煲湯好瓜
飲湯是香港人的養生秘技之一,根據季節與體質,挑選合適的食材或藥材,煲出一鍋保健湯水,美味之餘又能強身防病。如果你是入廚新手,覺得煲湯材料配搭很複雜,又不懂藥材屬性,不妨從簡單的瓜湯開始,按個人體質選擇合適的瓜類,簡單配以粟米、紅蘿蔔即可煲出清甜湯水;想湯味更濃郁可加入肉類,或豆類如黃豆、紅腰豆,甚至果仁如腰果、合桃、栗子亦可。
偏熱人士
症狀:喉嚨痛、口瘡、暗瘡、尿少色黃、大便偏乾硬/便秘
宜選瓜類:苦瓜、節瓜、絲瓜、木瓜
濕重人士
症狀:渴睡、容易出汗,胸悶、無食慾、水腫、大便稀爛甚至黏廁所

佛手瓜粟米蓮子百合湯
功效:清心安神,紓緩因為壓力大而睡不安寧、疲倦等症狀。
材料:佛手瓜2個、粟米連鬚2根、紅蘿蔔1根、蓮子40克、百合20克、蜜棗2枚
做法:
1. 所有材料洗淨,佛手瓜去皮切塊;粟米連鬚去衣切段;紅蘿蔔去皮切塊備用。
2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮1小時,最後下鹽調味即可。

Gourd-based soups
Hong Kong people like to drink soup to maintain our general wellbeing. To make ourselves a pot of delicious and healthy soup, we can choose the most suitable ingredients and Chinese medicines based on the season and our body constitution.
If you have neither the experience in cooking nor the confidence in making a pot of soup, try starting with a simple gourd-based soup. Choose the gourd (or melon) based on your body constitution and add in corn and carrot to sweeten the soup.
To make the soup more flavorful, you can add meat or beans such as soybean and kidney beans or nuts such as cashew, walnut, and chestnut.
🔥 Individuals with heat in the body
Symptoms: sore throat, mouth sores, acne, yellowish urine, dry and hard stools/constipation
Melon choice: bitter gourd, hairy gourd, loofah, papaya
💦 Individuals with accumulated dampness in the body
Symptoms: a person has had enough hours of sleep but still experiences fatigue, sweat easily, chest tightness, poor appetite, water retention problem, and produces loose stools that stick to the toilet bowl.
Melon choice: winter gourd, old cucumber, loofah, hairy gourd

Symptoms: feeling emotional, frequently sighing, hypochondrium distension, breast swelling, belching and constipation
Melon choice: chayote, loofah, papaya, cantaloupe

Melon choice: pumpkin
Chayote and corn soup with lotus seed and lily bulb
Effects: clears the heart and calms the mind, relieves symptoms such as poor sleep quality and fatigue.
Ingredients: 2 chayote, 2 ears of corn with silk, 1 carrot, 40g lotus seed, 20g lily bulb, 2 candied dates
Preparation:
1. Rinse all ingredients thoroughly. Peel the chayote and slice into pieces. Remove husks from corn keeping the silk and cut into pieces. Peel the carrot and cut into pieces.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1 hour. Add salt to taste.

一覺醒來,覺得口裡有朕苦味?如伴隨口渴但不想喝水、口中黏膩、小便黃且不暢順的問題,就代表你有濕熱問題。常暴飲暴食、嗜吃生冷食物、嗜甜嗜辣、喝酒太多或本身屬痰濕體質人士特別容易出現濕熱症狀,「濕蘊於中,濕鬱化熱」,濕與熱同時結合於脾胃裡阻礙氣機運行,這種口乾口苦,即使喝再多水也無補於事,需要清熱利濕以紓緩症狀。 西洋菜是冬春兩季常食蔬菜之一,從中醫角度看,西洋菜性涼,有清熱潤肺的功效,適合身體有熱像時食用,例如口乾、口苦、便秘、暗瘡等。要注意西洋菜是水生植物,或會藏有水蛭,所以烹煮前必須以清水加鹽反覆浸泡清洗數次。

Have you ever had a bitter taste in the mouth after waking up? If it comes with other accompanying symptoms such as feeling thirsty but do not want to drink water, sticky feeling in the oral cavity, and yellow urine or urine retention, then your body is experiencing the damp heat condition.
Individuals who binge eat, those who indulge in raw, cold, spicy, and sweet food and alcoholic drinks, and people who have the phlegm-dampness body constitution will develop damp heat symptoms more easily. The combination of dampness and heat in the spleen and stomach can stagnate the circulation of the qi, and this is what causes dryness and bitterness in the mouth.
We cannot solve this problem even by drinking a lot of water. The most effective way to relieve the symptoms is to clear heat and dispel dampness from the body.
Watercress is one of the common vegetables during winter and spring. From the perspective of Chinese Medicine, watercress is cool in nature, and it can clear heat and moisten the lungs. It is suitable for individuals to consume when they feel heaty. Some of the common symptoms are dry mouth, bitter taste in the mouth, constipation, and acne. Do note that watercress is an aquatic plant, so leeches might hide in between the leaves. Before cooking them, be sure to wash and submerge them in salted water several times first.
Tip on the ingredients: Monkey head mushroom is mild in nature, can strengthen the spleen and stomach and aid digestion. It is suitable for those with abdominal bloating, stomach pain, burping, acid reflux, chronic gastritis, stomach and duodenal ulcers, and patients with stomach cancer.

Effects: Clears heat, strengths the spleen and promotes diuresis. Aids digestion. Relieves bitter mouth and dry mouth, bloating.
Ingredients: 600g watercress, 1 monkey head mushroom, 15g fox nuts, 30g coix seeds, 2 dried figs, 2 candied dates
Preparation:
1. Rinse all ingredients thoroughly. Soak watercress in salted water, drain and repeat a few times.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 2 hours. Add salt to taste.

Glehnia root and Polygonatum odoratum ‘zero-pores’ soup
According to the Chinese Medicine theories, the lungs regulate the skin and hair. If the qi in the lungs is steady, the qi and the blood will circulate well, hence, our skin will also look more tender and have a nicer complexion. With a healthy looking skin with minimal pores, you can simply update your photos on IG without using any filters, but first, you must take good care of your lungs.
Glehnia root (‘Sha Shen’) and Polygonatum odoratum (‘yu zhu’) are a pair of ingredients that are good for the lungs. Glehnia root is the root of a type of herbaceous plant called Glehnia littoralis. It is slightly cool in nature, can nourish yin, clear the lungs, strengthen the stomach, and induce salivation.
Polygonatum odoratum, on the other hand, is the stem of the herbaceous plant itself. It can nourish yin, inhibit salivation, quench one’s thirst, and has moistening properties. According to The Classic of Herbal Medicine (‘Shennong Ben Cao Jing’), eating Polygonatum odoratum regularly can remove spots on the face and improve the complexion of the skin.
Polygonatum odoratum is suitable for individuals with a yin-deficient body constitution or people who sleep late frequently, especially when symptoms such as dry mouth and dry skin are apparent. Those who experience discomfort in the intestines and the stomach, stagnation of the qi, and those with phlegm-dampness body constitution should avoid taking this.
Tip on the ingredients:
Corn is mild in nature. It is beneficial to the lungs, calms the mind, strengthens the spleen to stimulate appetite, and is good for the brain. It is especially suitable for people with spleen and stomach qi deficiency, insufficient qi and blood, and malnutrition.

Effects: Nourishes the yin, moistens the dryness and whitens the skin. Relieves dry skin, dry lips and constipation.
Ingredients: 10g Glehnia Root, 10g Polygonatum odoratum, 2 corn, 1 ripe papaya, 3 fig, 1 pack dawn rice water powder
1. Rinse all ingredients thoroughly. Remove husks and silk from corn and cut into pieces. Peel and deseed papaya and cut into pieces.
2. Combine all ingredients with 2000ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1 hour. Add salt to taste.

炆牛筋(高速煲):
材料:
生牛筋2磅半
白蘿蔔2斤
果皮2片
辣椒仔2隻
處理:
1. 生牛筋,放入高速煲,加入1升半水,用“再加熱”功能。如果用明火炆,就用鑊汆水3分鐘。
2. 白蘿蔔,去皮,切細舊。
3. 牛筋,已用高速煲汆水15分鐘,倒去水分, 清水逐件沖洗乾淨,擎乾水。
4. 高速煲,洗乾淨後,放牛筋落煲。
5. 加入:
a. 果皮
b. 辣椒仔2隻
c. 蒜蓉半湯匙
d. 豆瓣醬半湯匙
e. 柱侯醬1湯匙
f. 蠔油1湯匙
g. 生抽1湯匙
h. 老抽半湯匙
i. 冰糖100克
加入水100毫升攪勻。
烹調:
1. 第一轉,用“豆/蹄筋”功能,炆40分鐘,連續煮2次。如果用明火炆,加入水2升,大火煮滾後,轉中慢火,炆45分鐘,熄火,焗30分鐘,再炆45分鐘完成。
2. 加入蘿蔔,撈勻。如果用明火,蘿蔔要用中慢火炆15分鐘,熄火。
3. 第2轉,再用“豆/蹄筋”功能,炆40分鐘。
4. 高壓煲已煮好,要先放氣,才可以打開煲蓋。
5. 完成,可享用。
Braised beef tendon (with pressure cooker):
Ingredients:
Beef tendon 2.5 lb
White radish 2 catty
Dried orange peel 2 slices
Chili 2 Nos.
Preparation:
1. Beef tendon, put into pressure cooker, add water 1.5L, use "reheat" function. Or if it is cooked by fire, use a wok to soak the beef at high flame for 3 minutes.
2. White radish, get it peeled and dice in small cubes.
3. Beef tendon, has been soaked in boiled~up water for 15 minutes by pressure cooker. Pour away water, rinse the beef one by one thoroughly. Hang dry.
4. Pressure cooker, has been rinsed well. Put beef into it.
5. Add:
a. Dried orange peel
b. Chili 2 Nos.
c. Garlic sauce 0.5 tbsp
d. Chili bean sauce 0.5 tbsp
e. Chu hou paste 1 tbsp
f. Oyster sauce 1 tbsp
g. Light soya sauce 1 tbsp
h. Dark soya sauce 0.5 tbsp
i. Rock sugar 100g
Mix well with water 100ml.
Steps:
1. First round, use "bean/tendon" function, braise for 40 minutes, cook for 2 times consecutively. Or if it is braised by fire, add water 2L, boil up at high flame, turn to medium~low flame after boils up. Braise for 45 minutes. Turn off fire. Leave it for 30 minutes. Braise for 45 minutes again at medium~low flame after boils up. Complete.
2. Put white radish. Mix well. If it is cooked by fire, cook with the beef for 15 minutes at medium~low flame, turn off fire.
3. Second round, use "bean/tendon" function, braise for 40 minutes.
4. It has been cooked well by pressure cooker. Release the air first, then open the cooker.
5. Complete. Serve.

When I want to eat, just remove and rinse off the aligners. It’s very convenient as well as I can pop the aligners in the container.
? AFTER EATING
After eating, I’ll just rinse my mouth and put the aligners back on.

How much does my Invisalign treatment cost?
Hospital wishes to keep the price confidential due to restrictions from policies to publicly state the price.
However, I noticed that there are a few of you who are interested to know about the cost of my Invisalign treatment. And I don’t want to miss out replying anyone individually ? Therefore I have been given permission to share because of this.
All the planning and manufacturing of the Invisalign aligners are from overseas, the average cost of Invisalign in the US is USD 6000 and this may be subjected to change.

逆境慳家豬軟骨:
材料:
豬軟骨 2磅
豆豉 50粒
蒜頭 8粒
薑 1舊
指天椒 3隻
調味料:
紹興酒 1湯匙
生抽 1湯匙
鮑魚汁 1湯匙
糖 1湯匙
生粉 1湯匙
鹽 1湯匙
胡椒粉 少許
處理:
1. 切好豬軟骨,用清水解凍。
2. 倒去水分,用鹽乸去雪味,雞腥味,及加入鹹味。
3. 15分鐘後,用清水沖洗乾淨,擎乾水。
烹調:
1. 白鑊烘排骨,辟除羶味。
2. 加入蒜頭、豆豉、薑蓉爆香豬軟骨,再加入辣椒及胡椒粉。
3. 加入滾水,蓋過肉面,加入紹酒、鮑魚汁、生抽及糖。
4. 滾起後,用中火炆10分鐘熄火,無需打開蓋焗10分鐘。
5. 食前,打着火,逐少適量加入生粉芡,滾起,上碟。
Ingredients:
Pork cartilage 2 pounds
Preserved 50 pcs

Ginger 1 pc
Finger pepper 3 Nos.
Seasoning:
Shao Xing 1 tbsp
Wine
Light soya sauce 1 tbsp
Abalone sauce 1 tbsp
Sugar 1 tbsp
Tapioca starch 1 tbsp
Salt 1 tbsp
Pepper a pitch
Preparation:
1. Cut the pork well, defrost it with tap water.
2. Pour away the water, use salt season for 10 minutes to eliminate the unpleasant smells and tastes, and add some salty taste.
3. Rinse thoroughly and hang dry after 15 minutes.
Steps:
1. Heat up the wok, fry the pork on wok with no oil.
2. Put garlics, preserved beans and ginger to fry the pork for 1 minute, then add red chili and pepper.
3. Pour in hot water, just cover up the pork, add shaoxing wine, abalone sauce, light soya sauce and sugar.
4. Turn to medium flame after the water has been boiled up, braise for 10 minutes more, turn off the fire and keep the lid shut for 10 minutes.
5. Reheat the pork again, add appropriate tapioca sauce, wait for boiling up again, serve.
