the more you eat, the more you fall in love with it... it's
devilishly delicious!
It's really easy to just mix it up, so please try making it.
