I'm thankful for today. ^_^ I started my morning with my favourite homemade breakfast, smoked salmon with poached egg on toast. I then met up with the #adibaes for a 45-minute high intensity workout session at @firestation.fit 🔥
After a kickass workout, I lunched at this lovely modern Korean restaurant. Just look at the dishes! 😍

Temakizushi (Hand Rolled Sushi)
Difficulty: Very Easy
Time: 30min
Number of servings: 2
Ingredients
((Sushi Rice))
340g (12oz.) cooked Japanese rice
2 tbsp. vinegar
1.5 tbsp. sugar
1/2 tsp. salt
((Fillings))
Tamagoyaki (2eggs/1 tbsp.milk/1 tbsp.sugar/a pinch of salt)
cucumber
Shiso leaves
avocado
Ikura (salmon roe)
Ebi (cooked shrimp sashimi)
Maguro (tuna sashimi)
smoked salmon
sausages
Kanikama (crab meat)
mayonnaise
Natto (fermented soybeans)
((Finish))
condiments of your choice (chopped onions, sesame seeds, etc)
5 Nori seaweed sheets
Wasabi (Japanese horseradish)
soy sauce
Directions:
1. Mix vinegar, sugar, and salt very well to make Sushi vinegar.
2. Add the Sushi vinegar while the rice is still hot and slice through the rice using a rice paddle to separate the grains. Let the rice cool.
3. Cut Nori sheets into quarters. Prepare your fillings in thin 3-4-inch strips.
4. Place a sheet of Nori on your hand. Place Sushi rice, fillings, and condiments of your choice. Then roll it into a cone shape. Eat with Wasabi soy sauce!
For kids, you can secure the end of the roll with a piece of rice.
If you want to make a larger Temaki (roll more fillings), cut Nori into half.

I shot this video at YouTube Space Tokyo. As some of you may know, there is no kitchen here, so I came up with this NO KITCHEN recipe idea. I hope you like this video.

HALLOWEEN Salmon Avocado Rice Bowl (Easy NO KITCHEN Party Recipe)
Difficulty: Easy
Time: 15 min
Number of servings: n/a
Ingredients:
smoked salmon
avocado
Ikura (salmon roe)
cooked rice
Nori seaweed sheet
Wasabi (Japanese horseradish)
soy sauce
Directions:
1. Dice avocado into small pieces.
2. Moisten a cup with water, stuff the cooked rice, flip it over into a rice bowl, make sure the rice mountain is popping out from the bowl.
3. Cover the rice with smoked salmon.
4. Put avocado and Ikura around the rice.
5. Make Jack-o'-lantern face with Nori seaweed sheet.
6. Pipe out Wasabi (in tube) to make the pumpkin stem.
7. Drizzle with some soy sauce to serve.

Fillings and toppings are up to you but I suggest you to make "Tamago Soboro (seasoned scrambled egg)". It makes the dish tasty and delicious😋 In fact, my daughter ate 2 cups. WOW However, do not let your kids eat raw fish until over 8. She just ate the boiled shrimp.

Cup Sushi
Difficulty: Very Easy
Time: 20min
Number of servings: 4 (150ml) cups
Ingredients:
300g (10.6oz.) cooked Japanese rice
2 tbsp. Sushi vinegar
((Fillings and Toppings))
Crunchy Wakame Salad

Tamago Soboro
* 1 egg
* 1 tsp. sesame oil
* 1 tsp. sugar
* 1 tbsp. Mirin (sweet Sake)
* a pinch of salt
Sakura Denbu (pink colored seasoned shredded codfish)
smoked salmon
Ikura (salmon roe)
octopus Sashimi or any Sashimi of your choice
cooked shrimp
Directions:
1. Spoon cooked Japanese rice into a bowl. Add Sushi vinegar while the rice is still hot and slice through the rice using a rice paddle to separate the grains. Let the rice cool.
2. Place all ingredients for Tamago Soboro in a small pot. Put on low then keep stirring with a whisk until the egg turns into crumbles. Let it cool.
3. In a small cup, fill in Crunchy Wakame Salad, Sushi rice, Tamago Soboro, Sushi rice, Sakura Denbu, and Sushi rice in order.
4. Garnish with the toppings.
If you have Ikura, you won't need soy sauce. However, you can eat with soy sauce and/or Wasabi if necessary.
FYI: Ingredients to make Sushi vinegar from scratch.
1.5 tbsp. rice vinegar
1/2 tbsp. sugar
1/2 tsp. salt
