スタッフドエッグのレシピをご紹介します!
スタッフドとは英語で詰めるという意味です。
黄身をくり抜いて、今が旬の春のアスパラガスを刻んだものを詰め、アンチョビをトッピングし塩味をプラス。
見た目は可愛くて、味は大人に♪
とっても簡単で美味しいので、ぜひ作ってみてくださいね!
スタッフドエッグ
6個分
材料:
アスパラガス 4本
たまご 3個
マヨネーズ 大さじ1
粉チーズ 大さじ1 1/2
アンチョビフィレ
黒コショウ お好みで
作り方:
1. たまごは水から茹で始め、沸騰したら中火で約9分茹でたら冷水に取り、殻を丁寧に剥き半分に切って黄身を取り出す。
2.アスパラガスの固い根元は2〜3㎝程切り落とし、根元から半分の皮をピーラーで剥いて、フライパンに湯を沸かし塩(分量外)を入れ、中火で1分半茹でて冷水に取り、水気はしっかり拭く。
3.1の黄身はザルで濾し、2のアスパラガスは穂先は切り分けて縦半分に切り飾り用に取っておき、それ以外はみじん切りにする。
4.3の黄身とみじん切りにしたアスパラガス、マヨネーズ、粉チーズを滑らかになるまで混ぜる。
5.1の白身を器に見立て、そこに4をスプーンを使って形を整えながら盛り付ける。
(白身を置いたときにコロコロしないように下を平らにカットしておく)
6.5に飾り用のアスパラガスの穂先と小さく切ったアンチョビフィレをのせ、お好みで黒コショウをふったら完成!

INGREDIENTS
1 bundle Asparagus
3 Eggs
1 tablespoon Mayonnaise
1 1/2 tablespoon Grated cheese
Anchovy fillet
Black pepper
PREPARATION
1. Boil the eggs on medium heat for about 9 minutes, soak them in cold water to cool, carefully peel the shell and cut it in half to remove the yolk.
2. Cut off the hard roots of asparagus, 2 or 3 cm from the bottom, peel half of the skin from the roots with a vegetable peeler, and boil on medium heat for 1 and a half minutes, soak in cold water to cool. Wipe off any water
3.Strain the yolk of (1) with a colander, cut the tip of the asparagus of (2) into half vertically and save it for decoration, and chop the rest.
4. Mix the yolks with chopped asparagus, mayonnaise and grated cheese until smooth.
5. Use the white meat of (1) as a bowl and serve (4) on it while shaping with a spoon.
(Cut the bottom flat so that the white meat does not roll when placed)
6. Place the asparagus tips for decoration and the anchovy fillet cut into small pieces on top of (5), and sprinkle with black pepper if you like.
7. Enjoy!

Very tasty yet delicious Miso Ramen in 5 minutes!!!
Miso is a traditional Japanese seasoning made from fermented soybeans. It is a umami-rich paste to make a Miso Soup. There are tons of different kinds of Miso pastes in Japan. You can use any of your choice to enjoy this recipe.
I made this recipe for Vegan people but sure you can easily change the ingredients to make non-vegan Miso Ramen.

5 MIN Vegan Miso Ramen
Difficulty: VERY Easy
Time: 5 min
Number of servings: 1
Ingredients:
1 package fresh Ramen noodles
a bag of bean sprouts (remove the roots and heads if you prefer)
whole kernel corn (canned)
chopped green onion
((Miso Ramen Soup Base))
2 tbsp. Miso
1 tbsp. Soy sauce
1 tsp. Sugar
1 tsp. Kombu kelp Dashi powder
1 tbsp. ground white sesame seeds
1 tsp, garlic paste
1 tsp, ginger paste
1 tbsp. sesame oil
a few drops of La-Yu chili oil if you like
350ml hot water
Directions:
1. Wash the bean sprouts, place them in a microwavable dish, cover, then cook on medium (600w) for 2 min. Drain well, then season with salt, pepper, and sesame oil.
2. In a bowl, mix the ingredients of the Miso Broth, add hot water little by little then mix well.
3. In a pot, boil water. Add fresh Ramen noodles in the boiling water and gently stir noodles with chopsticks. Cook Ramen noodles according to your package. Drain the noodles in a strainer and place them in the soup. Then arrange the toppings.

Hiyashi Chuka (cold ramen) is kind of refreshing ramen salad. You can enjoy it by changing the toppings and Tare (dressing/sauce).
This video will show you how to make Hiyashi Chuka drizzled with light yet tasty sesame sauce, arranged with Ramen-like toppings, just like the one appeared on Manga: Koufuku Graffiti.
Perfect dish during the hot and humid summer season. However it can be served all year long ;)

Goma Hiyashi Chuka (Cold Ramen with Sesame Dressing)
Difficulty: Easy
Time: 30min
Number of servings: 2
Ingredients:
2 packages fresh Ramen noodles
8 slices Char siu (roasted pork)

Chinese jellyfish
1/2 cucumber
100g (3.5oz.) bean sprouts
Beni Shoga (red pickled ginger)
Goma-Dare (sesame dressing)
* 3 tbsp. white sesame paste
* 1/2 tsp. Toban Jan (hot bean sauce / Chinese red chili paste)
* 50ml water
* 50ml vinegar (rice or cereal)
* 3 tbsp. soy sauce (use light soy sauce if you have)
* 1.5 tbsp. sugar
* 1 tbsp. sesame oil
* a pinch of salt
Directions:
1. First, dilute white sesame paste and Toban Jan with water. Then mix the other ingredients for Goma-Dare and cool in the fridge.
2. Remove the roots and heads of bean sprouts (you can leave the heads if you like), then parboil for a few seconds and drain well in a strainer. Cut cucumber into thin strips.
3. In a large pot, boil water. Add fresh Ramen noodles in the boiling water and gently stir noodles with chopsticks. Cook Ramen noodles according to your package (mine was 3 min). Drain the noodles in a strainer and rinse the noodles under cold water for a few times to remove starch. Then drain well again and pat dry with paper towels.
4. Place the cold noodles in a dish, then Arrange the toppings. Pour over the sauce right before you eat.
