Recipe: Christian’s Thai Braised Beef Noodles

Recipe:
1 featherblade of beef (any sustainable braising beef cut available)
Braising Sauce
12 tablespoons Oyster Sauce
6 tablespoons dark soy
6 tablespoons light soy
8 tablespoons sugar
300ml water
Stir Fry:
300-400g Flat Rice Noodles (Hor Fun)
2 tablespoons vegetable oil
3-4 cloves garlic, minced
2-3 Bird’s eye chilies
1/2 onion
2 spring onions
3-4 sprigs of fresh green peppercorns
1 cup Thai Basil
Fried garlic
Fried onions
1. Bring the featherblade to room temperature and gently sear all sides.
2. Place in a large braising pot and then mix in the braising sauce and bring to a boil.
3. Transfer the pot into an oven set at 125C and braise for 2 hours, turning half way through.
4. Allow to rest when cooked before slicing.
5. In a hot wok, fry the garlic, onions, chilies, some spring onions and Thai basil.
6. Add the flat noodles and add some of the braising liquid as stir frying.
7. Place in a plate and add some nice slices of featherblade.
8. Serve with some fresh Thai basil, coriander, fried garlic and onions

首篇先來點輕鬆的,也是一直想要傳達給不住在泰國,但愛泰國菜的各位一個正確知識,所以文會比較長喔!今天要來介紹大家在泰菜耳熟能詳的 "打拋飯",想必大家不管有沒有來過泰國,都一定對這道不陌生,這道也是我最愛的之一,不騙你!我曾經有一個禮拜的中餐,都是打拋打拋又打拋,這道打拋飯可以比喻像台灣滷肉飯一樣,當你在餐廳不知道要點甚麼的時候,就點打拋飯無誤,就像滷肉飯一樣的好找好點又好吃。
說到打拋其實英文叫 "Kra Praow",當初中文把它翻成打拋,或許是因為如果翻"嘎拋" 應該滿難記的,也不是太好聽 ,"嘎拋豬" "打拋豬" 好像打拋比較可以一點,呵呵!所以在泰國看到菜單不要想說奇怪,怎麼只有 Kra Praow 而沒有 Dra Praow喔!大部分的菜單都會寫 Fried with Thai Holy Basil。
說到Thai Holy Basil 在這很遺憾地跟你們說,其實台灣可以說九成以上的餐廳都是加九層塔,但事實上其實根本不是加九層塔,是加"打拋葉" 所以這道才會叫打拋飯,打拋葉要在比較炎熱一點的天氣才種得出來,味道也差很多的。
打拋基本上可以跟你想要的肉類或海鮮類一起炒,都一樣很美味,但是一定不會加番茄,之前在台灣居住時看到炒番茄,我傻了眼!打拋飯基本上會配著一顆半生不熟的荷包蛋,(當然要全熟的也可以 只是攤販他們都會問要不要熟),敢吃半熟的蛋一定要點啊!!! (近晚餐了 想到又快流口水了) ,別忘了半熟蛋淋一點桌旁的魚露,敢吃辣的別忘了加泡在魚露裡的辣椒一起吃,真是人間美味阿!

ㄧ鍋到底三杯雞,簡單無水三杯雞ㄧ次學會Three-Cup Chicken (Sanbeiji)
The chicken is tender and velvety, a little crisp at its edges, surrounded by coins of ginger and cloves of garlic. The sauce is dark and pungent — soy sauce cut through with aged rice wine , perfect for ladling onto rice. There is a sweetness in there as well, sugar and sesame against the salt of the soy. A handful or two of Thai basil added at the end imparts a floral punch.

Ingredients:
Serves 3 - 4 pax
1 large yellow onion - sliced
250g of thinly sliced beef
1 teaspoon of sugar
200ml of dashi stock
2.5 tablespoons of Japanese light soya sauce

北非蛋「Shashuka」是中東風味的雞蛋料理,在希伯來語中「Shashuka」意為混合。這道料理是以蕃茄跟蛋為主,再加入各種蔬菜香料組合而成,一鍋到底的料理。因為雞蛋蕃茄為主要原料往往會做為早餐。但在以色列也是一個受歡迎的晚餐喔。
這道料理可以直接在爐上加熱,也可以把鍋子放到烤箱中烤至半熟。上桌以後再搭配麵包或是披塔餅(pita),就是一道完美的餐點了喔。

Ingredients:
600g small tomato
1 onion
4 garlic cloves
1 chili pepper
olive oil
2 tsp salt
A little black pepper
3~4 eggs
Spinach about 2 small bunches
Appropriate amount of thyme
Appropriate amount of parsley
Appropriate amount of thai Basil
50cc whipping cream
Appropriate amount of Parmesan cheese

食材:
小蕃茄 600g
洋蔥 1顆
辣椒 1支
菠菜 2束
百里香 適量
洋香菜 適量
蛋 3~4個
九層塔 適量
帕瑪森起司 適量
調味料:
橄欖油 適量
黑胡椒粉 少許
鮮奶油 50cc
蕃茄醬 3~4大匙
鹽 2小匙
步驟 :
1.將小番茄洗淨對切,洋蔥切成丁,蒜瓣切碎,紅辣椒去切碎
2.烤箱先用200度c預熱
3.兩大匙橄欖油加入鍋中先將洋蔥與蒜頭紅辣椒炒香後加入切好的番茄加入鹽及黑胡椒進烤箱烤10分鐘
4.取出後撒上菠菜、百里香,洋香菜及九層塔,加入番茄醬鮮及鮮奶油
5.蔬菜醬汁周圍稍微取空間打蛋,可以打3~4個蛋(看容器大小做調整),然後再回烤箱烤10-15分鐘,可以觀察雞蛋與醬汁的狀態,雞蛋喜愛的熟度到達就可以取出。
6.烤好的番茄烤蛋撒上起司及新鮮的九層塔,搭配麵包即可以享用。
