[News / #甜點新聞] 2021 年 #世界盃甜點大賽決賽 明日登場！ / Coupe du Monde de la Pâtisserie (Pastry World Cup) 2021 Final
兩年一度的世界盃甜點大賽（Coupe du Monde de la Pâtisserie ）明日即將在里昂美食節（Sirha）舉行連續兩天、每日十小時的比賽，英法文線上轉播也將同時進行。
本次比賽從各種意義上來說都相當特別。首先因為全球疫情緣故，今年的比賽從原本的一月底延至五月底，最後定為明後兩日，也算是法國餐飲界在逐漸復甦的狀況下，為全球甜點師和餐飲從業人員打的一劑強心針。再次不過受到疫情影響，原本預定參賽的 20 個國家少了近一半，最後只有共 11 國參與。2020 年包含亞洲、拉美等洲際的選拔賽甚至無法進行，最後是由 2018 年的參賽結果遴選而出，但最終亞洲包含 #台灣、中國以及上屆冠軍 #馬來西亞 隊本次都無緣參與，十分可惜。
另外，在新任主席 Pierre Hermé（Pierre Hermé Paris）的領軍下，今年賽事規則也有許多更改，如：
1. 原訂冠軍無法參與下屆比賽的比賽規則廢除，馬來西亞隊因此原本也有本屆參賽資格。
2. 歷年來總計比賽成績表現最好的「Top 5 Club」可以不需經過區域賽而自動晉級決賽的規則在 2019 年改為「Top 3」，因此今年只有法國、日本、義大利三隊種子隊。不過「Top 3」的保障名額也在今年結束，從下一屆開始，所有參賽國家皆需憑藉實力從頭拚搏。
3. 本屆決賽共有 5 項評比，其中包含需經過品嚐（dégustation）的「分享甜點」（desserts à partager）、冰品（entremets glacés）與新增的「餐廳式甜點」（desserts de restaurant）與兩項藝術雕塑：糖工藝（sculpture en sucre）與巧克力雕塑（sculpture en chocolat）。
4. 由原本「盤式甜點」（desserts à l’assiette）更改而來的「餐廳式甜點」，更加著重餐廳甜點師的工作領域及與料理主廚們之間的協作，並新增 5 位知名餐廳甜點主廚、3 位餐廳主廚擔任評審，其中包括西班牙鬼才甜點主廚 Jordi Roca IG（El Celler de Can Roca & BBVA ）、米其林二星甜點餐廳
Sarkara 主廚 Sébastien Vauxon，還有我之前在 Le Meurice 實習的小組長、前紐約二星餐廳甜點主廚，2022 年即將自行開業的 Eunji Lee 等。
5. 「冰雕」（sculpture sur glace）從藝術雕術比賽項目內刪除。
6. 延續由 2020 年歐洲盃甜點大賽的「自然派」主題，本次所有需經過品嚐的比賽項目中，皆禁止使用人工色素（colorants），包含二氧化鈦（E171 / dioxyde de titane）與含氧化鐵（E172 / oxydes de fer）的亮粉（poudres scintillantes），強調環境永續及對生態負責的甜點作品。
7. 本屆有更多女性主廚參與擔任評審與評審委員會成員，如之前為大家專訪過的 Jessica Préalpato 主廚，還有其他知名甜點主廚如 Claire DAMON（des Gateaux et du Pain）、 Christelle Brua - officiel（Le Palais De L'elysee）、Sophie de Bernardi（Café de La Paix）、Johanna Le Pape - Officiel（2019 年世界糖工藝大賽冠軍得主）。
8. 由巧克力鬼才、法國最佳工藝職人 Patrick Roger 主廚擔任榮譽主席，突出巧克力在甜點中的重要地位。
本屆決賽分為兩天舉行，第一天的參賽隊伍包括法國、英國、埃及、南韓、俄羅斯、日本，第二天則是智利、阿根廷、墨西哥、瑞士與義大利。轉播時間將從法國時間早上 8:45（台灣時間15:45）開始，有興趣的讀者們可點選以下的線上轉播網址，一同欣賞世界級的甜點比賽！

I haven’t touched my sewing machine for almost 10 years. I learned a few months in design school when I was young. This is my first time sewing this kind of difficult dress and handling lace fabric. It’s a very, very big challenge for me.
Anyway, I did it~
I saw a really nice lace dress on the official Valentino website and I love it so much, but this dress take $4,900 …….
This inspired me to design a dress based on Valentino lace dress and added some personal needs. I used over 10 hours for this sewing project; finally I got my beautiful lace dress and it only paid USD 8.
I can do it, you can do it. Everybody can make sewing fun.
Je n’ai pas touché à ma machine à coudre depuis près de 10 ans. J'ai appris quelques mois en école de design quand j'étais jeune. C'est la première fois que je couds ce genre de robe difficile et que je manipule du tissu de dentelle. C’est un très, très grand défi pour moi.
Bref, je l'ai fait ~
J'ai vu une très belle robe en dentelle sur le site officiel de Valentino et je l'aime tellement, mais cette robe coûte 4 900 $ …….
Cela m'a inspiré pour concevoir une robe basée sur la robe en dentelle Valentino et ajouté quelques besoins personnels. J'ai utilisé plus de 10 heures pour ce projet de couture; finalement, j'ai eu ma belle robe en dentelle et elle n'a payé que 8 USD.
Je peux le faire, tu peux le faire. Tout le monde peut rendre la couture amusante.
