First time tasting these rich, dark shade cake-like fudgy brownies from The Brownie Xperiment @thebrowniexperiment . Was super excited to try these brownies because of the sea of postings I’ve seen on Blackout Brownies across IG. I first saw these dark-looking brownies from The Backyard Bakers’s page during the beginning of MCO and cried a little on the inside when the Geotag brought me to Singapore *Sigh* If you search for this popular bakery on Google today, oh wow - you will see a flood of search results consisting of the keyword “Brownie” :P
These so-called Blackout Brownies from both TBB & The Brownie Xperiment differ from the usual brownies you see in most bakeries outside because of their rounded corners (all thanks to the Brownie Pan) as well as the deep & dark hue. Not kidding but the stream of photos on IG has made me realise how such gorgeous looking brownies could actually exist. As a chocoholic, this was love at first sight! They say that the darker the hue of the cocoa, the more satisfying the chocolate flavor will be. This is very true indeed.
Pre-MCO, there weren’t many bakers here in KV baking these sort of decadent dark brownies, I am quite sure we have it here but I was not able to locate any good ones. And then there came The Brownie Xperiment, wohoo yaaassss! :( You may be wondering why are these brownies so dark-looking - Just so you know the dark hue & rich-looking chocolate in these brownies come mainly from the Black cocoa which is extra Dutch. They are extra dark, decadent, rich and super addictive! These brownies from The Brownie Xperiment had a more ‘moist’ and cakey texture- it was intensely fudge-like and the richness of the chocolate was just impeccable. Genuinely think these brownies from TBX are really good! They have a variety of flavours available as pictured above! It’s too difficult to describe every flavour I’ve had but the memorable ones we’ve had were the:
-French Sea Salt Dark Choc Brownies
-Lotus Biscoff Brownies
-Ovomaltine Brownies
-Kinako Mochi Brownies
-The Original Durian Brownies
-Chewy Salted Caramel Brownies
& the list goes on……
Honestly we are also in favour of the other flavours because it’s just so rich! 🥳

So I tried this healthy version of banana chocolate chip muffins last week (because I gained 2 kgs, thanks to all those decadent double choc muffins, Biscoff French toasts and choc mug cakes that I have been gorging on the past couple of months 😭), and they were surprisingly good!

Ok obviously, they’re not as sinful as Starbucks Banana Chocolate Chip Muffin (🤤) but these are not bad at all. At least it satisfies my craving. I don’t know about you, but I am a sweet tooth and it’s so freakin’ hard for me to eliminate desserts in my life, so the only way for me to “survive” is by making healthy version of desserts. Healthy pancakes, healthy waffles, healthy puddings, and now this - healthy muffins! Hehe. And honestly, I think healthy desserts are so much easierrr to make, so that’s a bonus!

This recipe (which I tweaked from glutenfreehomemaker.com) uses coconut flour, coconut oil and honey, instead of regular flour, butter and sugar. Healthy la, kan?
I have never baked or made anything using coconut flour so I was pretty excited to try this recipe coz I love anything coconutty. I’m sharing the recipe here so that I can refer it back, coz I’m definitely gonna make them again. My boys loved these!
BANANA CHOC CHIP MUFFINS

1/2 cup coconut flour
1/4 tsp salt
1/2 tsp baking soda
4 large eggs
1/4 cup coconut oil
1/4 cup honey
2 medium sized ripe bananas, mashed
1 tsp vanilla extract
1/4 cup + 2 tbsp dark choc chips
Instructions:
1. Preheat oven to 180°C and line your muffin tins (12 cups).
2. In a mixing bowl, whisk together the dry ingredients (except for dark choc chips).
3. In another bowl, beat the wet ingredients.
4. Add the wet mixture to the dry mixture and beat using a hand mixer on medium speed until combined. Then stir in 1/4 cup dark choc chips.
5. Spoon batter evenly into 12 muffin cups and sprinkle remaining dark choc chips on top.
6. Bake for 30 minutes or until toothpick inserted in the center comes out clean.
7. Let the muffins cool in the pan for 10 minutes, then transfer to wire rack to cool completely before serving.
(I served mine with @amazingraze.co Chocolate Coconut Hazelnut Butter by the way). #izafoodography
