One of the Pilates classes I recently attended had a platter of neatly squared cake sitting at the counter near the exit, luring me as I was about to leave (I could only make myself leave after devouring 5 chunky pieces). I’ve later come to learn that it is called the Whole Orange Cake - a spunky and citrusy cake made using whole oranges (yes, skin included), packing each bite with intense orangey flavours while charmingly decorating it bitter flecks of finely blended peels. There and then, I decided to bake one. Here’s my version of the cake, cut exactly the way I first saw it, but using only healthier ingredients such as organic wheat flour and eggs. Boy, I’m in love!
