威士忌裡的歧視鏈
秋節連假期間看了兩部商業大片。《沙丘》完全不讓等候多年的影迷失望,黃沙滾滾的浩蕩沙漠下潛伏的巨型沙蟲,與夢境、預言、背叛和勾心鬥角的政治鬥爭交織出一幅未來異世界,導演刻意壓低觀眾習以為常的科幻元素,以沉重的配樂鋪陳,一上映便注定成為史詩級鉅作。《尚氣與十環傳奇》承襲並銜接過去十年漫威築起的宇宙觀,為下一個十年盛世開拓新局,卻大異於「復仇者聯盟」中飛天遁地、忽大忽小的超能力,以東方拳拳到肉的武術打出另一番天地,上映後在美國蟬連三周票房冠軍,一掃未上映前選角問題的紛擾,跌破眾人眼鏡。
《沙丘》的導演丹尼.維勒納夫過去曾拍過多部叫好、但不太叫座的電影,如《異星入境》《銀翼殺手2049》,這部改編自經典科幻小說的電影,由於故事隱澀、上場人物眾多,過去曾毀在大導大衛.林區手中(我於Netflix重看了一遍《沙丘魔堡》,的確慘不忍睹),此時改編上映的只是上半部,華納公司將視賣座成績決定是否繼續投資,讓身負商業與藝術片重任的導演忍不住批評部部大賣的漫威電影:「我們實在看太多了,那就是一部部複製貼上的作品,這種類型的電影已經把我們的感官變成了喪屍般麻痺」。雖然是有感而發,但也不是無的放矢,因為《華爾街之狼》的名導馬丁.史柯西斯的批判更是猛烈:「漫威那樣根本不是在拍電影,而是在做主題樂園!」
作為一個單純的電影喜好者,藝術片有值得沉浸的深思課題和美感,而商業片也有其不可忽略的感官刺激,兩者大抵都實踐了第八藝術的價值,卻無從化解彼此間競相討拍和相互鄙視的心結。不過我並不是想討論電影,而是威士忌產業同樣出現類似的情結,而且從消費端的態度上就可以看出。不知酒友們是否注意到,威士忌的飲者或多或少存在某種「歧視鏈」:喜好單一桶的所謂「老饕」們,對於遍地都是的單一麥芽威士忌有點不屑一顧,而獨鍾單一麥芽威士忌的資深酒友,又瞧不上眼調和式威士忌。這種微妙的心理雖然不很明顯,卻潛藏、刻印在心中,並影響著我們選酒、喝酒的興致。
先幫酒友們複習一下。蘇格蘭威士忌法規中,所有的威士忌只分成五大類,分別為單一麥芽、調和麥芽、單一穀物、調和穀物,以及調和式威士忌。儘管有人倡議,但是到目前為止,並沒有針對單一桶做出規範,也就是說,這個名詞純粹只是行銷話術,酒廠、酒商不需要提出任何證明,都可以宣稱某一款酒是來自同一個橡木桶,且無論這桶酒在裝瓶前是否歷經換桶、過桶或併桶。至於單一麥芽威士忌,則必須倚靠技藝嫻熟的調酒師,把數十到數百個橡木桶的酒液調和成消費者喜好,又不脫酒廠風格的口味,其中蘊含的工藝技術與調和式威士忌相似,只不過後者的原酒不是出自同一間酒廠,或者包含了穀物威士忌。
台灣是個既成熟又奇特的市場,多年來進口的單一麥芽威士忌總量一直排名全球第三或第四,但若把調和式威士忌的進口量計算進去,卻擠不進前十名,顯然台灣的消費者十分固執且偏執。不過這種情形在近兩年逐漸翻轉,根據「國際葡萄酒暨烈酒研究」(International Wine and Spirits Research, IWSR)的統計,在2019年中,調和式威士忌的進口量一舉超越單一麥芽威士忌達30萬箱(9公升/箱)之多,2020年的資料尚未公布,但猜想趨勢不變。
我長期生活在厚厚的同溫層裡,所以無法真切了解實際生活現狀。我的好朋友告訴我,當他評估進口的酒款時發現,即使價位相同,40%的酒精濃度比43%更容易賣,讓我大吃一驚,原來普羅大眾並不在意每一滴酒精的成本,稍微提高酒精度,反被認為刺激性較強,違反了順口易飲的原則而較不受歡迎。前陣子有個機會與酒商合作,推廣一款調和穀物威士忌,同樣也是40%,原本以為這種連我都非常陌生的酒款,市場接受度可能不高,不料品牌喜孜孜的告訴我舖貨創紀錄的快速,而且已經賣到缺貨,又再度讓我大吃一驚,原來就算是極度陌生,長期建立的品牌形象可輕易推動新品。這幾個例子,讓我逐漸從崩解的同溫層罅隙中窺見真實世界的面貌。
商業大片好拍嗎?雖然演戲的是瘋子,看戲的是傻子,不過現代觀眾胃口早被養大而十分挑剔,必須節奏明快、邏輯清楚、不落俗套、隨時迸出驚喜,就算看完戲後忘得精光,但至少在那兩小時內爽度爆表。同樣的,大賣的威士忌也得風味獨特、甜美討喜,順口不刺激之外,若加水加冰塊不致渙散,又能百搭東西方料理,才能讓人大口乾杯醺然陶醉。這樣的威士忌,是不是也不容易調製?
將單一桶、單一麥芽及調和式威士忌比擬為藝術片與商業片,確實有點不倫不類,但是從市場的角度看,倒也有些相似。當然,儘管兼容並蓄是種美德,也無法強迫個人喜好,百花齊放的酒款各取所需,「歧視鏈」應可休矣,《沙丘》導演不是也說:「當今依然有很多藝術價值高的商業大片,我不覺得一切有必要太悲觀看待。」

Around Lunar New Year, in January or February, a snowy corner of Akita prefecture hosts the Hiburi Kamakura Festival, the Fire and Snow Festival. The event, which marks the end of winter and the beginning of spring, involves the welcoming of good spirits, or kami. During the first part of the Hiburi Kamakura Festival, a shrine is constructed in the spirits’ honour, and is decorated with offerings and good luck charms. As the night goes on, a bonfire is lit, and bales of hay and charcoal are tied up with lengths of straw rope. Those participating in the Hiburi dance prepare by wrapping their hair in headscarves and slipping their hands into protective gloves, to stop them from getting singed. Visiting stuffy old temples may not seem like the most exciting activity for kids to do, but there are thousands of fascinating temples and shrines in Japan. Gotokuji, for example, is one of the luckiest temples in Tokyo as it is the birthplace of maneki-neko. Gotokji is home to over 10,000 of these cat figurines, which are believed to bring good luck. A classic maneki-neko looks like a Japanese bobtail cat with a calico coat, but the friendly feline now comes in all types and colours. Typically, one or both paws are raised. They are often called ‘waving cats’ in English because of the position of the paw, but in Japan, this gesture, with the palm facing down, is used to beckon someone towards you.
