衣の粉は片栗粉だけでもいいですし、地瓜粉(さつまいも粉…ですが実際はキャッサバ粉)を使うとよりザクッと仕上がります。地瓜粉がなければ白玉粉とかコーンスターチでも代用可
五香粉は台湾風たる所以ですが癖もあって人を選ぶので、普通の唐揚げになりますが無しでもいいですしカレー粉とかでもOK
【材料】
・鶏むね肉 2枚
下味
・酒 大さじ1
・醤油 大さじ1
・砂糖 大さじ1
・にんにく 1かけ
・五香粉 小さじ1/4~1/2
・白胡椒 適量
・全卵 1個
衣(片栗粉のみでもOK)
・片栗粉 40g
・地瓜粉 14g
・薄力粉 13g
・揚げ油(米油がおすすめ)
【準備】
・にんにくをすりおろす
・衣の粉類を混ぜる
【作り方】
1. 鶏むね肉を開くか食べやすい大きさにカットし、めん棒等で叩いてのばす
2. 下味の調味料類を揉み込んで少し放置した後、溶いた卵も揉み込んで他を用意する間置いておく
3. 170℃の揚げ油を用意し、揚げる直前に衣をつけてカリッとなりギリギリ火が通るまで揚げて出来上がり

[Ingredients]
・2 chicken breasts
seasoning
・1 tbsp sake
・1 tbsp soy sauce
・1 tbsp sugar
・1 clove of garlic
・1/4 to 1/2 teaspoon of five-spice powder
・White pepper to taste
・1 whole egg
Coat (You can use just potato starch.)
・40 g katakuriko
・14 g jiko (Japanese pumpkin powder)
・13 g cake flour
・Fried oil (I recommend rice oil.)
[Preparation]
・Grate the garlic.
・Mix the flour of the coating.
[How to make]
1. Open the chicken breast or cut it to a size that is easy to eat then pound it with a rolling pin, etc to stretch it.
2. Rub in the seasonings and leave it for a bit. Rub in the beaten egg and leave it while the others are prepared.
3.Prepare frying oil at 170 degrees. Just before frying, coat with batter and fry until crispy and barely cooked.

鶏むね肉のさっぱりねぎダレ唐揚げ
2人分
材料:
■唐揚げ
鶏むね肉 1枚
A塩 小さじ1
Aおろししょうが 1片分
Aおろしにんにく 1片分
A鶏がらスープの素 小さじ1
A酒 大さじ1/2
溶き卵 1個分
米粉 20g
片栗粉 40g
サラダ油 適量
■ねぎダレ
長ねぎ 1本
塩 小さじ1/2
コショウ 適量
レモン汁 1/2個分
オリーブオイル 大さじ1
作り方:
1.鶏むね肉は余分な皮と脂を取り除き、一口大に切る。袋に入れてAをもみ込み30分以上置く。
2.米粉と片栗粉を混ぜ合わせる。
3.(1)を袋から取り出し、溶き卵にくぐらせてから(2)の粉をしっかりとつける。
4.フライパンに1センチ程油を入れ、180℃に熱し(3)をじっくり揚げる。
5.ねぎダレを作る。長ねぎの白い部分をみじん切りにして器に入れる。
6.塩、コショウをふり、レモン汁を入れ、最後にオリーブオイルを入れて和える。
7. 熱々の唐揚げにねぎダレを添えたら、完成!

◆Fried chicken
1 chicken breast
1 teaspoon salt

40g potato starch
Some vegetable oil
◆Leek sauce
1 Japanese leek
1/2 teaspoon salt

1/2 lemon juice
1 tablespoon olive oil
PREPARATION
1. Remove skin and excess fat from the chicken breast and cut into bite-size pieces. Mix salt, grated ginger & garlic, chicken stock powder, and sake in a plastic bag. Put chicken pieces in the bag and marinate for 30 minutes.
2. Combine rice flour and potato starch.
3. Dip chicken pieces in beaten egg, then coat with rice flour mixture (2).
4. Heat 1cm of oil to 180°C (356°F) in a pan, place flour coated chicken. Deep-fry until golden.
5. To make leek sauce, mince the white part of Japanese leek.
6. Season with salt n pepper. Add lemon juice and olive oil.
7. Serve the fried chicken with leek sauce.
8.Enjoy!

2 cups of uncooked rice
2 cups of chicken stock
150g of prawns
3 small eggs
2 tablespoons of light soy sauce
A few dashes of white pepper
1 teaspoon of salt

If you don't have a rice cup, 1 rice cup has 142ml of water and 1 rice cup has 150g of rice.
If you don't have chicken stock on hand, use 1 chicken bouillon cube with 284ml (2 rice cups) of water.
If you are using concentrated chicken stock, use 2 teaspoons of it with 284ml (2 rice cups) of water.
