黃骨魚豆腐湯:
材料:
黃骨魚3條(約12兩)
豆腐1磚
薑6片
處理:
1. 黃骨魚,清除內臟,清水沖洗乾淨,擎乾水。
2. 薑,連皮洗刷乾淨。
3. 豆腐,沖洗乾淨,切細粒。
4. 薑,切片,拍鬆。
烹調:
1. 大火在鑊中燒熱油1湯匙。
2. 放魚落鑊,轉中火。
3. 煎魚途中,如果鑊冒煙,表示油不夠,要加適量的油落鑊。
4. 魚的兩面都煎脆的時候,加入薑片。
5. 當聞到薑味及見到鑊中冒煙,轉大火,加入大滾水落鑊。
6. 加入豆腐,冚蓋,大火滾起後,轉中慢火,繼續煲15分鐘。
7. 過了15分鐘,完成,小心夾起魚,可享用。
Tofu soup with yellow catfish:
Ingredients:
Yellow catfish 3 Nos. (about 12 taels)
Tofu 1 cube
Ginger 6 slices
Preparation:
1. Yellow catfish, remove intestines, rinse with tap water. Hang dry.
2. Ginger, rinse with skin thoroughly.
3. Tofu, rinse and cut into small cubes.
4. Ginger, get it sliced and beat well.
Steps:
1. Heat up oil 1 tbsp at high flame in wok.
2. Put fish in wok. Turn to medium flame.
3. If there is smoke coming up from wok during the process of frying fish, that means oil is to be added into wok.
4. Two sides of fish have been turned to be crispy, put ginger slices.
5. Turn to high flame once you can feel the smell of ginger or you see smoke coming up from wok. Pour boiled~up water into wok.
6. Put tofu cubes, cover up the wok. Turn to medium~low flame after heating up at high flame. Continue to boil for 15 minutes.
7. Fifteen minutes has been over. Complete. Pick up fish on plate carefully. Serve.

一隻白或青苦瓜(400g) 1 white/green bitter melon (400g)
牛肉200g Rump beef 200g
炸菜40g Salted cabbage 40g
4粒蒜頭(切片) 4 garlic cloves (slices)
2-3 粒蒜頭(切碎) 2-3 garlic cloves (diced)
1個紅蔥頭(切片) 1 shallot (slices)
幾片紅蘿蔔花 A few pieces of decorative carrot pieces
牛肉調味料: Beef marinade:
2茶匙生抽 2 tsp soya sauce
2茶匙蠔油 2tsp oyster sauce
2茶匙糖(1茶匙牛肉用,另1茶匙苦瓜用)2 tsp sugar: 1 tsp for beef, 1 tsp for bitter melon
2茶匙生粉+2湯匙水 2 tsp potato starch, 2 TBS water
五香粉1/6茶匙 1/6 tsp Chinese five spice
¼茶匙胡椒粉 1/4 tsp ground black pepper
麻油2茶匙 2 tsp sesame oil
1湯匙紹興酒 1 TBS Shaoxing wine
2茶匙魚露 2 tsp fish sauce
打茨用的:1茶匙生粉+2湯匙水 1 tsp potato starch + 2 TBS water
適量油 Some cooking oil
