配合圣诞节做的 Christmas Fruit Cake 真的这么容易吗?
之前和Olivia 老师 (FB : Cook With Olivia) 做了直播 教了大家做圣诞节蛋糕, 由于其中一个Christmas Fruit Cake我觉得不难也很好吃, 所以就尝试做了。 而且这一次我做好了以后, 就拿给我的好朋友们试试, 到底 Leslie蔡河立, Aenie王淑君, Josheen, Selina 和 Jet 对我第一次做的 Christmas Cake 评价如何呢? 请把影片看完。
我是参考Olivia老师的Recipe来做的, 我也自己加了一些Nuts 和 橙皮调味, 做出来的Christmas Fruit Cake 我还蛮满意的, 而且用 Thermomix TM 6 来制作, 真的事半功倍, 简单方便得多啦!
Olivia老师的 “圣诞水果蛋糕” 食谱分享 (FB : Cook With Olivia)
Christmas Fruit Cake
• 600g dried mixed fruits (black raisins, golden raisins, cranberries, currant, cherries)
• 280g self raising flour
• 1 tsp baking powder
• 620g milk
1. Soak dried fruits in milk for at least 4-6 hours
2. Pre heat oven to 150C. Line a 25 cm (9 inches) round cake tin with baking paper and set aside.
3. Place dried fruit and milk mixture, baking powder and flour into mixing bowl and mix 1 min Reverse Speed 3.
4. Pour into prepared tin and bake for 1 hour 10 minutes or until skewer comes out clean.

▫ 我係坊間多數食過既Smoothie主要係
加奶加冰令質感變得夠Creamy,而呢到既做法
有少少特別,首先會將成碗生果既份量用冷凍方式
將佢溫度降低成冰,形成半雪糕狀態。咁樣做入口
就有種好似食緊既沙冰感覺,但就唔會淨係有牛奶既
味道咁單一,因為用左大量火龍果肉做底,
所以食到好濃郁既果香。面頭上加左唔同既生果,
例如芒果、士多啤梨、薰衣草、橙皮、燕麥同埋
食用花,所以賣相精緻之餘味道仲相當開胃。

▫ 食左個咁有特色既甜輕食,當然要整返個
最Top既多士啦,呢個「牛油果多士」用左酸麵包
做底,旁邊再伴埋沙律菜,味道相當清新。其實出面
餐廳好多既牛油果大多數都係純粹將牛油果切片或者
就咁打成蓉,無乜層次感。但呢到整得幾有心機,
先將一半牛油果打成蓉再加入獨特配方調味,
另一半就切成片,再卷成一朵花既形狀。
隔離仲整左粒日本既糖心蛋,淋上柑橘既醋,
成個輕食效果獨特,睇得又食得。

▫ Staff將Burger既外皮烘到非常鬆脆,
係完全新鮮即叫即整,無果種硬過頭或者太淋既

既Russian Sauce,所以每啖肉質都有種酸酸甜甜,
好似食緊辣辣地千島醬咁。中間夾心仲鋪滿哂
新鮮紫椰菜、蘋果、青瓜絲,層次相當豐富。

▫ 而新出既呢個菠蘿特飲用左兩款唔同茶底,
餐廳堅持選用新鮮原材料方式保持味道,

將原本香味吊出黎。混合新鮮菠蘿、自家製班蘭糖水、
梳打水打造到成件事非常清新而且揉合返本身既
健康概念,呢杯一定要試!

Staff將成個完整既智利牛油果掏空哂d果肉出黎

一個小小既Mini Latte放係牛油果既空殼裡面。
不得不服了老闆既創意宇宙,將兩樣本來無關痛癢既
野結合而產生既咁有火花既化學作用,
學周星馳話齋「咁都比你諗到,直情係掂!」。

Beginning of Autumn solar term
The irritating hot summer is coming to an end. Beginning of Autumn solar term is the first solar term in autumn. However, heat and dampness will not clear at once. Therefore, the diet should be still focused on clearing heat and dispeling dampness. As you may have eaten too much cold/raw food during summer, your spleen and stomach may have vern affected. Let’s eat more rice, Chinese yam, sweet potato, hyacinth bean coat to strengthen the spleen and stomach. Eat ingredients that have whitening effects such as apple, tomato, grape, kiwi and strawberry to prevent freckles from forming.
To help your body adjust to autumn, you cab get up early to do morning exercise and jog which can help build up tolerance to cold. Although it is autumn right now, it may still rain sometimes. Remember to bring your umbrella out.

.Have a cup of warm rice water after waking up to strengthen spleen and stomach
.Have a bowl of coix seed dessert soup with mung beans to clear heat and dispel dampness

以前台湾の台北に旅行した際に食べた人気の台湾スイーツ「豆花(トウファ)」を作ってみました!台湾人の友人に屋台や専門店で食べることのできるおすすめのデザートだよと教えてもらったのを覚えています。作り方をご紹介します!
材料の豆乳やゼラチンなどはスーパーなどで手に入れることもできますし、カルディなど輸入食品を扱うお店にいくとより本格的に作ることができるのではないでしょうか。レシピでは生姜とはちみつでシロップを作っていますが、お好みで色々とトライしてみてください^ ^

【材料】
調理時間:15分(冷やすのに2時間程度)
材料:2人前
難易度:★☆☆
豆乳…400ml(調整、無調整お好みで)
砂糖…大さじ2
粉ゼラチン…5g
[A] はちみつ…大さじ3
[A] しょうがすりおろし…小さじ1/2
[A] 水…150ml
豆の甘煮(金時、黒豆使用)…適量
フルーツ缶(マンゴーやパイナップル)…適量
【作り方】
1, 小鉢などに、粉ゼラチン、水大さじ2(分量外)を入れ溶かす。
2, 鍋に豆乳、砂糖を入れ、中火にかけ溶かす。少しふつふつしたら火を止め、溶かしたゼラチンを加えて混ぜる。
3, バットなどに流し入れる。粗熱がとれたら冷蔵庫で冷やし固める。Aは合わせて冷蔵庫で冷やし、シロップをつくっておく。
4, スプーンで固まった豆花をすくい、器に盛る。豆の甘露煮、フルーツをのせ、シロップをかける。
5, お好みでタピオカ、白玉、落花生などをのせても。

【Ingredients】
Cooking time: 15 minutes (+3h for cooling)
Ingredients: 2 servings

Soy milk ... 400ml (adjusted, unadjusted if you like)
Sugar ... 2 tbsp
Flour gelatin… 5g
[A] honey ... 3 tbsp
[A] Ginger grated ... 1/2 tsp
[A] Water… 150ml
Canned bean (Kinoki, using black beans)… appropriate amount
Fruit cans (mango and pineapple)… appropriate amount
[How to make]
1. In a small bowl, add powdered gelatin and 2 tablespoons of water (not included) and dissolve.
2. Put the soymilk and sugar in a pot and dissolve over medium heat. Turn off the heat a little and add the melted gelatin and mix.
3, Pour into a bat. When rough heat is removed, cool in a refrigerator and harden. A is also chilled in the refrigerator to make syrup.
4. Scoop the beans that have been solidified with a spoon and place in a bowl. Boil the beans in honey, put the fruits and syrup.
5, Tapioca, shiratama, peanuts, etc. if you like.

Hi, everyone. :) Today we'll show you how to make one of France's most popular dessert: Cherry Clafoutis. It combines fresh cherries in a rich, dense custard. Easy to make and great served in warm.
Clafoutis is a rustic French dessert from Limousin, where is best known for its sweet black cherries. Traditional clafoutis is made with cherries that still keep the pits. Because the pits have some almond flavor, but it’s not easy to eat, so it’s why we use pitted cherries and add almond flour.
Cherry clafoutis is sort of a thin custard-like batter baked in a buttered dish. Of course, other fruits like peaches, plums, blueberries can also work well in this dessert. This recipe is easy to make at home for beginner, hope you guys like it. Enjoy. :)

French Cherry Clafoutis Recipe
☞ Yield: 2 servings, two of 4 inch (10cm) baking mold
✎ Ingredients
☞ For Marinate
cherries 12-14, about 180-200g, washed and pitted
powdered sugar 20g
lemon juice 10ml
☞ For Batter
eggs 2
powdered sugar 45g
almond flour 30g
all-purpose flour 20g
whole milk 50ml
vanilla extract 10g
1 pinch of salt
melted butter 5g
✎ Instructions
1. Add cherries into a bowl, then fill the water. Allow to soak for 5-10 mins.
2. Gently to wash cherries. Remove the stem. Then rinse and dry them with paper towels or tea towel.
3. Place a cherry in the cherry pitter, the top face up. Squeeze your hand and the pitting hammer will come down on the top of the cherry, pushing the pit out of the bottom of the cherry.
4. Marinate the pitted cherries with the powdered sugar and the lemon juice for 30 mins
5. In a large bowl, add eggs and salt. Then sift powdered sugar, almond flour and flour. Whisk together until combined.
6. Pour milk, melted butter and vanilla extract. Whisk until totally smooth.
7. Meanwhile, grease the baking mold with the softened butter, then sprinkle over the sugar.
8. Place marinated cherries around the base of the mold, then pour batter over the cherries.
9. Preheat the oven to 180°C, and bake for 35~40 minutes or until lightly browned.
10. Remove from oven to cool. The clafoutis will have puffed up quite a bit and will deflate while cooling.
11. Dust with powdered sugar. Serve.
