Maritozzo is an Italian cream bun, normally filled with whipped cream. However, I swapped the whipped cream with ricotta cheese, which added proteins to this meal, and mixed in some peanut butter. 😋
P.s. Did you know that the protein in ricotta cheese is mostly whey (a milk protein that is easily absorbed and contains essential amino acids)

MÂM CƠM CỦA MẠ
Nhìn lại hoàn cảnh địa lý thiên nhiên với thiên tai lũ lụt hằng năm của vùng Thừa thiên - Huế, hột cơm con cá đối với người bình dân chưa hẳn đã dễ làm ra nếu không phấn đấu cơ cực. Do đó, cách ăn uống của đa số người dân là “chém to kho mặn”.
Thuở ấu thời , mắm cà cùng muối đậu
Con đã quen ngon miệng món nhà bần
Lúc mớ rạm ngoài đồng đem rang muối
Mùa nước lên con bống thệ kho khô.
Những chột nưa mạ nấu cùng tí ruốc,
Rau tập tàng vị ngọt những ngày thơ.
Đọt rau khoai ngọt ngào con tôm đất
Hũ tép chua có những lát măng vòi.
Bánh tráng nướng còn thơm mùi mít trộn
Những món quen con vẫn nhớ trọn đời.
Ngày mưa bão, trên mâm thường trứng luộc,
Trưa mùa hè, nước rau muống thay canh.
Chút dưa, muối cũng vội vàng xong bữa
Sao mạ hay… ngồi ăn cuối một mình.
Qua hồn thơ Huy Phương, tôi bỗng hiểu tại sao tâm lý của những người Việt trăm người như một. Khi nhắc món ngon quê mẹ nhất là mắm đều ca tụng hết lời tưởng chừng chỉ có nó mới đáng gọi là ngon. Qua mắm muối dưa cà kham khổ họ đã tìm lại hình ảnh của người mẹ lam lũ hy sinh. Về phương diện tiến hóa, mọi sinh vật sơ đẳng đều phát triển sơ khởi trong môi trường nước biển và cơ thể con người là một thùng nước muối đẳng trương di động. Do đó, thực phẩm chúng ta ăn đều ít nhiều phải có muối và vị “ mặn” là nòng cốt của vị giác.
Nói chí tình, mắm muối quả là rất ngon bổ lành mạnh. Nhờ cá và mắm, dân Việt nam nghèo không bị thiếu dinh dưỡng về protein, có calcium trong xương cá và có sinh tố B12 nhiều trong những rong rêu trong ruột cá. Mắm lại chứa hơn 100 hóa phẩm dễ bay hơi, do đó mắm dễ dậy mùi, ăn vào đúng là “ngậm mà nghe” vì hương vị của những amino-acids lừng lên để tác dụng trên gai lưỡi và kích thích các tiêm mao trong xoang mũi.
Người ta thường ăn mắm kèm theo nhiều rau cỏ và nhiều phụ gia phẩm mà mỗi thứ đóng góp những hương vị riêng : khế chua, vả chát, ớt cay, tóp mỡ béo, mè và đậu phộng bùi, tỏi nồng, riềng the. Đúng là "Trùng dương mở hội" khi ăn một đọi cơm hến nêm nếm với trên dưới 21 thứ rau cỏ và gia vị. Cái ngon của mắm quả là “bất khả tư nghị” bằng ngôn ngữ của nhân gian!

Glutamine เป็นกรดอะมิโนที่จัดอยู่ในกลุ่มที่เราเรียกว่า “Conditionally Essential Amino Acids” โดยกลุ่มนี้เป็นกลุ่มพิเศษคือเป็นกลุ่มกรดอะมิโนที่จำเป็นบางคราว โดยคำว่า “บางครั้งคราว” ในที่นี้คือถ้าร่างกายได้เจอกับความเครียดอย่างเช่นการยกเวทเป็นต้น โดยวิธีการที่ Glutamine ป้องกันการทำลายกล้ามเนื้อนั้นผ่านกระบวนการที่เรียกว่า “Gluconeogenesis” ซึ่งเป็นกระบวนการป้องกันการทำลายกล้ามเนื้อ ที่ทำการแปลง Glutamine ไปเป็นสิ่งที่มีโครงสร้างคล้าย Glucose และนำไปให้ร่างกายใช้ ….. หากคุณไม่มี Glutamine ร่างกายจะ “กัดกินกล้ามเนื้อ” ของคุณมาและมาแปลงเป็นพลังงาน ซึ่งนั่นหมายความว่า กล้ามน้อยลง ไขมันมากขึ้น
ลดอาการเมื่อยล้า
Glutamine ลดอาการเมื่อยล้าด้วยการนำสารอาหารเข้าเซลล์มากขึ้น และเร็วขึ้น หรือว่าง่ายๆเพิ่มการดูดซึมของสารอาหารอื่นๆ โดยจะช่วยลดระยะเวลาการปวดหลังจากการเล่นที่เราเรียกว่า DOMS และย่นระยะเวลาที่คุณต้องใช้ในการฟื้นตัวระหว่าง set
