{Recipe} Steamed Abalones in Chicken Essence and Garlic Sauce
One of the simplest way to enjoy abalones is simply by steaming it. These New Moon Australian Abalones make a good choice for this kind of cooking method as they are individually quick frozen and thus their freshness is well preserved. In fact they can be enjoyed raw as sashimi.
Ingredients (Serving size: 10 abalones)
6 cloves garlic, minced
20g ginger, minced
2 stalks spring onion, diced to small pieces
2 box New Moon Australian Abalones (IQF Individually Quick Frozen from LIVE)
For the sauce:
1/2 bottle New Moon Chicken Essence
3TB Shao Xing Wine
1TB New Moon Light Soy Sauce
1 Tsp sesame oil
1 TB sugar
Method:
1. Prepare sauce by heating the sauce ingredients in a pot until sugar is melted.
2. Set abalones in a steaming plate. Spoon roughly 1 Tb of sauce into each abalone and steam for 3min.
3. Heat a nonstick or cast iron pan over medium high heat. Add 3 tablespoon oil and fry the ginger, follow by garlic and spring onion till fragrant.
4. Pour the cooked garlic oil mixture onto the abalones. Serve

{Recipe} Laksa Seafood Pancake
Inspired by the Korean kimchi pancake, this laksa seafood pancake is spicy and delicious thanks to New Moon Laksa Paste which is full of oomph and kick. I used the king top shell which is a good source of protein as it is actually low in fat and trans-fat free. Feel free to add prawns or squid to your liking.
Ingredients (Makes 2 large 20-cm pancakes)
2 Tb Sesame Oil
1 medium sized red pepper, sliced
2 stalks thai spring onion, cut into about 5-cm in length
1 New Moon Braised King Top Shell, cut each slice by half
1 cup all purpose flour
1/4 cup corn starch
40g New Moon Laksa Paste
200ml water (feel free to use coconut milk)
1 tsp white sesame, toasted
For the dipping sauce:
2 Tb soy sauce
2 Tb white rice vinegar
Method
1. In a large bowl, combine the flour, corn starch, water and laksa paste till well-combined. Add in spring onion, red pepper and braised king top shell slices.
2. Heat a nonstick or cast iron pan over medium high heat. Add 1 tablespoon oil and add the batter to the pan, spreading it in an even layer. Fry until browned on one side. Flip the pancake and continue to cook until browned on the other side.
3. Assemble the dipping sauce by combining the sauce ingredients in a small bowl. Serve alongside the pancake.

You will need to prepare mushroom broth as the base. I didnt have mushrooms, so I did not show u in the video. You can grind the mushroom to add thickness to the soup! Also I had too little chili in the soup. Be Brave, add more!
Ingredients for 4 to 5 servings :
For the actual Laksa paste -
. 5 fresh chillies if u like it spicy
. 12 shallots
. 2 stalks lemongrass
. 4 cloves garlic
. 1 small piece turmeric around 3cm size
. 1 small piece of fresh peeled galangal (or ginger) 4 to 5cm size
. 1 tablespoon vegan shrimp paste (or miso)
- Blend all that into a paste, then saute in hot oil for 8 to 10mins -
For The BROTH :
. 6 to 7 cups of water or Mushroom broth
. around 6 pieces of Asam Keping or tamarind paste 3 tbsp. brown sugar
. salt for tasting
. 1 tbsp soy sauce
. one or more rolls of cut vegetarian fish
- Boil all together with the sauteed paste -
For Garnishing:
. Daun kesum leaves/ asam leaves
. Fresh mint. thin sliced ginger flower and lemon grass
. Chopped or sliced pineapple
. Finely sliced red onions
. Vegetarian shrimp paste for tasting
. some cut lime . you can also add thin slices of lettuce
Last but not least, the Laksa noodles or thick vermicelli/Bihun noodles.

Homemade Sarawak Laksa Paste 自制砂拉越叻沙:
140g / 8-9tbsp shallots 红葱
25g / 2-3tbsp garlic 蒜
80g / 5-6tbsp galangal 南姜

80g / 4-5pcs spur chillies 美人椒(big red chillies / 大辣椒 - less spicy 微辣)

*soak dried chillies for at least 1hr 辣椒干浸泡1小时以上

1/2 bowl tamarind juice 罗望子汁
1-2tbsp salt 盐

It seems like residents in Kovan love minced meat fishball noodles. At Kovan Market and Food Centre, there are three very popular minced meat fishball noodles — Chun Fu Fishball Minced Meat Noodle Laksa (春福鱼圆肉脞面.叻沙, #01-04), Fa Ji Minced Meat Fishball Noodle (发记肉脞鱼圆面, #01-05) and Yam Mee Teochew Fishball Noodle (炎成潮州鱼丸面, #01-35). Every day during lunch and dinner, expect to see queues at not one, but all three stalls.
I have tried all three stalls, and to be really honest (not a PR answer), three of them are really above average. Even though they sell the same dishes, but in terms of seasonings and ingredients, all of them have different recipes and use different suppliers. So it really boils down to personal preference.
For me, I prefer Fa Ji Minced Meat Fishball Noodle because I like stronger flavours, and Fa Ji’s chilli sauce really won me over.
