觀塘│原來生食不只有沙律
雖然我食素,但生平最最最討厭食沙律,因為全部都是菜!菜!菜!(其實我並沒有很喜歡食菜) 對於食生,即以低溫41度以下烹調,我知道可以最大化保留蔬菜的營養,但是,我印象中食生即食生菜,所以不太喜歡。至到認識生機達人Megan,第一次嚐過純生壽司後,就像發現新大陸,開始對食生感到好奇 🥳
早陣子,有幸到「綠色心活館」品嚐這款「意式千層麵」,又再一次讓我大開眼界!這居然是生食的真面目?你能相信嗎?這千層麵包含了各類時令蔬菜,配以特製醬汁,我真不覺得這是生食;特別要介紹其沙律,記得Megan把一大盤沙律端到我和她先生面前,我倆同時說了句:嘩,這麼多,誰能吃完?看來,我們都不愛食菜。幾分鐘後,我們居然食完?!Megan看到後說:剛剛誰說吃不完 🤣😅 秘訣在於沙律醬!帶煙燻味的自家益生菌沙律醬,是我食過最好食的,這也是我生平第一次能一口氣食完一大盤沙律!還想繼續食!
整個餐單包含了前菜、主菜、特飲和甜品,處理生食比一般食材更費心思和功夫,所以不是天天有供應,好像幾個月才會有一次!剛好今天有供應 (12/9/2020),菜單請參考最後一張圖。非常推薦給還沒嘗試過的你,真的很抵食!一般餐廳是不可能食到,供應有限,請自行向「綠色心活館」查詢 😋
Kwun Tong│Raw Food is more than just SALAD
Although I am a vegan, I hate salad the most in my life because it is all vegetables! For Raw Food, that is, cooking at a low temperature below 41 degrees, I know that it can maximize the preservation of the nutrition of vegetables. However, I don't like eating veggies. After I tasted the raw sushi for the first time that made by Megan (a master of Raw Food), it was like discovering a new world and I started to be curious about raw food 🥳
Earlier, I was fortunate enough to taste this "Raw Lasagne" at "Green Living", which once again opened my eyes! This is actually the true face of raw food? Can you believe it? This lasagna contains all kinds of seasonal vegetables with special sauces. I really don’t think this is raw food. I especially want to introduce the salad. I remember Megan brought a large plate of salad to me and her husband. We both said, Wow, too much! Who can finish it? It seems that we do not like veggies. After a few minutes, we finished the whole plate? ! Megan said after seeing it, Did you guys just say you can't finish it? 🤣😅 The secret in the salad is the SAUCE! The house-made smoky flavor with probiotic salad sauce is the best I have ever eaten. This is the first time in my life that I can finish a whole plate of salad in one go! I even want to continue eating!
The entire menu includes appetizers, main dishes, special drinks and desserts. It takes more effort to process raw food than ordinary ingredients, so the meal is not available every day, it seems to happen only once in a few months! Luckily, it happens to be available today (12/9/2020), please refer to the last picture for the menu. It is highly recommended to you who have not tried it, because it's impossible to order in general restaurants, and the supply is limited. Please check with "Green Living" by yourself 😋

誠摯的跟好朋友推薦好店~日本沒有這種代糖低卡獨特的甜點店~但口感不輸日本甜點名店~這個就厲害了
「日子正甜」不只是一家甜點店,而是一家低卡甜點實驗室。我們的目標是研發出令人愉悅且獨特的甜點、飲料與冰淇淋,但是將它們的熱量降低到一般產品的50%以下。用零卡路里、零升糖指數且價格是糖10倍的「赤藻糖醇」代替糖,盡可能地少油,儘量用蛋白代替蛋黃,以大量降低熱量與脂肪含量。但是仍有一般點心的美味口感,與非比尋常的獨特韻味。我們菜單的每樣商品,都有標示出熱量(C)、脂肪(F)、蛋白質(P)與糖(S),方便大家計算所攝取的熱量與營養,讓大家開心地吃著甜點時,盡情撇開一切的發胖與健康顧慮,沒有任何的罪惡感!

退休多年以來,一直擁有許多創業夢想,也寫了不少份營業計劃書。要嘛是投資金額太大;要嘛是閒雲野鶴的日子過慣了,擔心會太忙;要嘛是覺得創業的標的,好像對社會沒什麼實質貢獻。挑東挑西搞到2019年,不知道為何想不開,突然把頭洗下去,投入了工作時間長、競爭激烈、已經殺成一片血海的甜點市場…
當年離開金融業職場最主要的原因是健康因素:身體從「歸組害了了」的水準,休養生息了這麼多年,終於恢復到「陽光歐吉桑」的體格。血糖跟肝指數都接近正常值,體重減了20公斤,體脂率也從原來的35%降到15%以下。
減重當然是體檢報告從紅字變回黑字的主要緣由。在減重的過程中除了養成固定的運動習慣之外,我並沒有放棄原來追求美食的習慣,只是開始對吃的東西開始變得比較挑剔:以前只要是好吃的東西,我來者不拒。現在除了好吃以外,還會注重裡面有沒有劣質的食材或添加物,以及熱量與營養標示。
對我這個嘴巴很刁的人,這其實是一個很痛苦的歷程。有很多的美食,要嘛有落落長看不懂的食品添加物,要嘛脂肪跟碳水化合物的熱量超標,尤其是我最愛的甜點,美味與健康剛好在兩個極端。學習西點的歷程中,了解到95%以上坊間的烘焙產品為了好吃、製作方便、延長保存與降低成本,都添加了讓產品更加香脆的氫化植物油(反式脂肪),讓西點麵包保持柔軟的麵粉改良劑,在台灣高濕環境不會發霉的防腐劑…等等,族繁不及備載。何況不多加一點高熱量的鮮奶油、焦糖等,東西怎麼會好吃?
「日子正甜」就是在這樣的因緣下誕生了。它不只是一家甜點店,而是一家低卡甜點實驗室。我們的目標是研發出令人愉悅且獨特的甜點,但是將它的熱量降低到一般甜點的50%以下。這是一個艱難的挑戰,絕大部分美味的甜點,都是高熱量元素的交集,甜點中一旦缺乏了高卡路里的糖、油、蛋黃等柔性材料,就難以維持滑順,柔軟,入口即化與濕潤的口感。這樣的製作方向,違反了所有烘焙的原理,所以儘管符合目前健康塑身的趨勢,國內外卻沒什麼人往這個方向去嘗試。
投資銀行交易部門出身,加上烘焙也是非科班出身,讓我有這個「憨膽」來創業並倡導「低卡甜點」的理念,期待藉由這個差異性優勢從甜點市場中殺出血海,也期許我從侍酒師、咖啡師與米其林200顆星星訓練出來的味覺,能夠為這樣的健康甜點加分。

“Jour Doux” is not only a snack bar, but also a low-calorie dessert lab. Our objective is to research and develop pleasing and unique desserts, drinks and ice-creams with calories 50% lower than general peer products. We use erythritol, which is zero calories, zero GI and 10 times more expensive than sugar, to replace sugar; we reduce fat contents as much as possible; we substitute egg yolk with egg white. All we want to achieve is to reduce calories and fat contents of our desserts however without sacrificing their delicious taste and exclusive mouthfeel. We specify Calories (C), Fat (F), Protein (P) and Sugar (S) contents for every product on our menu for your convenience to calculate consumed nutrition so that while enjoy having desserts you can get rid of fattening and health concerns with no guilt!
