Lai Yee's Kitchen - Mel's Nasi Kerabu Ikan :
I love Nasi Kerabu for the refreshing green and all those salted flavours together. It is basically a rice salad. It is quite a messy dish but super appetizing. It comes from Kelantan. Basically, what you're eating is a very healthy herb and rice meal with the addition of grilled chicken or fish. Nasi Kerabu is made up of a few components, each prepared separately and assembled on a plate right before serving. There is the blue rice, a fried fish sambal, a herb salad and assorted accompaniments such as salted egg, fish crackers and winged bean. The fish sambal is made up of deep fried cencaru fish that has been deboned and flaked, crispy Geragau shrimp and toasty grated coconut, all bound together by a spicy sambal mix.
Ingredients for 10 pax:
* Kerabu Rice:
. 4 cups rice
. 18g dried blue pea flower
. 2.5 litres hot water
. 3 stalk lemongrass
. 5 kaffir leaves
. 50g crushed ginger
*Cencaru Fish Sambal :
. 2 cencaru fish
. Oil for deep fry
*Rempah:
. 3 tbsp oil
. 1 big onion
. 1 whole garlic
. 1 tbsp toasted belacan
. 1 lemongrass
. 100g toasted grated coconut (roughly pounded)
. 8 tbsp dried fried crispy Geragau shrimp (roughly pounded)
. 1tbsp sugar
. 1 tsp salt
* Sambal:
. 10 presoaked dried chilies
. 1 whole garlic
. 1 whole Onion
. 2 tbsp Belacan
. 3-5 tbsp sugar
. oil
. 1cup Tamarind juice
* Accompaniments:
. 5 cups fresh bean sprouts
. 6 stalks thinly sliced laksa leaves
. 2 stalks thinly sliced torch ginger flower
. 5 stalks thinly sliced lemongrass
. 2 finely sliced turmeric leaves
. 10 pcs four angle beans (thinly sliced)
. 1 shredded cucumber
. 5 Salted Duck Egg (I made my own, for recipe, check my ICTV video)
. Some Fish crackers
. 2 tbsp Sambal belacan
. sugar and salt to taste
You can basically take any herbs from your own garden to add on to create your own version. Once you are ready to get started on your plate of Nasi Kerabu, mix everything together so you can taste the layers of flavours and contrasting textures in each bite. Sedap!!

Lai Yee's Kitchen - Rice Paper Chee Cheong Fun and rice paper crackers
Too much work to make your own Chee Cheong Fun at home or miss having Dim Sum? Here is a great tip I have learnt from @jeanabeanstudio today. It is fun and easy to make. Good try! Cheong fun (肠粉) is on the menu of every Dim Sum restaurant. Cheong fun has a light and soft texture, non-oily, and is served hot right from the steamer. You only need simple ingredients to make it, primarily a batter of rice flour and some shrimp and char siu, or served right with a savory sauce consisting of premier-grade soy sauce and some sugar. BUT if you do not have the right steamer or patience, you won't even bother to make it yourself. Try this Jean's way. Damn easy and works well for me. JUST use those Vietnamese's rice paper for spring rolls! I have even gone a little further by showing you what else you can use these rice papers besides making into spring rolls or cheong fun. My fillings are more like the Ipoh's style cheong fun. Ok Jom!
Ingredients for filling:
. 2 carrots, shredded
. 100g minced ginger
. 1 whole garlic, finely chopped
. 500g minced chicken
. 2 tbsp oyster sauce
. 1 tbsp soy sauce
. 2 tsp white pepper
. 1 tsp sesame oil
. Oil
For Cheong Fun:
. The cooked filling
. Rice papers
. 2 eggs, beaten
. 1 cup Chopped coriander or spring onions
. A bowl of hot water to soften the rice papers
. Oil for rolling the cheong fun
. Water
For Rice Paper Crackers :
. The cooked filling
. Oil for deep frying (must be super hot to achieve the best result)
. Rice papers
For Sweet Sauce :
. 5 tbsp Hoisin sauce
. 1 tbsp soy sauce
. 1 tbsp oyster sauce
. 1 tbsp minced garlic
. 1/2 tbsp minced ginger
. 1 tsp white pepper
. 1 tsp sesame oil
. 1/2 cup water
For Garnishing :
. Chopped Spring onions or coriander
. Fried Shallots
. Toasted sesame (it is good to have)
One filling, two ways of serving it. Fast, easy and appetizing meal for a weekend or a lazy day! Make sure you have really nice spicy sauce to drizzle over the crackers and cheong fun. I had my Mel's Kidnap Me Sauce on standby. I am happy! Thanks Jean for sharing, it works!

Resepi Ayam Sambal Hijau Balado
Bahan-bahan
1/2 bahagian ayam
1 sk serbuk kunyit
7-8 tangkai cili hijau
3 biji tomato (dipotong)
1 inci halia
1 biji bawang merah
3 ulas bawang putih
3 tangkai serai (diketuk)
1 inci belacan
gula (secukup rasa)
garam (secukup rasa)
12 tangkai cili padi
2 cwn air
2 sb sos tiram
5 sb minyak masak
Cara memasak
1. Gaul rata ayam bersama serbuk kunyit dan garam. Gorengkan ayam sehingga keperang-perangan.
2. Kisar kasar cili hijau, bawang merah, halia, bawang putih, belacan, cili padi, tomato dan secawan air.
3. Masukkan minyak, tumiskan bahan kisar dan masukkan serai yang telah diketuk ke dalam kuali.
4. Masak sehingga naik bau dan pecah minyak.
5. Kemudian, masukkan sos tiram dan kacau seketika.
6. Perasakan dengan garam dan gula secukup rasa.
7. Masukkan tomato dan masukkan ayam yang telah digoreng tadi.
8. Ayam Sambal Hijau Balado siap untuk dihidangkan.

Spicy Green Chili Fried Chicken Recipe, Never Enough Perfect With Hot Rice
Just by looking at the green sambal, you can imagine how spicy it is, right? It's super delicious when eat with hot rice. For those who like spicy food, you must try this k ??
Spicy Green Chili Fried Chicken Recipe
Ingredients
1/2 portion chicken
1 tsp turmeric powder
7-8 stalk of green chilies
3 whole tomatoes (cut)
1-inch ginger
1 whole red onion
3 cloves garlic
3 stalks lemongrass (bruised)
1-inch shrimp paste
sugar (to taste)
salt (to taste)
12 bird's eye chili
2 cups of water
2 tbsp of oyster sauce
5 tbsp of cooking oil
Cooking methods
1. Mix well chicken with turmeric powder and salt. Next, fry the chicken until golden brown.
2. Coarsely blend green chilies, red onion, ginger, garlic, shrimp paste, bird's eye chili, tomato and water.
3. Add in oil, sauteed ground ingredients and bruised lemongrass in pan.
4. Cook until fragrant and the oils break.
5. After that, add in oyster sauce and mix for while.
6. Season with salt and sugar to taste.
7. Add in tomato and the fried chicken.
8. Green Chili Fried Chicken is ready to be served.
