Lai Yee's Kitchen - Spicy Taucu/Fermented Soybean Paste Steamed Fish 酱蒸鱼
I love my food with gravy. When you have fresh fish, steaming them with sauce is the best way to enjoy. Steamed fish are healthy, easy to prepare and extremely delicious. It is even more so when paired with a simple fermented bean paste sauce. You can use this recipe to steam other types of fish like cod, grouper, red snapper, trout or bream and Nile Tilapia. Simple, fast and super comfort!
Ingredients :
- 1.5kgs snapper
- 2 tbsp oil
- 2" ginger or more(sliced)
- 2 medium size red onions
- 2 whole garlic
- 8 cut chili padi
- 4 stalks coriander with roots
- 5 tbsp taucu/fermented soy bean paste
- 2 tbsp oyster sauce
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- 1/2 tbsp white pepper
- 2 tbsp cooking rice wine (optional)
- 2 big lime juice or 3 tbsp juice(I have added the lime pulp too)
- 2 tbsp sugar
- cut spring onions for garnishing
If your fish is not big or thick, you need just 8 mins of steaming with the fire stove. If you are cooking with an induction stove like mine, then you need 15 mins of steaming. If you have a big fish, then you will need slightly longer BUT not too long. Make sure you boil the water in the wok before you put the fish to steam.
You can also fry the sauce ingredients in a wok first with oil. Steam the fish without any sauce, once the fish is ready then pour the fried sauce over. This way is equally delicious. Try it! I love 酱蒸鱼 Spicy taucu steamed fish!

Amid everything that has happened in the last few days, we hope that everyone is keeping safe and well. We wanted to share a hearty and healthy recipe with the Meatmen community as comfort food for these uncertain times.
This sweet and sour cod fillet recipe introduces nutritious cod fish to anyone's diet. Cod fish is known for its high levels of protein, omega-3 fatty acids, vitamins, and other minerals.
Perfect for younglings and known to some as a confinement dish. This pan fried method of cooking ensures that the fillets or cod steaks are thoroughly cooked making it extra safe for pre-, during and post-natal consumption.
Otherwise a super healthy and sumptuous dish to make for the family too - think flakey, goodness of cod with crunchy, tangy peppers!

2 Cod fish steaks
2 tbsp Ginger juice
Salt to taste
Potato flour (for dusting)
30g Small onion (diced)
30g Small red pepper (diced)
30g Small green pepper (diced)
4 tbsp Tomatoes ketchup
2 tbsp Raw sugar
3 tbsp White vinegar
¾ tsp Dark soya sauce

90 ml soy sauce
90 ml mirin
Gyoza maki,Beef tendon
your favorite Oden ingredients
Dashi(1800ml)
20 g kombu
50 g thick cut mixed fish flakes
10 g thin cut bonito flakes
2000 ml water
Niku Gyoza(16 pieces)
150 g ground pork
80 g cabbage
1 clove garlic
small piece ginger
1/2 tsp soy sauce
1/2 tsp oyster sauce
1/4 tsp salt
some Ichimi Togarashi
Fish paste
450 g cod fish
8.4 g salt
1 egg white
1 tbsp sake
2 tbsp potato starch
