Recipe: Fried Oreo Pancake
Everyone's favorite snack is quick and easy to make at home, using Medella Singapore coconut oil! I dip my frozen oreo in pancake batter and deep fry till golden brown. Medella coconut oil makes it less oily yet giving a subtle fragrance that we we can't resist!
Ingredients:
2 cups pancake mix
2/3 cup milk
1 large egg
1 tablespoon Medella Coconut Oil
18 Oreo cookies
additional Medella Coconut Oil for frying
confectioner’s sugar (optional)
Method:
1. Freeze the Oreo cookies for about an hour.
2. Fill a heavy cooking pot with 2-3 inches of Medella Coconut Oil.
3. Combine pancake mix, milk, egg, and 1 tablespoon Medella Coconut Oil in large bowl. Whisk until smooth.
4. Dip a cookie in the mixture and completely cover it so you can’t see through the batter.
5. Carefully drop the coated cookie(s) in the hot oil and fry on each side just until golden brown.
6. Remove cookie from oil and dust with confectioner’s sugar. Enjoy while still warm!
