🍫🍫 CÁCH LÀM DOUBLE CHOCOLATE CAKE 🍫🍫
Món siêu hot ngoài hàng đợt gần đây ạ ;;)
Vì làm cho nhà ăn nên mỗi thành phần trong bánh mình đều "đầu tư" công thức yêu thích nhất, bao gồm: Bạt bánh socola tươi siêu mềm; Kem phomai socola trắng ngậy béo, ganache từ socola đen và kem tươi.
Bánh ngon, kem ngon, vừa mềm ẩm, vừa ngậy béo vừa siêu đậm vị socola. Từng thành phần đều siêu ngon nên gộp lại với nhau thì 💯 💯 điểm 😁😁
Cách làm như sau ạ (lượng nguyên liệu đủ cho khoảng 6 cốc dung tích khoảng 150ml):
🍫🍫 BẠT BÁNH CHOCOLATE:

🍫🍫 SỐT SOCOLA PHỦ MẶT BÁNH (GANACHE)
60 gram socola nguyên chất (55 - 65% cacao), băm nhỏ
80 - 90 gram kem tươi (whipping)
*Càng nhiều kem tươi sốt sẽ càng lỏng
🍰 Cách làm:
1. Đun kem tươi trên lửa vừa - nhỏ, vừa đun vừa khuấy đều tới khi thấy có nhiều hơi nóng bốc lên từ nồi thì bắc xuống. KHÔNG đun sôi.
2. Đổ kem tươi nóng vào bát, để khoảng 10 giây rồi khuấy đều cho socola tan hoàn toàn. Để phần ganache này nguội ở nhiệt độ phòng.
🍫🍫 KEM PHOMAI SOCOLA TRẮNG:
1 lòng đỏ trứng gà
5 gram đường xay
110 gram sữa tươi không đường
80 gram phomai kem (cream cheese), để mềm ở nhiệt độ phòng
60 gram socola trắng
2 gram gelatin dạng lá
1/2 thìa cafe chiết xuất vanilla
200 gram whipping cream
🍰 Cách làm
1. Đánh lòng đỏ trứng gà với đường tới khi lòng đỏ bông nhẹ và chuyển màu vàng nhạt.
2. Cho từ từ sữa tươi vào, vừa cho vừa đánh đều tới khi trứng và sữa hòa quyện, lọc hỗn hợp qua rây và cho vào nồi. Ngâm gelatin vào nước đá lạnh cho gelatin nở mềm.
3. Khuấy đều kem trứng trên lửa nhỏ tới khi hỗn hợp sệt lại. Thử kem đạt bằng cách nhấc phới lên, dùng ngón tay quẹt một đường trên mặt phới, nếu như vệt này giữ nguyên, kem không bị lem vào thì kem đã đạt (xem tại hình minh họa).
4. Cho toàn bộ creamcheese (đã mềm) vào nồi, tiếp tục khuấy nhanh tay trên lửa nhỏ nhất tới khi creamcheese tan nhuyễn mịn.
5. Bắc nồi xuống, cho socola trắng vào nồi, khuấy nhanh tay tới khi socola tan hết, sau đó cho chiết xuất vani vào khuấy đều.
6. Vắt kiệt nước lá gelatin, cho vào nồi kem nóng khuấy nhanh tay tới khi gelatin tan hoàn toàn.
7. Lọc hỗn hợp qua rây cho mịn mượt. Dán nilon bọc thực phẩm sát mặt kem, để kem nguội hoàn toàn ở nhiệt độ phòng.
8. Đánh kem tươi ở tốc độ vừa - cao tới khi kem tươi bông mềm (nhấc que đánh có chóp kéo theo nhưng ngoặt xuống).
9. Dùng phới lồng khuấy phần kem trứng (đã nguội) cho kem mịn mượt. Chia kem thành 3 phần, cho từng phần vào âu kem tươi, nhẹ nhàng trộn đều bằng kĩ thuật fold rồi mới cho phần kem tiếp theo.
🍫🍫 HOÀN THIỆN:
1. Cắt bánh thành các miếng nhỏ kích thước vừa với khuôn, độ dày khoảng 1 - 1,5cm tùy thích.
2. Xếp 1 miếng bánh, bơm kem đầy khoảng 2/3 hộp, tiếp tục đặt miếng bánh thứ 2 lên, ấn nhẹ cho bánh phẳng và dính vào kem.
3. Múc ganache dàn đều lên mặt bánh. Để bánh vào tủ lạnh khoảng 2 - 3 giờ cho phần kem lạnh và đông lại. Bảo quản ở ngăn mát tủ lạnh khoảng 3 - 4 ngày.

Pastu masukkan bahan yg di blender tadi kacau sampai sebati, masukkan dalam loyang 8x8

Tutup adunan loyang guna plastik supaya air tidak menitis kat atas kek ye
Sebelom tu panaskan air dahulu ye
Kukus 1jam sehingga masak
Cucuk pakai lidi, kalau da tak lekat dah masak..

130 gm gula kastor
3 gm serbuk kopi + 120 ml air (larutan kopi)
Bahan-bahan (Coklat Ganache)
250 gm coklat susu coin
250 gm krim putar
2 sb mentega
Bahan-bahan (Krim Keju)
200 gm krim keju
1 sb esen vanila
100 ml krim putar
1/2 cwn gula aising
Cara memasak
1. Kek Coklat: Gunakan mesin pengadun, masukkan telur, gula kastor bersama-sama mentega cair sehingga sebati.
2. Kemudian, masukkan ovalet dan pukul sehingga campuran kelihatan sedikit kembang.
3. Masukkan esen vanila, larutan kopi ke dalam adunan.
4. Ayak tepung gandum, serbuk koko, soda bikarbonat, dan serbuk penaik. Kacau sebati dengan menggunakan teknik kaup balik.
5. Tuangkan adunan ke dalam acuan dan kukus sekurang-kurangnya 30-45 minit.
6. Keluarkan kek dan sejukkan seketika.

Cara penyediaan
1. Potong kek coklat kepada dua bahagian dan letakkan kek ke dalam bekas.
2. Tuangkan coklat ganache dan paipkan krim keju mengikut citarasa masing-masing.
3. Kemudian, taburkan cip coklat sebagai penambah rasa kepada kek.

300g Oreo hancur
4 sb mentega
Nota:
Biskut Oreo juga boleh digantikan kepada biskut jenama lain.
Jangan masukkan biskut bersaiz besar, perlu dihancurkan terlebih dulu.
Bahan-Bahan Lapisan Keju
250gm coklat gelap
500gm krim keju
2/3 cwn gula aising
1 sk esen vanila
2 sb susu pekat
1 1/2 sb gelatin
50ml air
250ml krim putar
Nota: Gelatin adalah bahan pilihan. Jika tak diletakkan pun tidak mengapa.
Bahan-Bahan Coklat Ganache
150ml krim putar
150gm coklat gelap
1/2 sb mentega
Cara memasak
1. Untuk lapisan bawah, cairkan mentega terlebih dahulu.
2. Kemudian, campurkan Oreo hancur dengan mentega yang telah dicairkan dan gaulkan sebati.
3. Tuangkan adunan ke dalam loyang dan padatkannya.
4. Sejukkan dahulu lapisan bawah di dalam peti sejuk seketika.
5. Untuk lapisan keju, cairkan coklat gelap terlebih dahulu menggunakan kaedah double boil.

300gm crushed Oreo
4 tbsp of butter
Note:
Cookies can also be replaced with other brands.

250gm dark chocolate
500gm cream cheese
2/3 cup of icing sugar
1 tsp of vanilla essence
2 tbsp of condensed milk
1 1/2 tbsp of gelatin
50ml of water
250ml of whipping cream
Chocolate Ganache Ingredients
150ml whipping cream
150gm dark chocolate
1/2 tbsp of butter
Cooking methods
1. For crust layer, melt the butter first.
2. Then, mix crushed Oreo with melted butter and mix it well
3. Put the mixture into mold and press it evenly.
4. Chilled the crust layer in refrigerator for a while.
5. For cheese layer, melt dark chocolate first using double boiler technique.
6. Mix gelatin with water and melt it using double boiler technique or using microwave.
7. Beat cream cheese using hand mixer until it turns fluffy.
8. Add icing sugar and vanilla essence into mixing bowl and mix well.
9. And then add melted chocolate into cheese mixture and mix it thoroughly.
10. Add condensed milk into cheese mixture.
11. Pour gelatin mixture into cheese mixture and mix it.
12. Beat whipping cream using hand mixer until fluffy and mix it with cheese mixture by using fold in technique.
13. Next, pour the mixture into mold and chilled it in the refrigerator.
14. For chocolate Ganache, heat whipping cream first.
15. Then, pour hot whipping cream into the bowl filled with dark chocolate and mix it thoroughly.
16. Add butter into the chocolate mixture and mix it.
17. Pour chocolate Ganache into mold and let it chilled in the refrigerator until it set.
18. Once it is done, chocolate cheesecake is ready to be served.

Bahan-bahan Chocolate Ganache & Hiasan
70 gm whipping cream (dairy)

Badam (dipanggang)
Cara memasak
1. Cairkan bahan mentega dan coklat masakan dengan kaedah double boil,
kacau rata dan letak tepi sementara.
2. Dalam sebuah mangkuk, masukkan kesemua telur, gula kastor, esen vanila dan garam. Pukul sebati. Kemudian campurkan adunan ini dengan campuran coklat dan mentega tadi. Kacau rata sehingga semua campuran sebati.
3. Ayak tepung, serbuk penaik dan koko ke dalam adunan sedikit demi sedikit. Kacau rata kesemua bahan dengan cermat sehingga sebati.
4. Campurkan coklat cip dan kacau rata.
5. Sediakan loyang bersaiz 7 inci yang telah disapukan mentega dan letakkan kertas minyak. Tuang adunan kek kedalam loyang dengan kemas dan berhati hati.
6. Panaskan oven pada suhu 160°c selama 15 minit. Bakar kek pada suhu 160°C selama 30 minit.
7. Untuk chocolate ganache, dengan kaedah double boil, didihkan whipping cream dan masukkan coklat masakan dan mentega, kacau sehingga sebati.
8. Taburkan badam panggang dan cip coklat sebagai hiasan. Siap untuk dihidangkan.

Chocolate Ganache & Topping Ingredients
70 gm whipping cream (dairy)
70 gm cooking chocolate
Almond (roasted)
Cooking methods
1. By using double boil technique, melt the butter and cooking chocolate. Put aside.
2. In a bowl, add egg, castor sugar, essence vanilla and salt. Whisk by hand until smooth. Then, combine the ingredients with melted butter and chocolate. Whisk until the batter mix well and smooth.
3. Sift the flour, cocoa powder and baking powder carefully, add into the cake batter little by little and stir carefully by using rubber spatula until all ingredients well combined.
4. Add the chocolate chip and fold carefully.
5. Prepare a 7-inch square baking tray and grease with the butter and put the parchment paper.
6. Preheat oven at 160°C for 15 minutes. Next, pour the brownies batter carefully and bake at 160°C for 30 minutes.
7. For the chocolate ganache, by using double boil method, simmer the whipping cream and then, add the cooking chocolate and butter and whisk until smooth.
8. Decorate the brownies with the chocolate ganache and roasted almond depends on your creativity. Brownies ready to serve, bonne appetite.
