This is a Long post, but something dear to me. I hope you can share this post as well.
So I wrote a children’s story book.
It is about an ice cube who leaves the comfort of a freezer to journey across the world through sand and snow to find his idol-an iceberg. There is an awesome twist at the end!
I felt I needed to speak about this, this journey that is life and the human potential. And especially teach it to Jude early on, that his capabilities are only confined to his imagination. Credit to the awesome illustrator - Jade Fang who tirelessly worked on the way I wanted the book to present itself in my head and Candid Creation Publishing for publishing advice.
The children title has been picked for this years’ Singapore Writers Festival as well, and will debut on November 10th!!!

Dignity Mama (under Dignity Kitchen from Seng Choon Koh’s Project Dignity Singapore) provides caregivers and young adults with special needs purpose a real business they can operate together. The caregivers at Dignity Mama ( usually the Mothers of these young adults) really are the true ice bergs of their families and society.
These proceeds will help go into the creation of a new kiosk that can employ another Mother and her child to operate a business.
Each book retails for SGD20.
And I have 1000 books on hand for sale.
I hope you can help me buy a book ( or many) and collectively raise SGD20,000 for Dignity Mama.

レモンケーキが大好きなので、食べたくなってまた焼いてしまいました。味見の1個だけであとは人様に差し上げるつもりが、味見で4個もぺろりと食べてしまい、凹んでいます。
あぁ、自己嫌悪。
肝心のケーキの味ですが、ふわふわしっとりで甘酸っぱくて激しく私好みに仕上がっています。この味を確認したい人は、すぐに作ってみso。健闘を祈る!!!^^

【Ingredients】Cupcake Molds, bottom diameter 3.5cm(makes 14 )
1 Egg(60g) (room temperature)
30g Granulated sugar
15g Honey
40g Cake flour
15g Almond flour
2g Baking powder
30g Melted butter
Zest of one lemon
12g Lemon juice
60g Melted white chocolate
【Directions】
Preparation:
Finely grated lemon zest and squeeze lemon
Preheat the oven to 338 °F/170℃
①Whole egg, sugar and Honey into the bowl.
②Beat it quickly with the hand-mixer until it gets thick.
Beat it until the mixture thickly sticks to the mixer and falls like ribbon.
③Add shifted cake flour,Almond flour,and Baking powder,mix.
④Add Melted butter,lemon zest and Lemon juice,mix again.
⑤Pour the mixture into baking cups , drop it for a few times to degass.
⑥Preheat the oven at 338 °F/170℃ and bake it for 12 min.
⑦Dip Chocolate onto cooled cupcakes.
【材料】底が直径3.5cmの大きさのマフインカップで約14個
卵(60g) 1個 (室温)
グラニュー糖 30g
ハチミツ 15g
薄力粉 40g
アーモンドプードル 15g
ベーキングパウダー 2g
溶かしバター 30g
レモンの皮 1個分
レモン汁 1/2個分(12g)
溶かしたホワイトチョコレート 60g
【作り方】
準備:レモンは皮を削って、実は絞っておく。
オーブンは170℃に温めておく。
①ボウルに卵を割り入れ、砂糖とハチミツを加える。
②ハンドミキサーの高速で立て、生地がリボン上に落ちるようになるまで立てる。
③ここに薄力粉、アーモンドプードル、ベーキングパウダーをふるい入れて粉っ気が無くなるまで混ぜる。
④溶かしバター,、レモンの皮、レモン汁を加えて混ぜる。
溶かしバターはゴムベラで受けるようにして生地の全体に散らすように加えると一か所に沈みこまずに全体を混ぜやすくなる。
⑤カップに生地を流し込み型をとんとんして空気を抜く。
⑥170℃に温めたオーブンで12分焼く。
⑦冷めたらお好みで溶かしたホワイトチョコをつける。
*コーテング用ホワイトチョコだとパリっと固まりラッピングしやすくなります。
*パウンドケーキとは少し違うのであまり日持ちしませんのでご注意ください。
そんなときはこちらのレシピがおススメ。

パウンド型で焼くふんわりレモンケーキです。
パウンド型で焼いていますが、よくあるずっしりとしたパウンドケーキではなく、ほんとに軽いケーキです。
ふわっとしっとりしていて、甘酸っぱいレモン汁をたっぷりとしみこませているので、「初恋」の味がします。
少しきゅんとします、ほんとかいな!
最後にトッピングとして上にホワイトチョコをこれまたたっぷりとかけて頂きます。

【Ingredients】7in(18cm)×3in(8cm)loaf pan
1 Egg(60g) (room temperature)
40g Granulated sugar
30g Cake flour
20g Almond flour
2g Baking powder
Zest of one lemon
30g Melted butter
For Toppings:
★30g Lemon juice
★10g Water 水 10g
★15g Granulated sugar
(Microwave at sugar and water,add lemon juice )
40g Melted white chocolate
【Directions】
Preparation:
Finely grated lemon zest and squeeze lemon
Line the cake pan with parchment paper.
①Whole egg and sugar into the bowl.
②Beat it quickly with the hand-mixer until it gets thick.
Beat it until the mixture thickly sticks to the mixer and falls like ribbon.
③Add shifted cake flour,Almond flour,and Baking powder,mix.
④Add lemon zest and Melted butter,mix again.
⑤Pour the mixture into a loaf pan, drop it for a few times to degass.
⑥Preheat the oven at 338 °F/170℃ and bake it for 18 min.
⑦Using a pastry brush, spread lemon juice mixture(★) all over the top and sides of the cake and let soak in.
⑧Spread the Melted white chocolate over the cooled Cake.
【材料】18cm×8cm×H6cm パウンド型 1台分
卵(60g) 1個 (室温)
グラニュー糖 40g
薄力粉 30g

ベーキングパウダー 2g
レモンの皮 1個分

トッピング用:

(砂糖に水を加えてレンジ加熱してよく混ぜ、絞ったレモン汁を加えて混ぜておく)

【作り方】

①ボウルに卵を割り入れ、砂糖を加える。
②ハンドミキサーの高速で立て、生地がリボン上に落ちるようになるまで立てる。つまようじを刺すとしっかりと立ちます。
③ここに薄力粉、アーモンドプードル、ベーキングパウダーをふるい入れて粉っ気が無くなるまで混ぜる。
④レモンの皮を加えざっと混ぜたら、溶かしバターを加えて混ぜる。
溶かしバターはゴムベラで受けるようにして生地の全体に散らすように加えると一か所に沈みこまずに全体を混ぜやすくなる。
⑤型に生地を流し込み型をとんとんして空気を抜く。
⑥170℃に温めたオーブンで18分焼く。
⑦焼き上がったら、熱いうちに上と側面に刷毛で★のレモン汁を塗る。多めにしているので少し残ります。
⑧溶かしたホワイトチョコを上に塗り広げて出来上がり。
*コーテング用ホワイトチョコだとパリっと固まりラッピングしやすくなります。
*パウンドケーキとは少し違うのであまり日持ちしませんのでご注意ください。

Steamed Rice Cake (Gluten Free / Vegan)
Difficulty: Very Easy
Time: 20min
Number of servings: about 5 thick foil cupcake liners (about 3-inch-wide)
Ingredients:
100g (about 2/3 UScup) rice flour
2 tbsp. granulated sugar
1 tsp. baking powder
100ml (about 1/2 UScup) soy milk
2 tbsp. cooking oil
a few drops of vanilla extract
Directions:
1. Put rice flour, granulated sugar and baking powder in a bowl, and mix with a whisk.
2. Add soy milk, cooking oil and vanilla extract, and mix well.
3. Spoon the mixture into the thick foil cupcake liners up to 80% full. Drop them lightly on the counter to raise the air bubbles out of the batter.
4. Place them in a frying pan. Add hot water up to 1/3 of the height. Put on high heat until water boils. Turn the heat down to medium, cover with a lid wrapped in a wet cloth to absorb water and prevent the water from dripping onto the cakes, and cook for 10 minutes.
5. Remove the lid carefully. Place the cakes on a wire rack to cool.
*Keep the water boiling while steaming to make fluffy cakes.
*Depending on the shape of the cups you use, your cake may crack, but it is OK!
