No trip to Phnom Penh is complete without a trip to Phnom Penh's Central Market; besides, the best way to experience the local culture is to visit a local market right? There are many things to see and eat in Central Market; set aside the souvenirs and household items, the food corner of the market is worth a trip there. It took us a while to decide what to try but we were particularly attracted to the giant Squid on the grill. We had one for USD $11... beautifully grilled and brushed with Scallion Oil, served with tangy, spicy-sour local Cambodian Chili dip. The texture was perfect... chewy but not rubbery and seriously addictive. But the huge portion was more than satisfactory for the two of us. Though not particularly cheap, it's definitely one of the must-tries in our opinion. We yearned for something piping hot and thus, the Bun Rieu was our choice. The delicacy is basically Crab Cake-based Vermicelli Noodles topped with meat toppings and fresh greens. Delicious on its own but even better with the addition of those colorful chili dips.

●長ねぎ:2本
●ごま油(長ねぎ焼く用)
●大葉:10枚
[特製のやみつき漬けダレ]
●めんつゆ(3~4倍濃縮):大さじ1と1/2(白だしでもOK)
●醤油:大さじ1と1/2
●ナンプラー(魚醤):大さじ1
●お酒:70ml
●みりん:50ml
●胡麻油:大さじ1
●豆板醤:小さじ1(コチュジャンでもOK)
●赤味噌:小さじ1(普通の味噌でもOK)
●炒りごま:お好み量
●おろしにんにく:小さじ1
●おろし生姜:小さじ1
●砂糖:小さじ2(ラカントにするとさらに糖質抑えられます)
●唐辛子:1本
●お好みで韓国唐辛子粉、ラー油、ブラックペッパー
※辛いのが苦手な方は豆板醤を普通の味噌にしてもOK
※ナンプラーが苦手な方は醤油に変更してもOK
※最後に必ず味見をして味の濃さは決めてあげてね

『超やべぇやみつき大葉ネギ』を作りました。
前回の『超やべぇやみつき大葉茄子』の時にも使ったこの特製のタレが
とにかくyoutubeでも大好評でそれを香ばしく焼いた葱に合わせた
今回も最高にやべぇ自慢のレシピになってます♪
魚醤と和風出汁と味噌の旨味を吸ったシャキシャキ葱に
さっぱりさせてくれる大葉との相性がマジ抜群過ぎて…
無限に何個でも食べられる超やべぇやみつき感です🤤
ご飯のお供にはもちろんですがラーメンのトッピングにも最高に旨いですよ!
それ以外でも素麺、油そば、うどん、豆腐、焼肉、鶏のむね肉などなど色んな物に超合います♪
今回も作り方は焼いて特製ダレに漬けるだけ♪
とっても簡単なので是非是非作ってみて下さい。
ただ一つ困る事があるとしたら旨すぎて作り置きにならない!って事くらいですねw
[Ingredients] (preserve period: 3 to 4 days)
● Green onion: 2
● Sesame oil (for cooking green onions)
● Shiso leaves: 10
[Specially made addictive sauce]
● Noodle soup (3 to 4 times concentrated): 1 1/2 tablespoons (white soup stock can also be used)
● Soy sauce: 1 1/2 tablespoons
● Nam Pla: 1 tablespoon
● Sake: 70ml
● Mirin: 50ml
● Sesame oil: 1 tablespoon
● Dou ban jiang: 1 teaspoon (gochujang is also fine)
● Red miso: 1 teaspoon (you can use regular miso)
● Roasted sesame seeds: 1 teaspoon
● Grated garlic: 1 teaspoon
● Grated ginger: 1 teaspoon
● Sugar: 2 teaspoons (you can use lakanto for even less sugar)
● Chili pepper: 1
● Korean chili powder, raayu, black pepper to taste
※If you don't like spicy food, you can use regular miso instead of Dou ban jiang.
※If you don't like Nam Pla, you can replace it with soy sauce.
※Be sure to taste them at the end to determine the intensity of the flavor.

I also used this special sauce for the last "Amazing yummy Addictive Eggplant & Shiso" and it was very popular on youtube. I'm really proud of this recipe again ♪
The crispy scallions absorb the flavor of the Nam Pla, Japanese soup stock, and miso, and the refreshing shiso leaves go really well together...
It's so addictive that you can eat as many as you want without limit.
Of course it's great as an accompaniment to rice, but it's also great as a topping for ramen!
It also goes well with many other things such as somen, fried noodles, udon, tofu, grilled meat, chicken meat, etc.
Again, all you have to do is grill it and dip it in the special sauce ♪
It is very easy to make, so please try it.
The only problem is that it's so good, you won't have enough to store!lol

● Cucumber: 2
● Okra: 8
● Chinese yam: about 450g
● Enoki mushrooms: 1 pack
● Sake: 50ml
● Mirin: 50ml
● Red miso paste: 1/2 tablespoon (regular miso can be used)
● Noodle soup (3-4 concentrated): 4 tbsp (white soup stock can be used)
● Soy sauce: 2 tablespoons
● Sugar: 1 tablespoon
● Garlic: 2 cloves
● Ginger: as desired
● Chili pepper: as desired
● Dahi powder: 1 pack (you can also use bonito flour)
● Salt (For removing smell)
● Negi (green onion), myoga, wasabi, natto, dried seaweed, as desired

When you pour it over soba noodles, somen, tofu, or rice with egg, it
becomes like a drink lol

鹹魚腩肉炆烏冬
材料:
烏冬4個
鹹魚1件
五花肉1斤
薑1舊
辣椒仔2隻
處理:
1. 大火煲滾1鑊水,放五花肉,煮3分鐘,夾起,廚紙索乾。
2. 五花肉,切薄片。
3. 薑,去皮,切碎,拍鬆。
4. 辣椒仔,1隻原隻保留,1隻切粒。
5. 五花肉調味:
a. 胡椒粉少許
b. 生粉1湯匙
c. 鮑魚汁1湯匙
d. 生抽1湯匙
撈勻,醃10分鐘。
烹調:
1. 大火在鑊中燒熱油1湯匙。
2. 放鹹魚煎香。
3. 放五花肉爆香。
4. 煎了2分鐘,反轉鹹魚及腩肉。
5. 壓爛鹹魚,再煎1分鐘。
6. 加入滾水,炆腩肉,水蓋過豬肉面。
7. 加入蠔油1湯匙。
8. 大火炆15分鐘。
9. 烏冬,清水洗乾淨,擎乾水。
10. 五花肉已炆了15分鐘,試一試味。
11. 加入糖1湯匙,冚蓋。
12. 加入烏冬,開大火,冚蓋,煮滾就可以了。
13. 完成,上碟。
14. 加入蔥粒及辣椒粒,可享用。
Braised udon with salted fish and pork belly
Ingredients:
Udon noodles 4 Nos.
Salted fish 1 pc
Pork belly 1 catty
Ginger 1 No.
Chili 2 Nos.
Preparation:
1. Heat up a wok of water at high flame. Put pork belly, soak for 3 minutes. Pick it up. Dry it with kitchen towel.
2. Pork belly, thinly slice.
3. Ginger, get it peeled, chop and beat well.
4. Chili, one is to be diced in cubes.
5. Season the pork:
a. Pepper little
b. Tapioca starch 1 tbsp
c. Abalone sauce 1 tbsp
d. Light soya sauce 1 tbsp
Mix well. Season for 10 minutes.
Steps:
1. Heat up oil 1 tbsp at high flame in wok.
2. Fry salted fish well.
3. Fry the pork belly.
4. Have already fried for 2 minutes, flip over salted fish and pork belly.
5. Squash the salted fish, fry for 1 more minute.
6. Pour boiled~up water, braise the pork, water just covering it up.
7. Add oyster sauce 1 tbsp.
8. Braise at high flame for 15 minutes.
9. Udon, rinse thoroughly. Hang dry.
10. Pork belly has been braised for 15 minutes, taste it.
11. Add sugar 1 tbsp, cover up the wok.
12. Put udon, turn to high flame. Cover up the wok. Wait for boiling~up again is OK.
13. Complete. Put on plate.
14. Put green onion and chili cubes on top. Serve.
