[What I eat in a day? 我一天吃什麼?] #tbt leg day and no cardio.
Morning: hot green tea (not gonna call it breakfast coz its not breakfast, no food here!!)
Lunch: wanna eat something outside so added a salad to make myself happy. Love pret coz they have calories and nutrition info for easy tracking, had only a little bit of the dressing by dipping + achim original flavoured instant chicken breast
Sweet treat after lunch 午餐後甜點:as usual! chocolate brownie ice cream (whey protein powder mix with unsweetened almond milk) + almond butter + black coffee 與平常一樣巧克力布朗尼雪糕(蛋白粉與無糖杏仁奶拌勻)+ 杏仁醬 + 黑咖啡
Food before leaving office: steamed - spinach + chicken breast (smoked paprika flavoured, home marinated) + choy sum
Pre-training: abt 150g a relatively huge portion of cooked white rice + instant beef tenderloin from tryr
Post-training when home: choy sum +
Tumeric flavoured chicken breast (home marinated, airfried)
Sweet treats before bed: baked a small oatcake for myself with rolled oats + pb + unsweetened almond milk + baking powder (recipe see story highlight), top with pb, 0kcal maple syrup + some nuts - match with hot green tea

Thanks to @strikingjacqpot and @ohjackiebkk ! team for contributing these fantastic meals to the #MakeGoodWaste program with @foodforfightersth . Seriously, this ain’t no slap-together ‘Phat grapao’ (basil stir fry) to simply fill bellies, this meal is good enough for any authentic mid-range restaurant, looking to please well paying patrons. The Oh Jacki gang, made Nasi Lemak Chicken, a dish originating from Malay cuisine that consists of fragrant rice cooked in coconut milk and pandan leaf and Sambal (hot spicy red sauce) with garnishes like cucumber slices, small fried anchovies (ikan bilis), roasted peanuts, and hard-boiled or fried egg. The combination is just wild, and sometimes - dare I say it - a welcome relief from the household Thai food, as it combines elements of crunch, sweet, savory, spice and artomatics in a totally different way.
If anything, for those who have lived or visited Singapore or Malaysia, it really hits you in the ‘feels’. Gosh, I miss traveling. And although there are many many variations of this dish, Oh Jackie's version leans closer to the authentic but with special touches. That batter! It will make you weep inside with happiness. It's so good. Fluffy and light, but crispy and robust, unlike the Thai fried chicken, which is also addictive but the crispy skin is denser and deeply saturated with oil. The Jacki O version texture feels closer to a tempera. Then there’s the Sambal, Ok, so I’m no expert in that department but there is a great amount of depth and flavour in one tiny lick. It’s concentrated love. Yes! We loved it that much, like coming “home” to a place which is not our home. You’ll probably love it too, so why not give it a try. For this video, we went down to a special kitchen to whip up a massive 7KG Collagen Ramen Challenge with the help of Chantalle Ng (@chantalleng)! Chantalle is the star of the Mediacorp drama My Star Bride, playing the titular role in the form of a Vietnamese bride. The collagen broth comes from her very own brand, Yuan Collagen, which she co-founded with her friend Minying. The collagen is chicken-based and is extremely high in protein (10g per 100ml) with half the number of calories of your average collagen broth. The noodles we used were also provided by Chantalle’s company, a type of homemade egg noodles.
After a quick cooking process and with the help of some pre-cooked ingredients, Chantalle assembled the final bowl of noodles. It consisted of 11 portions of noodles, char siew, eggs, pork dumplings, seaweed and fried chicken, topped up with a healthy amount of the Chicken Collagen broth. It came up to almost 7KG and even more broth was added towards the end of the challenge.
It was a rich, nutritious and hearty ramen meal that I did not struggle to complete. Naturally, it was different from your typical Japanese ramen broths – a lot more “chickeny” in flavour and much thicker. The pre-cooked items were decent.
The strength of such a broth base is its versatility. You could use it for any dish you can imagine that requires some form of liquid to be added, such as risotto or hotpots. The broth acts as a flavourful and nutritious base for you to develop your meal on. In a pinch, you could even use it to cook instant noodles!

More like a thick soup than a typical Western stew, this Chinese beef stew takes reference from Cantonese cooking and pairs vibrant flavours of daikon and carrots with rich earthy beefy goodness.
We cooked over a stove but go ahead and use a pressure cooker / instant pot to braise the beef chucks quicker.

1.4kg Beef chuck (cut into chunks)
2 tbsp Cooking oil
2 Onions (cut into wedges)
1 Knob ginger (smashed)
2 Star anises
2 Cinnamon sticks
2 Bay leaves
4 Cloves
5 Dried chillies (pre-soaked)
2 tbsp Light soy sauce
1 tbsp Dark soy sauce
2 tbsp Chu hou sauce
1 tbsp Fish sauce
3 tbsp Shaoxing wine
Salt & sugar to taste
500ml Chicken stock
500g Daikon (peeled and cut into chunks)
2 Carrot (peeled and cut into chunks)
Coriander for garnishing

For this video, we went back to Neo’s Kitchen to cook up and destroy a 5KG Collagen Seafood Noodles Challenge! CHU provided us with their Premium Chicken Collagen Soup packs for us to use as the gravy base. These Premium Collagen Soup packs are available at FairPrice Finest island-wide!
We veered from a more traditional Chinese-style seafood noodles by boiling all the noodles, meat and vegetables into the soup, similar to a hotpot. The alternate way would be to cook the meat and vegetables first, cooking the noodles separately (including a frying step), preparing the soup base and then combining them all together.
Thanks to CHU’s Collagen Soup, the soup base was a simple affair of emptying the contents of the pack into a pot. Then, we cooked all the ingredients one after another, which were: marinated pork loin, squid, shrimp, grouper, clay-pot noodles, fish cakes, crab sticks and bok choy. After seasoning to taste with oyster sauce and soy sauce, we topped the Seafood Noodles with an egg mixture that comprised of eggs boiled in the Collagen Soup. Finally, we plated the massive dish onto our giant plate and garnished with fried onions and spring onions. The result was a beautiful 5KG plate of Chicken Collagen Seafood Noodles!
The Collagen Broth was rich and deeply flavoured, reminiscent of a concentrated chicken stock. Surprisingly, while it had a distinct flavour, it was not overpowering nor salty. Using this pre-made pack allowed us to skip the fairly tedious process of creating your own which can involve chicken stock, aromatics and seasonings that you boil for some time. The seafood added a noticeable element to the broth that elevated the richness of it even further. Ultimately, I thought it was close to restaurant-level Seafood Noodles.
This was such a simple dish to prepare and I thoroughly enjoyed my homemade Chicken Collagen Seafood Noodles. The possibilities of what you can make with the Premium Chicken Collagen Soup are endless due to the rich yet not overpowering nature of it, be it a hotpot base, risotto or mui fan.
