1 whole carrots (cut into bite size pieces)

中國人飲食有「以形補形」的觀念,故以為凡筋骨損傷,多喝雞腳湯、豬骨湯或鹿筋湯等會有幫助,但這只對慢性勞損能稍作紓緩,如屬急性創傷,以穴位按摩、推拿、針灸、拔罐配合中藥更為見效。而到了休養期,食療宜補肝腎、強筋骨,因中醫理論認為「肝主筋、脾主肌肉、腎主骨」,適量飲用有補益肝腎作用的湯水有助創傷癒合,桑寄生、黑豆、栗子、核桃、花生等食材都有補肝腎的功效。然而有損傷宜先諮詢註冊中醫師,找出致傷原因,選取最合適的治療方案。
食材小貼士:
杜仲性溫,有補肝腎、強筋骨,並有安胎作用。
蓮藕杜仲黨參湯
功效:補肝腎,紓緩腰膝痠軟、容易疲倦等症狀。
材料:蓮藕1根(約3節)、杜仲15克、黨參15克、黑豆30克、栗子80克、核桃20克、蜜棗2枚
做法:
1. 所有材料洗淨,蓮藕去皮切塊;栗子去皮取肉備用。
2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮1.5小時,最後下鹽調味即可。

Replenish the liver and kidneys when the bones and joints are damaged
The Chinese cuisine philosophy believes that we should consume chicken feet soup, pork bone soup, or deer tendon soup when we sustain injuries on our bones and joints. These soups could in fact help relieve mild injuries.
But to deal with more severe injuries, we should rely on acupuncture, massage of the acupoints, tuina (Chinese therapeutic massage), cupping therapy, and Chinese medicine. During the recovery period, we should consume foods that can replenish the liver and kidney and strengthen the bones and joints. This is because Chinese Medicine believes that ‘the liver governs the joints, the spleen governs the muscles, and the kidney governs the bones’.
Consuming soups that can nourish the liver and kidney can expedite the recovery. Ingredients such as mulberry mistletoe stem, black bean, chestnut, walnut, and peanut can nourish these two internal organs. Do consult registered and licensed Chinese physicians and find out the cause of the damage so that they can customize a suitable treatment for the patients.
Tips on ingredient:
Eucommia bark is warm in nature; can nourish the liver and kidney, strengthen the bones and joints, and stabilize pregnancy.
Lotus root and Eucommia bark soup with Codonopsis root
Effects: Nourishes the liver and kidneys. Relieves weak knees and lower back, and frequent fatigue.
Ingredients: 1 lotus root (about 3 knots), 15g eucommia bark, 15g codonopsis root, 30g black bean, 80g chestnut, 20g walnut, 2 candied dates
Preparation:
1. Rinse all ingredients thoroughly. Cut the peeled lotus root into pieces. Peel the chestnuts.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hours. Add salt to taste.

食材小貼士:
茯苓性平,有健脾滲濕、安神功效,適合各種體質人士食用。
西洋菜冬瓜薏米湯
功效:清熱利濕、消腫減肥,紓緩身體四肢困重、肥胖等症狀。
材料:西洋菜1束(約1斤)、冬瓜連皮600克(約1斤)、乾瑤柱3-4枚、生薏米30克、茯苓15克、蜜棗2枚
做法:
1. 所有材料洗淨,西洋菜常藏有小昆蟲,以鹽水泡二十分鐘,再沖水備用。冬瓜連皮切大塊備用。
2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮1小時,最後下鹽調味即可。

Soup to clear heat after sun exposure
We might not develop a sunburn or heat stroke after playing under the hot summer sun, but there is a high chance for us to feel dizzy, get a headache, have tightness on the chest, experience dryness in the mouth, and feel exhausted after being exposed to the pathogenic factor of the summer-heat, as the body is not able to effectively dissipate heat under such a condition.
It would be great to consume soup that can clear the summer-heat. Melons and gourds such as winter melon, old cucumber, zucchini, and Gassho melon are harvested during summer. They all have heat-clearing properties and are suitable ingredients to make soup with lotus leaf, which can dissipate the summer-heat, clear the mind and brighten vision, and lower the cholesterol levels. This soup is especially suitable for individuals to consume during the hot summer season.
Tips on ingredient:
Poria with Hostwood is mild-natured. Calms the heart and mind, strengthens the spleen. Suitable for all body types.
Astragalus root and blighted wheat soup with millet
Effects: clears heat and dispels dampness. Reduces bloating and aids weight loss. Relieves symptoms such as fatigue, heavy limbs and fat.
Ingredients: 1 bunch of watercress(around 1 catty), 600g winter melon with skin(around 1 catty), 3-4 dried scallop, 30g coix seed, 15g poria with hostwood, 2 candied dates
Preparation:
1. Rinse all ingredients thoroughly. Watercress is prone to small insects so soak in salt water for 20 minutes, then rinse again with regular water. Cut the winter melon into large chunks.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1 hour. Add salt to taste.

蓮藕章魚湯:
材料:
蓮藕12兩
章魚1隻
排骨頭1斤
眉豆1兩
花生1兩
綠豆1兩
蜜棗3粒
果皮1塊
處理:
1. 眉豆、花生、綠豆及果皮用清水浸30分鐘。
2. 蓮藕,輕手用鋼絲刷或百濕布,清水洗刷乾淨。
3. 章魚剪細條,清浸10分鐘。
4. 排骨頭洗乾淨,擎乾水。
5. 蜜棗沖洗一下。
6. 蓮藕切一片片。
7. 果皮刮去囊。
8. 眉豆、花生及綠豆,清水沖洗乾淨。
9. 章魚,沖洗乾淨。
烹調:
1. 所有材料放入煲,加1升半水,用大火煲滾。
2. 湯滾起後,轉中慢火煲1小時,完成。
Lotus soup with octopus:
Ingredients:
Lotus root 12 taels
Octopus 1 No.
Pork ribs 1 catty
Black~eyed pea 1 tael
Peanuts 1 tael
Mung bean 1 tael
Candied dates 3 Nos.
Dried orange peel 1 slice
Preparation:
1. Soak black~eyed peas, peanuts, mung bean and dried orange peel with tap water for 30 minutes.
2. Rinse lotus root with either steel wire brush or scour pad lightly.
3. Cut octopus into small pieces, soak in tap water for 10 minutes.
4. Rinse pork ribs thoroughly and hang dry.
5. Rinse candied dates.
6. Slice lotus root.
7. Remove sac of orange peel.
8. Rinse black~eyed pea and mung bean with tap water thoroughly.
9. Rinse octopus.
Steps:
1. Heat up all the ingredients with 1 1/2 litre water at high flame.
2. Turn to medium~low flame after boils up. Boil for 1 hour. Serve.

『ちらし寿司の素』
●人参:1本
●干し椎茸:5個
●干し椎茸の戻し汁:約300ml
●醤油:大さじ2
●みりん:大さじ2
●めんつゆ(4倍濃縮):大さじ1/2(あごだし、かつおだし系)
●三温糖:大さじ2(普通の砂糖でもOK)
『酢れんこん』
●れんこん
●酢:150ml
●水:100ml
●ほんだし(和風出汁):4g
●鷹の爪(唐辛子)お好み量
●三温糖:大さじ3(普通の砂糖でもOK)
●乾燥昆布
●塩:小さじ1

ひな祭りという事で今回は絶品ちらし寿司を作りました。
今回の味の決め手、干し椎茸の出汁の旨味がとにかく凄いんですが
その出汁で作った酢飯の混ぜご飯は本当に世界一美味しいんです。
いつもの簡単なレシピに比べると、ひとつひとつ少しの手間がかかってますが
その分、色んな食材が合わさった時の相乗効果は半端なく食べた時の感動は超ヤバイです…。
今回はひな祭りという事で作らせて頂きましたが
味はもちろん最高なんですが見た目もとても華やかなので
大切な人の誕生日や、おもてなし、ホームパーティーなんかで出したら
きっと喜んで頂けると思いますよ♪
時間は少しかかりますが作ってみると意外と簡単なので
お寿司屋さんにも負けない本当に美味しいちらし寿司を
是非、ご家庭で作ってみて下さい。
[Ingredients]
● Rice: 3 cups
● Sushi vinegar: about 90ml (add more as you go)
● Snow peas
● 4 eggs
● Sugar: 1 teaspoon
● Salt: 1/2 teaspoon
● Prawns: as much as you like
● Kamaboko (Fish cake): as much as you like
● Salmon roe: As much as you like
● Sakura-denbu: As much as you like
[Chirashi Sushi Ingredients]
● Carrot: 1
● Dried shiitake mushrooms: 5
● Dried shiitake mushroom broth: 300ml
● Soy sauce: 2 tablespoons
● Mirin: 2 tablespoons
● Noodle soup (4 times concentrated) (agou-dashi, katsuo-dashi): 1/2 tablespoons
● Brown sugar (regular sugar is also fine): 2 tablespoons
[Vinegared lotus root]
● Lotus root
● Vinegar: 150ml
● Water: 100ml
● Japanese soup stock: 4g
● Takanotsume (red pepper) to taste

● Dried kelp
● Salt: 1 teaspoon

As it was the Girls' Festival, I made an excellent Chirashi-sushi this time.
The key to the flavor of this dish, the dried shiitake mushroom broth,
is simply amazing, and the rice mixture made with the broth is truly
the best in the world.
Compared to the usual simple recipes, each one requires a little more
time and effort, but the synergistic effect of combining various
ingredients is unbelievable.
This time, I made it for the Girl's Festival, and of course it tastes
great, but it also looks gorgeous.
I'm sure you'll be very happy if you serve it for your loved one's
birthday, for entertaining, or for a home party ♪
It takes a little time to make, but it is surprisingly easy to make.

まず食べる前から香りだけでもう美味しいです。
一口食べた瞬間、ゆずや茸の上品な風味が口いっぱいに拡がり
お肉が入っていないとは思えない深い旨味と
にんにくと少しピリっとした辛みがまた後引くやみつきな味になってます。
色んな食材の食感、味と香りが複雑に混ざりあったパスタはまさに無限に食べ続けたくなる
最高に美味しいやみつき無限パスタになってます。
お店でも味わえない唯一無二のパスタ料理を
是非ご家庭でも作ってみて下さい。
[Ingredients] (Serves 2 to 3)
● Pasta of your choice: 200g~300g (not too thick is recommended)
● Salt (for boiling pasta)
● Yuzu: 1 piece
● Maitake mushrooms: 1 package (amount to taste)
● Lotus root: about 100g
● Bonito fish soup stock: 8g (you can use your favorite Japanese soup stock)
● Soy sauce: 1~2 tablespoons (taste and adjust the thickness to your liking)
● Salt and pepper
● Mirin: 1 tablespoon
● Sake: 2 tablespoons
● Olive oil
● Red pepper: as desired
● Garlic: 3 cloves
Finally, black pepper and Parmigiano Reggiano (or cheese powder, of
course) to taste.

Chef's whimsical pasta? lol I made the addictive infinite pasta
"Creative Japanese Pasta with Yuzu, Lotus Root and Maitake Mushrooms".
The smell alone is enough to make you want to eat it.
As soon as you take a bite, the elegant flavor of yuzu and mushrooms
fills your mouth, and the deep flavor that you can't believe there is
no meat in it, and the spicy garlic and a little bit of spice make it
an addictive taste that lingers.
The texture, taste, and aroma of the various ingredients are so
intricately mixed together that you will want to keep eating the pasta
endlessly.
This is the most delicious and addictive infinite pasta and a unique
