8 両重大閘蟹. 通常現代大閘蟹的重量, 只會最多徘徊在 4~6 最多至 6.5 両之下. 7両以上, 除非你係食荷蘭蟹或日本蟹 etc (Long Story, I won't explain here, its a separate essay altogether.).. 個理由好簡單. 現在大閘蟹係 mass farmed production. 現年真正七至八両蟹通常要再養多一年以上, 但生意人會計住條數, 所以近年實屬罕有. 如果一間餐廳肯 Source, 就已經代表佢哋不惜成本. 記憶中呢邊呢隻八両蟹喺賣大概 $800. 今時今日其實呢隻蟹 Size 大部分地方搵得到已經係算你叻, 尤其是無人肯入貨了. 除非你係識人, 但都已經到千幾一隻. 但 Rosewood Hotel 為吸引客人又肯入貨, 即係你知我又知, 但係實質就係無乜人明. 因為客人絕對是賺咗有餘 🙊🙊 題外話, 蟹係會不停脫殼的, 有 Cycles Mottling .. 所以都算是幾複雜的學問

清蒸大閘蟹:
材料:
大閘蟹6隻
處理:
1. 清洗大閘蟹前,清水浸蟹10分鐘,吐出污物。
2. 開住水喉,牙刷刷乾淨蟹。
3. 紫蘇葉,清水沖洗乾淨,放煲底。
4. 蟹蓋向上放入煲,避免蟹膏流失。
烹調:
1. 大火煲滾1煲水。
2. 水滾後,放蟹入煲。
3. 大閘蟹
大隻蒸20分鐘
細隻蒸17分鐘
4. 預備點蟹調味汁:
a. 啡糖1茶匙
b. 鎮江醋3湯匙
c. 薑蓉1湯匙
攪勻。
5. 蟹蒸好,可享用。
Steam Chinese mitten crabs:
Ingredients:
Chinese mitten crabs 6 Nos.
Preparation:
1. Soak the crabs in tap water for 10 minutes before washing them.
2. Brush the crab with a toothbrush with running tap water.
3. Basil leaves, rinse with tap water. Put in the pot.
4. Face the crab shell up to preventing the run off of crab roe.
Steps:
1. Heat up a pot of water.
2. Put crabs into pot after water boils up.
3. Chinese mitten crabs
Big ones, steam for 20 minutes.
Small ones, steam for 17 minutes.
4. Prepare the dipping sauce:
a. Brown sugar 1 tsp
b. Zhenjiang vinegar 3 tbsp
c. Ginger paste 1 tbsp
Mix well.
5. Crabs have been steamed well. Serve.

Pokemon Osechi 2020. Do you remember I posted it last year? I like it very much so we ordered it this year too. Osechi is Japanese Traditional New Year's dish. I like the Pokeball shaped box. The first box contains Pikachu custard cream daifuku mochi, matcha Swiss roll, fake crab meat cheese roll, Japanese omelette, hamburg steak, Kurikinton mashed sweet potatoes with sweetened, meat roll, Namasu stripped daikon white radish and carrot pickled in sweetened vinegar, salmon roe, crab claws, candied peach, cherry blossom shaped daikon white radish.
The second box is Kamaboko boiled fish paste, Datemaki Japanese rolled omelette, burdock root seasoned with sesame sauce, shrimp, Kombumaki rolled kelp, candied kumquat, Tazukuri candied sardines, Kuromame sweet black bean, three color dango dumplings, daifuku mochi.
