大家記得今天是什麽日子嗎?
今天是臘月初八。臘月是農曆的最後一個月,即農曆的十二月。
農曆十二月初八,是佛陀成道紀念日,佛教稱為「法寶節」,俗稱「臘八節」。在這一天,一般寺廟都會煮臘八粥供眾。臘八粥又稱「佛粥」。
「臘八粥」所用的材料,有花生、油豆腐、蓮子、红蘿白、芋頭、白米、糯米、菜心、油條等,將所有的食材分別滷好處理好才放在一起煮,煮到濃稠。
過去,一般人認為吃臘八粥可以消災保平安,增長智慧,所以每年到了臘月初八這一天早上,都會到寺廟裡吃一碗臘八粥。
到如今,很多人也會在這一天在家自己動手煮臘八粥,與家人或親友分享。臘八粥不但軟綿美味,所用的材料更是天然健康、營養豐富的食品,一直流傳下來,已成為傳統的寒冬美食。

Today is the eighth day of the twelfth lunar month, and is the anniversary of the Buddha's enlightenment. It’s also called the "Laba Festival."
On this day, most temples cook this healthy and delicious congee to share with the public to commemorate such a special day. Laba congee is also called “The Buddha’s Congee.”
The ingredients used in "Laba Congee" include peanuts, fried tofu, lotus seeds, carrots, taro, rice, glutinous rice, choy sum, fried dough sticks, etc. All the ingredients are cooked separately before bringing together and cook until the congee soft and thicken.

Miss Lee 李好純 is probably the first vegetarian restaurant we introduce (to be exact - visit 🤭).
What I like Miss Lee the most is the Chinese elements they added to each vegetarian specialties. From the name, the ingredient choice to the flavour.
My favourite must be the Chinese Yam Fries. That is my first time having this very Chinese ingredient, and I didn’t expect that it could be such a good choice for fries 🤤 Highly recommended! The vegan mayonnaise sauce by Miss Lee was just as good as the non-vegan ones, but definitely a much healthier option!
Every items in the afternoon tea set is distinct and satisfying (except that I am not a fan of beetroot 😅). The “congee”is so good. Love the texture and very surprised when I found that it is actually mashed potato. Remember to serve immediately.

In case you haven't noticed, we love seafood but we gotta take it in moderation since none of us are getting any younger :p. This seafood porridge is so easy to cook and so yummy. Literally just dump everything in the rice cooker and voila! The seafood you use in your porridge doesn't need to be exactly like ours. As long as they're seafood, they're good to be used to put this dish together.

Ingredients:
Serves 6 pax
Making the porridge base:
=====
- 9 cups of water
- 30g of dried scallops soaked in 1 cup of hot water - shred scallops when soft and pour all the contents including water into the rice cooker
- 1/4 cup of glutinous rice
- 3/4 cup of Jasmine rice
Making meatballs
====
- 100g of ready made fish paste
- 125g of minced pork or chicken
- 1/4 teaspoon of ssalt
- 1.5 teaspoons of cornflour
- 1 teaspoon of flounder or sole fish powder (can be replaced w/ 0.5 tsp of salt)
- A few dashes of white pepper
Other ingredients:

- 250g of prawns (marinated with a pinch of salt & sugar)
- 100ml of cooking oil (can use peanut or vegetable oil)
- 400 - 450g of crab
- 1.5 teaspoons of salt

Food/drink featured in the video:
Penjaram: Also known as pinjaram, penyaram or kuih UFO, is a traditional kuih for the Bajau as well for the Bruneian Malay people in Brunei and in the state of Sabah in Malaysia.
Tapai: Tapai and its variants are usually consumed as it is; as a sweet mildly-alcoholic snacks, to accompany tea in the afternoon. The sweet fermented tapai however, are often used as the ingredient in a recipe of certain dishes.
Kou Chung: Also known as Bak Chang or Zongzi is a traditional Chinese food made of glutinous rice stuffed with different fillings and wrapped in bamboo, reed, or other large flat leaves. They are cooked by steaming or boiling.
Cakoi: Also known as Chinese fried churros, Cakoi, Kueh or Kuay, are lightly salted and made so they can be torn lengthwise in two. Cakoi are normally eaten at breakfast as an accompaniment for rice congee, soy milk or regular milk blended with sugar.
Tamparuli Mee: Tamparuli Fried Noodle is freshly handmade so the texture is more “springy” and it has stronger egg aroma. When in Tamparuli., you have to try this dish!

This recipe is supposedly close to Hong Kong style congee which has a thick and sticky texture to the porridge. While some might find century eggs unbearable to eat or even smell, many of us Chinese love love love century eggs. We can eat them on its own with some pickled ginger. If you are not a fan of century eggs, you can always replace the non-congee based ingredients with other ingredients such as seafood, chicken or fish. The basics of making the congee remains the same.

4 whole century eggs - diced
400g lean pork (can replace with chicken)
Marinate for lean pork:
2 tablespoons of glutinous rice flour
2 capful of rice wine (to remove the porky smell of the pork)
1 teaspoon of sesame oil
