Dalam episod 2 “Dapur Mat Salleh” hari ini, kami berdua akan masak "Shepherd’s Pie". Dari negara UK, nama Shepherd’s Pie berasal dari “shepherd” yang bermaksud penternak kambing. Pai seringkali menjadi hidangan makanan malam bersama keluarga kerana senang untuk memasak.
📋 BAHAN-BAHAN:
🥧Shepherd's Pie
- Mince Lamb 1kg
-Carrot (Diced) 300g
-Green Peas (Frozen) 200g
-Corn Oil 100ml
-Worcestershire Sauce 1 ½ tblspn
-Tomato Paste 4 tblspn
-Vegetable Stock 100 ml
-Thyme Fresh 1 tblspn
-Rosemary Fresh 1 tblspn
-Parsley Fresh Garnish
-Salt 2 tblspn
-Pepper (Ground) 2 tblspn
-Holland Onion (Diced) 300g
-Garlic (Chopped) 2tblspn
-Chilli flakes 1tblspn
🥔Mashed Potato
-Peeled Potato (Diced) 2kg
-Egg Yolk 1
-Salt 2 tblspn
-Parmesan Cheese 100g
-Butter 100g
-Parmesan Topping 30g
🍲 CARA-CARA MASAK:
🥧Shepherd's Pie Filling
1. Masukkan 100 ml corn oil ke dalam kuali dan panaskannya
2. Tumis 1 kg minced lamb, dan bila separuh masak, tambahkan onion dan garlic
3. Tumis sehingga naik bau
4. Masukkan tomato paste dan kacau
5. Kemudian, tambahkan carrot dan kacau sekali lagi
6. Tambahkan worcestershire sauce, pepper and chilli flakes mengikut rasa
7. Kemudian, masukkan 100 ml vegetable stock
8. Akhir sekali, tambahkan rosemarry and thymes
9. Masak sehingga semua separuh kering dan kemudian tambahkan salt, green peas, dan parsley
10. Kacau sehingga sebati
11. Masukkan bahan dari kuali ke dalam strainer untuk buang air vegetable stock yang berlebihan
12. Letakkan di tepi sehingga sejuk ke suhu bilik
🥔Mashed potato
1 . Didihkan potato sehingga lembut
2. Kemudian tambahkan salt, butter dan kacau hingga sebati
3. Tambakan egg yolk dan kacau hingga sebati, dan kemudian tambahkan parmesan cheese
4. Masukkan mashed potato ke dalam piping bag
📥Shepherd's Pie Assembly
1. Masukkan shepherd’s pie filling ke dalam ceramic square plate, dan ratakannya
2. Dengan menggunakan piping bag, pipe mashed potato di atas shepherd’s pie filling
2. Dengan menggunakan garfu, ratakan mashed potato
3. Taburkan parmesan cheese
4. Masukkan sheperd’s pie ke dalam oven pada suhu 180c selama 20 minutes
5. Selepas keluar dari oven, hiaskan dengan parsley dan hidangkan panas

Australian Shepherd's Pie
Ingredients:
1 kg minced lamb
¼ cup olive oil
1 cup carrots }
1 cup mushrooms ) diced
1 cup celery }
2 onions )
1 cup frozen green peas
1 cup frozen corn
4 cloves garlic- chopped
2 Tbs Dijon mustard
2 Tbs Worcestershire sauce
½ cup chicken stock
Salt & black pepper to taste
¼ tsp allspice
2 Tbs cornflour
1.5 kg potatoes- peeled, diced & boiled
¼ cup sour cream
40 g grated cheddar cheese
40 gm grated parmesan cheese
¼ cup tomato paste
Method:
1. Mash potatoes with sour cream, cheddar & parmesan cheeses, salt and pepper.
2. Add olive oil to a large frying pan and heat. Cook lamb, onions, mushrooms and garlic until no pink remains in lamb. Add in tomato paste, carrots, peas, celery, corn, Dijon mustard, Worcestershire sauce, allspice, salt, pepper and cook until vegetables are softened.
3. Mix cornstarch with stock and add to the lamb and vegetables. Mix well and cook until gravy has thickened.
3. Spread the mixture into a casserole dish. Pipe mashed potatoes on top and dot with a little butter knobs. Bake at 180°C for 40 minutes and until the potato topping is golden

In Indonesia, the Murtabak is one of the most popular street foods and is known as "martabak". There are two Indonesian versions: a sweet one, and a savory one with egg and meat.
The common ingredients of Indonesian egg martabak, besides the dough, is seasoned ground meat (beef, chicken or mutton (lamb)), sliced green onions, some herbs (optional), beaten eggs, salt and potatoes. Some street vendors mix the ground beef with curry seasoning. In Indonesia, the common spices to make the seasoned ground meat are shallots, garlic, ginger, cumin, coriander, turmeric, some salt and sometimes a little bit of monosodium glutamate. All the spices are ground or minced and stir-fried altogether. Some martabak makers add extra ingredients and other varieties to make their martabak unique, but they all share the same main dough. To sauté martabak, the chef uses a very large flat frying pan or iron griddle. Usually they use vegetable oil to sauté, but it is not uncommon to use ghee or butter too.
Before serving, martabak usually is cut into portions. Savoury versions of martabak in Indonesia, Malaysia and Singapore usually is served with pickled condiments consisting of diced cucumber, sliced carrot, shallots and sliced chillies in sweetened vinegar. In Malaysia, Singapore and some areas in Sumatra, martabak is served with kari (curry) gravy. In Palembang, another variety to serve martabak is with curry (usually diced potatoes in beef curry) and topped with chillies in sweet-sour soy sauce.
