水果醃肉助消化
水果含有豐富水份及纖維,適量食用有助消化,尤其木瓜和菠蘿都有明顯的消滯作用,木瓜含有木瓜酵素,而菠蘿含有菠蘿朊酶,均能分解蛋白質,尤其適合幫助消化肉食,除了直接食用這些水果,亦可以用來醃肉,先把菠蘿或木瓜肉攪拌成蓉,醃肉時加少許水果蓉拌勻醃味,可以令肉質更軟腍,亦能增添果香。屬性偏寒涼的奇異果和水梨也常用於醃肉之中,韓國人喜歡用水梨代替糖醃肉,如果體質偏熱的人可以多選用這兩款水果。至於醃肉時間要多久?視乎肉片的厚薄和選擇的水果而定,水果酸度越高,肉類軟化時間越短。
木瓜 — 性平,能健脾胃,幫助消化,消暑解渴。適合脾胃虛弱,容易胃脹不適人士服用,能紓緩食慾下降、消化不良、胃部不適、產婦乳汁不多等症狀。注意孕婦不宜食用。
菠蘿 — 性平,味甘酸澀,具有消暑解渴、消食止瀉的作用,尤其進食太多肉類和肥甘厚味的食物,吃菠蘿可以消滯、助消化及利尿。惟糖尿病患者不宜進食。
奇異果 — 性寒,味甘酸,能清熱生津、健脾、利尿,紓緩無胃口、消化不良、欲吐、痔瘡等症狀。注意女士脾胃虛寒容易腹瀉、有寒性痛經不易多服。
水梨 — 性涼,能生津潤燥、清熱化痰及解酒,尤其適合經常使用喉嚨說話和唱歌的人士,另外身體有偏熱症狀如口乾、喉嚨痛、聲音沙啞等也適合食用。注意脾胃虛寒人士不宜多吃。

It can clear summer heat, relieve thirst, aid digestion and relieve diarrhea, especially good for after consuming too much meat or oily and fatty food. Eating pineapple can relieve indigestion and promote diuresis. It is not suitable for diabetic patients.
Kiwi- cold in nature with a sour and sweet taste, and can clear heat and promote fluid production, strengthen the spleen and promote diuresis. It alleviates lack of appetite, indigestion, nausea, and hemorrhoids. Note that it is not suitable for ladies with asthenic spleen and stomach, prone to diarrhea and has cold type menstrual pain.
Pear- cold in nature, can promote fluid production and relieve dryness, clear heat, reduce phlegm and relieve hangover. Pears are especially suitable for those who speak or sing a lot as well as those with heat-related symptoms such as dry mouth, sore throat, and coarseness in voice. Note that those with asthenic weak stomach and spleen should eat less.

【藥事知多D】一物兩用:Bromelain
〈Bromelain的第二個用途 = ?〉
跟寵物小精靈一樣,一種藥同時往往可以有兩種不同的屬性,從而有兩種不同的用途。這絕不罕見。
當中一些用途乍看好像真的跟這種藥扯不上半點關係,實在又很難讓人猜得出來。
例如Bromelain。
對,上一章藥罐子曾經介紹過Bromelain這種消化酶,而且還是蛋白酶(Protease),顧名思義,主要用來消化食物裡的蛋白質分解成為氨基酸。
所以不用問,第一個用途當然是消化不良,幫助人體消化食物裡面的蛋白質,促進吸收,KO消化不良,例如積滯(俗稱「飽飽滯滯」)、胃氣、腹脹、肚風、噯氣,甚至嘔吐的症狀,對吧?
除此之外,不說不知道,這些消化酶原來還可以「踩過界」踩出消化道,進入體循環[1][2],便有消炎止痛的功效,用來KO一些痛症的炎症症狀,例如紅、腫、熱、痛。
所以第二個用途便是痛症,例如關節炎(Osteoarthritis)。
唔……說真的,這種消化酶真的好像跟消炎、止痛沒有半點關係,不過偏偏就是有人能夠發揮豐富的想像力,嘗試解釋這些消化酶消炎止痛的作用原理。
曾幾何時,藥罐子倒是曾經聽過一個極富創意的答案……
「哦!這些消化酶能夠消化這些發炎的細胞、組織,吃掉這些東西,自然便能夠消炎,對吧?」
你們說,這答案夠創意嗎?
唔……姑且不論這個說法孰真孰假,雖然暫時還是不太清楚具體的作用原理,不過一般相信主要有以下兩個:
第一,能夠降低纖維蛋白原(Fibrinogen)、緩激肽(Bradykinin)的水平,便可能會降低血管的通透性,從而紓緩腫、痛這些炎症反應。[3]
第二,能夠降低前列腺素E2(Prostaglandin E2, PGE2)、血栓素A2(Thromboxane A2, TXA2)的水平,減低因為前列腺素而誘發的炎性反應,從而收縮血管,降低血管的通透性,紓緩炎症,減輕疼痛。[3]
話雖如此,還需要進一步研究證實Bromelain消炎止痛的實際療效。[3]
或許是這個原因,根據經驗,要是消炎止痛,Bromelain絕少落單,一般會配合其他消炎止痛藥一同使用,例如撲熱息痛(Paracetamol / Acetaminophen)、非類固醇消炎止痛藥(Non-steroidal Anti-inflammatory Drugs, NSAIDs),目的在負責助攻,輔助止痛藥發揮理想的藥效,加強療效,在相當程度上,這算是一種「協同效應(Synergic Effect)」。

(這也是有,但放在保養品中意義不大)
這些以生物、植物中萃取出的酵素因子最大的作用,就是加速肌底循環,可以促進角質、皮脂代謝,比起化學美容品來得更低敏令人放心。(這並不是事實)
