九月美國節日Labor day，這三天Long weekend和好友家庭一起帶孩子們買秋裝、選飾品、吃美食，到了百貨公司，這三位小孩像被關很久的籠中鳥，自己選衣服、項鍊、耳環，逛了lego各自在想要的玩具前跟Santa make a wish，還約定下次還要一起go shopping

晚餐訂了Cheesecake Factory，好久沒在餐廳用餐，我們特地選戶外座位安全點，北加州的現在已是秋天，晚上頗涼，冷冷的天氣坐在火爐旁，吃著熱騰騰的炸海鮮和義大利麵、牛排，餐後再來塊草莓起司蛋糕～好享受這片刻的悠閒時光啊！

13.08.2021, My common birthday with 🐷🐷🐷🐷🐷 🎂again! The cake was tailored made by my former colleagues and boss. It was so unique and I didn’t dare to make a cut neither to taste it. And it’s been keeping in my fridge until now.

But every single time I opened the fridge door, this triggered my memory working in this restaurant. I paid several lum sumps for the restaurant’ Grand Opening ceremony but the restaurant was just shut down the week after. And I didn’t get my salary for 3 months which I deserved for and the payments from my own pocket. Labor Department been reported, but the compensation was not a fair deal at all. Therefore, I lost almost $150-200 thousands because this incident, this was all my savings already. Wish Tomorrow Shall Be A Better Day 💪🏻

我指導教授是遠渡重洋來到台灣教書的義大利人，這幾週收到他要正式回國，開心跟感傷的情緒並存～
說再見是種記憶重組的過程，回想起來第一次看到老師，因為很會打扮，還以為是來台灣交換學生的新博班學長，結果在隔天傍晚上課時，郭老師介紹他是新教授，最令人永遠想不到的事，就在那天居然就正式成為他前兩位指導學生了🤣🤣
因為他大我幾歲，所以大多時比較像大哥哥跟朋友，但在指導論文的時候，又會恢復嚴格的老師～在他的指導下～再辛苦的寫論文過程中～有清晰的概念跟框架～能順利寫完畢業～很感謝GC指導～
畢業後我很順利地開始在某些學校教書，很開心的跟教授分享這份消息，他也不吝提供我很多教書方法跟鼓勵，是很用心的教授，他提醒我說：當老師永遠要先檢討自己，從自己教學技巧做改善，而不是怪學生學習狀況不好～真是醍醐灌頂～讓我低調更虛心學習要做個持續進步的講師
這兩年在您身上學習到不少文化、飲食喜好、還有人文風情，希望在未來某一天也可以去義大利拜訪您，也想去吃您所推薦過所有的披薩、巧克力、聖誕節蛋糕、義大利麵、起司、水果、啤酒、紅酒、濃縮咖啡，還有在當地看您熱愛的足球賽～～～

My advisor is an Italian who has traveled across the oceans to teach in Taiwan. In the past few weeks, I received news that he would officially return to Italy. On the one hand, I was very happy for him, and on the other hand, I feel also sentimental~
Saying goodbye is a process of memory reorganization. In retrospect, I saw the teacher for the first time in University of Taptei . Because he looks was very chic, I thought it was a new PHD student who came to Taiwan to exchange. Then in the evening class on the next day, our prof. Kuo introduced him as a newcomer. Professor, the most unexpected thing is probably that, after I knew that he was a teacher who had just come to Taiwan that day, I actually became his first two graduate student!
Because he is a few years older than me, he looks like a big brother and friends most of the time, but when he is instructing the thesis, he will become a strict teacher again. Thank you very much for all guidance. No matter how hard writing the thesis it is. The clearer and clearer concepts and frameworks ~ let me finish writing successfully ~ ~ ~ I really appreciate the guidance from you GC ~
After graduating, I started teaching in certain schools smoothly and I was very happy to share this news with the professor. He did not hesitate to provide me with many teaching methods and encouragement. He is a very diligent professor. He reminded me: When a teacher is always first Review yourself and make improvements from your own teaching skills, instead of blaming the students for their poor learning status. It’s really an initiation. To be humble and more modest mind to be a lecturer of continuous improvement.
In the past two years, professor share a lot about Italian culture, food preferences, and cultural customs. I hope that one day in the future, I can visit you in Italy🇮🇹🇮🇹🇮🇹, and I also want to eat all the restaurant and store you have recommended, such as pizza, chocolate, Christmas cakes, pasta, cheese, fruits, beer, red wine, espresso, and watch your favorite football in the local.

Hello friends! Today we're going to share with you how to make classic meringue nuts dessert: French Dacquoise with coffee French buttercream.
Dacquoise means “ of Dax” in french, which is a small town in southwestern France. Classic dacquoise is used as a layer of a cake or sandwiched for two layers with a variety of filling. But it can also be a cookie sandwich with buttercream. This French dessert is a light meringue with a sponge texture, it’s meringue-like crisp on the outside, and moist and soft texture like cake on the inside. The flavor is amazing and delicious. It’s a must try French dessert. Hope you like this video.

How to make French Dacquoise Recipe
French Dacquoise Recipe
☞ Dacquoise mold: 6 slots, 7x5x1cm for each slot, if you don’t have dacquoise mold, you can use baking rings.
☞ Yields: This recipe can make 3 sets of dacquoise sandwiches for one egg white, you can use two or three egg whites to make 6 or 9 sets as you wish.
✎ Ingredients
☞ For dacquoise
powdered sugar 10g
All purpose flour 8g
almond flour 30g
medium egg white 1, 35g
granulated sugar 20g
☞ For French coffee buttercream (Cream au beurre cafe)
instant coffee granules 1g
hot water 4g
medium egg yolk 2, 36g
granulated sugar 45g
water 20g
unsalted butter 80g, softened and cubed
✎ Instrcutions
☞ For dacquoise
1. Use a sieve to sift the almond flour, powdered sugar and all purpose flour.
2. Place the egg whites and a bit of pinch of salt in a clean and dry bowl, beat the egg white with an hand electric mixer on medium speed for 1 minute. Then add the sugar one-third at a time, beat 30 seconds before adding the next.
3. After adding the rest of sugar, continue beating for 2 more minutes, then switch to low speed to beat for 30 seconds or until stiff peaks.
4. Add one half of dry ingredients into the meringue, making sure not to mix too much. Then add the rest of dry ingredients and gently fold the mixture until just combined.
5. Attach a tip to a piping bag and transfer the dacquoise mixture to the piping bag.
6. Pipe out the batter into the dacquoise slot. Use a scraper or offset spatula to smooth the surface and remove excess batter, and then use a toothpick to dip the water and to smooth out the shape.
7. Remove the mold carefully. Lightly dust the powdered sugar over the dough for the first time, after the powdered sugar is just absorbed into the batter, dust more powdered sugar over it again. This will create a better crust on the surface.
8. Preheat the oven to 230°C, reduce to 180°C and bake for 9-10 minutes, when time’s up, leave it in the oven for 5 minutes. Remove from the oven, stay with the baking tray to cool completely.
☞ For French coffee buttercream
1. Dissolve the 1g of instant coffee in 4g of hot water. Set aside to cool.
2. Add two egg yolks into the mixing bowl and beat until thick and pale.
3. Combine 45g sugar and 20g water in a small saucepan, heat over on med-low heat, cook until the sugar has dissolved and the syrup reaches 117°C.
4. Then immediately remove from heat and slowly drizzle the hot syrup into the bowl with the yolks, keep whisking on high speed until all syrup is added. Switch to low speed to whisk until the mixture (pâte à bombe) is cooled down to room temperature.
5. Add in 80g of softened butter one third at a time, allowing each batch to incorporate before adding the next. Mix to smooth.
6. Add the dissolved coffee and mix well, then pipe in a piping bag.
☞ Assembly
1. Sandwich the dacquoise with the buttercream, and refrigerate until ready to serve
