最近新開的一個從美國Aspen開始的新派餐廳概念,每幾個月邀請一位國際名廚來坐陣。 是一個好的出發點及有趣的想法但也有一定的漏洞。
裝潢和服務有應有的水準但對於一個只來一到幾個月的廚師來說,這就好像渡假或體驗本地文化一樣,試問會有花多少精力去把餐廳做好或建立本地客戶群?.......這些都會在菜的水準反映去來。
這裡的收費是台北同類型餐廳當中數一數二,而水準郤離平均有距離,所以對於這餐廳以後的受歡迎程度真的存在很大問號?? 還好這餐廳的背後財團夠實力,不然明年還會不會存在就真的有點玄了!
當然遊客還會為餐廳本身名氣,或本地客為了往後有名氣廚師來訪再試。 最有可能是愛喝酒的客人會因這裡合理的酒價而成為餐廳的常客......但只是為了光喝酒不吃飯而已!
The first overseas branch of a new dining concept operation originated from Aspen US. Good idea and intention but it has its drawbacks.
Decor, service and wine list were up to expectation though with a chef who only visit for one to few months each time, it’s more like having a vacation and to experience local culture than really putting in the effort to establish a rapport and local clientele for the restaurant....and the food reflected this impediment.
Given the restaurant’s charge is one of the highest for similar cuisine category in town yet food quality is at most average standard, it’d be questionable how sought after this place will be going forward (luckily this place has strong financial backing,). Of course tourist would still visit for the name or local customer would revisit if more big chefs are visiting. Most likely is probably wine enthusiast would be regulars for the reasonably priced wines instead of the food.
