病人家屬:「屋企人準備做手術,醫生囑咐手術後宜飲食清淡,是否只能吃白粥青菜?」
CheckCheckCin:現代人飲食選擇精彩豐富,當生病時聽到醫生囑咐「飲食清淡」便聞風喪膽,總覺得「無啖好食」甚至以為要食素,其實都是錯誤的觀念,從中醫角度來看,飲食清淡有以下幾項原則: 如不清楚自己體質屬性則多吃屬性平和的食物,以減少食物偏性對臟腑的影響;烹調時保持食材的原汁原味及營養;多採用蒸、煮、灼、燉的烹調方法;減少使用油、鹽、糖等調味料;煮至容易入口及消化的質感;避免肥甘厚味,即油膩、甜膩及味道濃郁的食物;避免發物,即會令舊疾復發、新病加重的食物。
手術後如果每餐都吃白粥、青菜,清淡是清淡,但營養並不足夠,因為手術後病人需要吸收不同營養以強健身體,食材選擇需要多元化,最重要還是配合體質,以下給你一些好煮意:
・蕃茄薯仔石崇魚湯
・乾瑤柱番薯粥
・魚湯底米粉/魚片粥/通粉
・燉牛肉/豬肉汁
・蒸肉餅飯
・蒸蛋飯
正餐以外可以準備用紅米、白米及生薏米煮成的米水,有健脾養胃功效,養好脾胃等於養好消化系統,脾胃好就能吸收食物中的營養,身體自然更快康復。
簡易健脾胃米水
材料:紅米2湯匙、白米半湯匙、生薏米半湯匙
做法:將材料洗淨,鍋內加入約800-1000毫升水,加入材料,以武火煮滾後調文火煮20-30分鐘。
*米水容易變壞,建議每天煲好,一天飲完,不要過夜。
*孕婦可不落薏米。
*糖尿病患者宜先諮詢營養師意見。

CheckCheckCin: Modern people have a rich and varied diet. When they are sick, they tend to over react about the light diet suggested by doctors. They always think that they can no longer eat any tasty food or even think that vegetables are the only option left. In fact, they are wrong. From Chinese medicine perspective, light diet has the following principles: use mild natured ingredients if you do not know your body type to reduce the effect of food natures on the organs; keep the original taste and nutrition of the ingredients during cooking; use cooking methods such as steaming, boiling and stewing; reduce seasonings such as oil, salt, sugar; boil food down to a texture that is easy to eat and digest; avoid oily and fatty food, which is greasy, sweet and heavy-flavoured food; avoid stimulating foods, it will lead to relapse of old issues and worsen new symptoms.
After the surgery, if you eat plain congee and vegetables for every meal, it is quite light but there is not enough nutrition. As the patient need to absorb different nutrients to strengthen the body after surgery, the choice of ingredients should be diversified, the most important thing is to match the body condition. Here are some good suggestions.
・Tomato soup with potatoes and scorpionfish
・Sweet potato congee with dried scallops
・Rice noodles with fish soup/ fish fillet congee / macaroni
・Sauce from stewed beef or pork
・Steamed pork cake rice
・Steamed egg rice
Besides having regular diet, you can also drink rice water made with red rice, white rice and coix seed to strengthen spleen and stomach. Keeping the spleen and stomach healthy means to keep the digestive system healthy which is a basis of health.

為甚麼喝米水?
一聽到「米水」二字,有人會聯想到洗米水、炒米水、薏米水甚至粥水,其實米水是中醫傳統養生智慧,食療養生著作《隨息居飲食譜》有提到:「粥飯為世間第一補人之物」,大米性平,補中益氣、健脾養胃。
我們鼓勵大家飲用的「米水」,用紅米、白米及生薏米煮成,紅米及白米屬性平和,加入少量生薏米取其健脾滲濕功效,此配方屬性平和,適合男女老幼飲用,每日一杯米水就能減低脾胃負擔。
中醫理論認為「脾胃為後天之本」、「脾為氣血生化之源」,說明我們自出娘胎,都是依賴脾胃的消化吸收、轉化功能,身體才能攝取飲食中的營養,各部分才能暢順的運作,所以養好脾胃,等於養好消化系統,擁有健康基礎。

The rice water that we recommend is made with red rice, white rice and coix seeds. Red rice and white rice are mild in nature, coupled with small amounts of coix seeds to achieve it's healing effects to dispel dampness and strengthen the spleen. This recipe is mild in nature, and suitable for the entire family. Having it daily can reduce the load on the spleen and stomach.
Chinese medicine believes since we are born, our bodies rely on the spleen and stomach to digest and absorb, convert and transport to allow the body to absorb necessary nutrients from our intake. Keeping the spleen and stomach healthy means to keep the digestive system healthy which is a basis of health.

• Wash 1/2 cup raw rice with water (or 1 bowl cooked rice, don't wash)
• Place rice into a very deep pot
• Add one pot of hot water (for cooked rice use less), cover with lid overnight (or cook rice- an hour)
• add a punch of salt, few drop of cooking oil
• add a little bit bead curd sheet (soak before use)
• heat until boil without lid, reduce fire to small and cook without lid for an hour (for cooked rice - about 30 mins)
• add gingko into the mixture (remove the core before use)
• cook until boil*
• add white pepper, few drop of seasame oil & Shaoxing Wine
• serve hot
Remarks:
*add water before the mixture is too sticky,
** Stir during cooking to avoid ppt stick onto the pot

In a large pot, add water and the washed rice. Cover the pot with a lid and bring it to a boil. When the water starts boiling, turn down the flame to a simmer and cover the pot. 15 minutes later, stir the rice making sure it’s not sticking to the bottom. Cover the pot again and stir the rice one more time 15 minutes after the first stir. Cover the pot one last time and simmer for 30 minutes. When the congee is done, it should look creamy and silky.

做法:1、大米淘洗净,加盐码好。2、白果去壳去核。3、腐竹用水发软后切碎。4、锅中水沸后放入大米、白果和腐竹同煮约30分钟后,将麦片用纱布包好放入在煮30分钟。5、粥好后,取出麦片纱布包,用盐调味即成。
特点:粥白如奶,腐竹、白果香味淡雅,是滋养身体的佳食。

1.海鮮泡飯

2.海鮮稀飯
料理秘訣:中火煮悶15分鐘軟而不爛。

材料:
1杯米 rice 1 cup
水1200ml water
海鮮包1包 seafood mix 1
調味料:
鹽1/2茶匙 salt 1/2 tsp.
胡椒粉 1/4茶匙 pepper powder 1/4 tsp.
蔥花15公克 scallion 15g
薑5公克/ginger 5G
作法:
1.水滾後放入洗乾淨的米,大火再滾
2.不加蓋中火煮20分鐘、關火悶15分鐘
3.開火將已退冰海鮮包放入,水滾後加
鹽、胡椒粉均勻攪拌,撒蔥花、薑絲即可。
3.海鮮廣東粥
材料:
油1茶匙 salad oil 1 tsp.
海鮮包1包 seafood mix 1
1200mlwater
1杯米 rice 1 cup
調味料:
鹽1/2茶匙 salt 1/2 tsp.
胡椒粉 1/4茶匙 pepper powder 1/4 tsp.
蔥花15公克 scallion 15g
作法:
1.洗淨的米先伴油,靜置30分鐘。
2.加水,不加蓋大火滾40分鐘。
3.海鮮包放入海鮮,水滾後加鹽1/2、胡椒粉、均勻攪拌撒蔥花即可。
4.海鮮豆漿粥
材料:
粥1000ml congee
無糖豆漿500ml Sugar-free soy milk 500ml
海鮮包1包 seafood mix 1
調味料:
鹽1/2茶匙 salt 1/2 tsp.
胡椒粉 1/4茶匙 pepper powder 1/4 tsp.
蔥花15公克 scallion 15g
薑5公克/ginger 5G
作法:
1.先煮成粥,在倒入豆漿至滾。

第四十集 鹹排骨涼瓜粥
烹調時間 : 95分鐘(醃製時間除外) 食材費用 : $40
我媽媽時常在家醃製整條豬肉作鹹肉保存,用來煲湯、煮粥或炒菜。不過鹹肉煲粥後,會變得有點乾,所以我用了排骨和涼瓜,煲過粥後,依然好吃。
材料
排骨 100克
粗鹽 30克
涼瓜片 100克
水 1,250毫升
米 50 克
浸米用
水 250毫升
幼鹽 1/4 茶匙
油 1茶匙
做法
用粗鹽醃排骨過夜,煲粥前,要徹底將排骨上的粗鹽洗淨。
將米浸在加了油和鹽的水中。煲滾水後,放排骨和米以猛火煮20分鐘,上蓋慢火煮1小時。
加入涼瓜煮10分鐘。

可以鹹蛋代替涼瓜
SALTED SPARE RIBS WITH BITTER GOURD CONGEE
My mother used to marinate a whole piece of pork to make homemade鹹肉 and she would use it for soup, congee or frying with vegetables. The salted pork cooked in congee is a little tough to eat. Here I use spare ribs with bitter gourd which are still very tasty after boiling.
INGREDIENTS
100 g spare ribs
30 g coarse salt
100 g sliced bitter gourd
1,250 ml water
50 g uncooked rice
For rice soaking
250 ml water
1/4 tsp fine salt
1 tsp oil
STEPS
Marinate spare ribs with coarse salt overnight. Before cooking, wash spare ribs till all saltiness is gone.
Soak rice in water with salt and oil. Add to boiling water together with spare ribs and boil over high fire for 20 min. Simmer for 1 hour, covered.
Add bitter gourd and cook for another 10 min.
TIPS
We can substitute bitter gourd with century eggs.
